Ingredients

  • chickpea flour - 200 gr
  • vegetable oil- olive - 1 tbsp
  • purified water - or plant milk - 200 ml (or more)
  • soda- 0.5 tsp
  • lemon - juice or vinegar - 0.5 tsp
  • onion- green - 2-3 pcs
  • greens - favorite - 1 small bunch
  • spices- turmeric, coriander, cumin, nutmeg and other favorites

Cooking method

Let's start preparing vegetarian chickpea cutlets. To do this, mix all the dry ingredients, stir, add olive oil and water. Quench the baking soda with lemon juice or vinegar, add to the bowl and mix again.

Thoroughly knead the dough for vegan cutlets made from chickpea flour. Add, if necessary, more water or milk until the consistency of thick sour cream. Mix thoroughly, rubbing out any lumps. Finely chop the greens and onions and mix again.

We begin to fry lean chickpea cutlets, the recipe for which, to be honest, is almost finished. Place the frying pan over medium-high heat. You don’t have to add oil anymore - it’s included in the pancakes. And in general, you don’t need to pour it 😉 Take a tablespoon and spread the pancakes in the pan with it, smoothing it over the surface with the spoon. Fry chickpea flour pancakes for about a minute or two or three on one side until golden brown under the lid, then turn over and fry without a lid for another couple of minutes.

Remove the pea cutlets (vegetarian dishes are often prepared quickly) from the pan and place on a plate.

We repeat the roasting process. Fry the vegan chickpea flour pancakes until the batter is gone.

  6. Spread the puree evenly over a baking sheet and place it in the oven preheated to 80 degrees. Stir the chickpeas occasionally. The drying process takes approximately 5-6 hours.
  7. After the puree has completely dried, grind it into flour in a coffee grinder.
