How to bake orange pie?

Orange pie can be prepared in a variety of ways. Considering that it is equally tasty on both puff pastry and shortcrust pastry, biscuits are often made with citrus fruits. To prepare the latter, beat eggs with sugar until fluffy, add flour, mix gently, add zest and pieces of fruit, and bake in the oven for 40 minutes at 190 degrees. A few rules will help turn orange pie in the oven into a delicious, aromatic and refreshing dessert:

Orange pie in a slow cooker

Pie with oranges in a slow cooker is a sea of taste with a minimum of effort. True, you will have to beat the dough by hand, but a modern unit will take care of everything else. Thanks to slow and even heating in the “Baking” mode, the dough will become fluffy and airy, and the citrus pieces will retain their juiciness and will not disintegrate.

Finely grate the zest of one orange and set aside to use in making the dough. Cut this orange in half and squeeze out the juice - you should have 1/3 cup. If there is not enough juice, squeeze the juice from another half of the orange.

Cut the remaining oranges into 5mm thick slices. Remove all seeds from the slices.

Combine orange and lemon juice, sugar and salt in a saucepan, add oranges and bring to a boil. Cook for 5-7 minutes until the orange skins soften and the orange slices begin to become translucent. Remove the oranges from the pan using a slotted spoon. Continue to simmer the syrup until it is reduced to half a cup, 10 to 15 minutes.

Preheat the oven to 190°C. Grease a 24cm springform cake tin. Beat room temperature butter and sugar with a mixer until they become fluffy. Add the eggs one at a time, beating the mixture well each time. Add grated orange zest and stir.

Sift together flour, semolina, baking powder and salt into a bowl. Mix the flour mixture into the butter-egg mixture in several additions. Pour the dough into the mold. Place orange slices in a single layer.

Place the pie in the oven and bake for 15 minutes. Reduce oven temperature to 175°C and bake for another 35–40 minutes, check doneness with a wooden toothpick. Leave the cake in the pan on a wire rack and cool slightly.

Poke the cake through the oranges with a toothpick evenly over the entire surface. Using a brush, brush the orange syrup onto the cake. Then cool to room temperature. Remove the cake from the pan and place it on a plate.

You can often hear from friends that someone cooked something, and the dish turned out very tasty and everyone liked it. And you don’t always have the courage to admit that you don’t have such a signature dish; everything you cook, of course, is delicious, but sometimes you want to make something special.

How to choose the right ingredients

  • Choosing tasty and juicy oranges is not at all difficult. From experience I can say that fruits taste best in winter, when it is harvest season in their homeland. Oranges from Spain and the USA are sweeter, but this is a subjective opinion.
  • Weigh the fruit in your hand; it should be quite weighty, which means it contains a lot of juice. If the citrus looks large but is actually light, then perhaps it has begun to dry out from the inside.
  • And, of course, color. Delicious oranges come in all shades of orange, as long as the color is uniform. In the cold you won’t be able to fully appreciate the smell, but at home the aroma will be fully revealed, and this is another sign of ripe oranges; green ones don’t smell so strong.

Step-by-step preparation

  1. Beat 150 g of soft butter and the same amount of sugar with a mixer.
  2. Beat in 4 eggs one at a time and continue beating.

  3. Grate the zest of one orange on a fine grater. Add it to the oil.

  4. Cut the orange in half and squeeze the juice out of it. One fruit yields 70-80 ml.

When buying citrus fruits, do not go for too large fruits; give preference to medium-sized fruits. Make sure that the skin is not too lumpy or too thick; this may indicate that the orange was picked before it was ripe. Pour the juice into the dough and mix well with a mixer.

  5. Quench a teaspoon of soda with vinegar and add to the rest of the ingredients.

  6. Add 250 g of sifted flour to the dough. But not all at once, but a couple of spoons at a time, mixing each time.

  7. The dough is ready. It is not very liquid, its consistency resembles thick sour cream. Grease a springform baking pan with butter and fill it with dough.

  8. Place the pie in an oven preheated to 180°C for 30-40 minutes. After a while, check the readiness of the pie with a toothpick or wooden skewer.
  9. Sprinkle the slightly cooled pie with powdered sugar.

How to decorate a dish

The finished cake turns out to be a very bright color; just sprinkle it with powder and the dessert is ready. But if you want to make it sweeter and more festive, you can pour chocolate glaze over the top. Just melt a bar of your favorite chocolate and add a little butter, then the chocolate will not crack when cutting.

Or make icing from cocoa, sugar, milk and butter and pour it while still warm over the center of the cake. Chocolate drops sliding down the sides of the cake look very beautiful. You can also decorate the dessert with protein glaze. It's not difficult to make and is a great idea if you're out of cocoa at home.

  • If you think the cake is too dry, you can soak it in the pan with a few tablespoons of orange juice.
  • If you are afraid that the soda will leave a not entirely pleasant taste, use baking powder for the dough.
  • Use premium flour and be sure to sift it.

How to serve a pie

Orange pie can be served for dessert with a cup of your favorite coffee and as an afternoon snack. I advise you not to wait until the cake has cooled completely, but to eat it slightly warm.
