  1. To prepare the dish you will need coho salmon fish, namely 4 steaks. If we were unable to purchase a steak, then we buy a whole fish, which we prepare at home ourselves. We clean the fish from scales and cut off the head and tail. We take out the entrails through a large incision on the belly, after which we rinse the coho salmon again. Cut the fish into several steaks 2-2.5 cm thick.

  2. Place 4 coho salmon steaks on a flat plate. On one side, sprinkle the fish with salt to taste, a pinch of ground black pepper and paprika. Rub the salt and spices with your hands so that they are evenly distributed throughout the fish and better absorbed.

  3. Turn the coho salmon steaks over and sprinkle them with salt and spices in the same way, rubbing them with your hands. Let the fish stand for a few minutes and soak in the salt and seasonings.

  4. Grate 2 large carrots on a coarse grater. Transfer it to a separate plate.

  5. Grate 180-200 g of hard cheese on a coarse grater. You can use any cheese that you like best, but it must melt well.

  6. Place a sheet of parchment paper on the table and grease it with vegetable oil using a silicone brush. In total you will need approximately 2-3 tbsp. l. vegetable oil.

  7. Place some grated carrots on greased parchment paper, leaving a hole in the middle into which we place 1 fish steak. Cover the sides of the coho salmon steak with grated carrots.

  8. We wrap the edges of the parchment paper and twist or tie with thread on the sides. You should get a boat with carrots and fish inside. Sprinkle the coho salmon on top with a small amount of grated cheese.

  9. Wrap the remaining 3 fish steaks in the same way.

  10. Grind 1 bunch of fresh dill and add to 1 glass of sour cream. Mix the ingredients thoroughly in a deep bowl.

  11. Pour the resulting sour cream and dill sauce over each boat with fish. Spread the sauce evenly over the entire surface using a tablespoon.

  12. We transfer the boats with fish to a baking sheet and place them in an oven preheated to 180 degrees.

Preparation:

  1. We start with cutting the fish. We cut off the tail from the chilled coho salmon carcass, remove the fins, and clean the gills.

  11. Lubricate the top of the fish with lightly refined sunflower seed oil.

  12. Add ginger root and one rosemary sprig inside the coho salmon.
  13. Place the remaining lemon slices, ginger and rosemary on top.
  14. Season the coho salmon on top with a mixture of ground peppers or Provençal dried herbs.
  15. The final touch is to sprinkle the fish with soy sauce.
  16. We tightly pack the coho salmon carcass in foil.
  17. Place the fish in the oven, preheated to a temperature threshold of 180-200°.
  18. We will bake for 20-25 minutes.

Ingredients:

  • Coho salmon fish (or any red fish of your choice) - I had a 1 kg carcass with head,
  • Potatoes – 1 kg (8-10 pcs.),
  • Mayonnaise (or sour cream 30% fat) - to taste,
  • Salt - to taste.
  • Black pepper - to taste.

Foil for baking.

Cooking process:

We clean the fish, rinse with water and divide into portioned pieces - steaks approximately 2.5-3 cm thick, cut off the head and tail, we can use them to prepare a delicious rich fish soup or coho salmon fish soup.

Dry each piece with a kitchen paper towel.

Place the coho salmon on a prepared baking sheet lined with foil (the edges of the foil need to be raised, giving the shape of a tray so that the juice does not spill out during cooking), it is advisable to place the pieces of fish tightly to each other. Salt and pepper to taste. You can also add universal fish seasoning if you wish. If you are preparing a dish for children, then just add salt to the coho salmon and potatoes.

Place potato slices on top of the fish steaks (the thickness of the sliced ​​potatoes is no more than 5 mm so that they cook quickly).

Season with sour cream or mayonnaise, then add a second layer of remaining potatoes and coat again with sauce or sour cream.

With mayonnaise it will be quite high in calories, but delicious!

Cover the foil with fish and potatoes on top with an additional sheet of foil and seal the edges.

Place the coho salmon with potatoes in a foil bag into a well-heated oven at 180 degrees; the baked dish will first cook for 20-30 minutes (this depends on the volume and thickness of the fish placed inside).

When the specified time is up, open the oven, carefully take out the hot baking sheet, open the top of the foil so that during further cooking a golden brown crust will form on the coho salmon’s coat.

Place the pan in the oven again for 20 minutes and bake at 180-200 degrees.

The fish will definitely be ready. But you can check the readiness of the potatoes (if you cut them thickly) using a wooden stick or a match.

The only problem is that it is found in stores less often than pink salmon or chum salmon. But if you have found it, it’s time to figure out how best to present it.

The classic way of baking absolutely any fish, which does not change its taste in any way, but at the same time preserves the juiciness of the meat, is with a sauce of lemon juice and olive oil. This idea is also great for coho salmon, the main thing is not to overdo it with spices, if you select it to your taste, and carefully monitor the baking process.

Ingredients:

  • coho salmon – 1 piece;
  • small lemon;
  • olive oil – 1 table. spoon;
  • coarse salt;
  • ground rosemary – 1/2 tsp. spoons;
  • ground oregano – 1/2 tsp. spoons.

The dish prepared according to this recipe is perfect for dietary nutrition, since the fish is low-fat, and among the heavy-calorie ingredients there are only olive oil and honey in minimal quantities. The only difficulty is that the sauce will have to be made separately on the stove. Calculate the amount of potatoes so that for each steak you get approximately the same amount and equal amount for saturation.

Ingredients:

  • coho salmon (steaks) – 3 pcs.;
  • potatoes – 600 g;
  • cream 10% – 200 ml;
  • cream cheese – 200 g;
  • bunches of dill - 2 pcs.;
  • flour - 1 table. spoon;
  • butter – 50 g;
  • garlic cloves – 3 pcs.;
  • salt.

Cooking method:

  1. Melt the butter in a frying pan and brown the flour in it.
  2. Grate the garlic, throw it in there, and let it fry for half a minute over high heat.
  3. Pour in the cream and reduce the burner power to medium. Cook the sauce for a couple of minutes, stirring.
  4. Rinse the coho salmon steaks (they should already be defrosted by the time you start working) and pat dry with napkins.
  5. Peel the potatoes, cut into thin slices, place in a mold with deep sides.
  6. Place coho salmon steaks on top, sprinkle with salt and chopped dill.
  7. Add the cheese to the pan with the cream, mix well and, while the mixture is liquid (and hot), pour it over the fish and potatoes.
  8. Send the dish to bake for half an hour, covering the pan with foil or parchment for the first 15 minutes. The recommended oven temperature for coho salmon with potatoes is 190 degrees.
