Salad "Mushroom stump" No. 1

Ingredients
-4 carrots (boil)
-3 potatoes (boil)
-3 green apples (sour)
-4 hard-boiled eggs
-150g boiled mushrooms (I used champignons in their own juice)
-300g boiled chicken fillet
-10 walnuts
- mayonnaise to taste

Preparation:
Peel the carrots, eggs and potatoes and grate them on a coarse grater. Salt the vegetables and eggs to taste.
Cut the chicken fillet into cubes and add salt.
Cut the apple into slices and place in salted water (this will prevent them from darkening).
Chop the nut kernels with a knife.
Place lettuce leaves on a serving plate, install a cooking ring (if you don’t have one, you can use a cut-off tin can or a cut-off liter plastic bottle).
Lay out the salad in layers (their order can be disturbed):

Preparation:

First, let's bake the pancakes:
Mix pancake dough from eggs, milk and flour. Add paprika, finely chopped herbs (to taste, they were not added here) and onions. Let's bake. Oil each pancake. The resulting dough makes about 6 pancakes.
Preparing the filling:
- Grate the boiled potatoes on a coarse grater, add chopped dill and mayonnaise;
- Grate the boiled carrots and mix with mayonnaise;
- Finely chop the eggs (or grate them) and also mix with mayonnaise;
- Finely chop the mushrooms and mix with herbs. You can add a little mayonnaise;
- Cut the ham into cubes or strips. Add mayonnaise.
Let's start forming the "stump":
- We spread cling film or bags along the table. We cut the pancakes in half and place them on the film overlapping (we arrange the pancakes face down and overlap so that the larger ones end up at the end; if you twist the stump from right to left, then the end is to the left)). Coat each pancake with soft cheese;
- Place the filling along the “pancake path” in rows in random order;
- After all the filling has been laid out, we begin to roll everything into a roll (each filling must be pressed more tightly onto the pancake). The easiest way to roll a roll is according to the principle of a sushi mat - carefully pulling and bending the bag;
- Place the resulting “stump” on a plate. We cut off the protruding ends of the pancakes - they will be useful to us for the roots.
Now let's start with the design:
We form “roots” from the remaining filling. We decorate them with leftover pancakes. To prevent joints and “seams” from being visible, coat the surface of the “hemp” with soft cheese. Not much!!! Spread each pancake with soft cheese;

Place the filling in rows, or alternately in random order along the pancakes;

After this, roll everything into a roll (press the filling as tightly as possible to the pancake)

It will be easier to twist the roll if you follow the principle of the sushi mat: pulling up and bending the bag;

Place the finished “stump” on a plate.

Trim the protruding ends of the pancakes. Form them into “hemp roots.”

Unevenness and seams can be hidden using soft cheese. It will also help to hold together the individual parts of the “hemp”.

Gradually add pre-sifted flour and soda dissolved in vinegar and stir everything well. In addition to soda and vinegar, you can use the usual baking powder for dough.

Add some spices to the dough to taste. For example, curry, saffron or turmeric are good seasonings that will give the pancakes a brighter color. The consistency of the dough should be like that of liquid sour cream or kefir.

Pour a little oil into a large-diameter frying pan (this should be done only before frying the first pancake). When the oil is hot, pour in a portion of the batter and fry the pancake on both sides.

You need to keep in mind that the larger the diameter of the pan, the higher the stump will be.

Mushrooms must be peeled, washed and finely chopped.

Fresh champignons are great for hemp, but if you don’t have them on hand, feel free to use pickled mushrooms. The best option is to pick them yourself in the forest - these mushrooms are the most fragrant.

Peel the onion and cut into small pieces. We will fry these ingredients for hemp, but you can also use another cooking option - pickled onions, it is very tasty. In this case, it is better to take red salad onions.

Pour some oil into a frying pan and fry the onion. Then add the mushrooms to the onions and fry them until tender. During the cooking process, you need to salt the mushrooms a little, you can add spices.

Instead of fried champignons, you can use, for example, or, which also need to be finely chopped.

Peel the carrots and grate them. Add a little mayonnaise and mix. You can add chopped garlic to taste.

Finely chop the chicken fillet and also mix with mayonnaise.

Grate the hard cheese onto a fine grater, add mayonnaise and mix. You can also add garlic to the cheese to taste.

Forming the Stump Salad

When the pancakes and filling are ready, you can start assembling the stump. To do this, cut the first pancake in half. Cut the second one, shifting the cutting line 1 cm from the middle. Cut the third and fourth pancakes, 2 cm from the middle.

Leave one pancake for making “roots”.

Cover a table or other suitable surface with cling film. On it you need to lay out a strip of pancakes, starting with smaller ones and ending with larger ones. The pancakes need to be overlapped. Grease the edge of the bottom pancake with melted cheese and glue the next pancake to it.

Apply the filling in stripes: on top (at the cut - this is the top of the hemp) - carrots, then mushrooms, chicken, cheese. Leave a little filling for the “roots” (3-5 tablespoons - depending on the situation).

The filling in “Penek” can be placed not only in layers, as in the photo, but also mixed. In this case, first we lay out the carrots, which here mainly play the role of decorating the stump, making it brighter, then - the mixed filling.

If your filling is sweet, then grease the pancakes with the cream recommended in the introduction, place fruit cut into thin slices on top and roll into a roll. You can decorate this version of hemp with mint and tarragon.

Roll the pancakes into a roll. Hold the filling so that the stump comes out neat. If the carrots stick out slightly at the top, trim them with a spatula. When rolling the roll, do not squeeze it too hard with your hands.

Cut the fifth pancake in half. After mixing the remaining filling, fill these halves with it and roll the “roots” of the hemp out of them.

Place the “stump” on a flat dish and place the “roots” next to it. It is better to use a large serving dish, then you can richly decorate the stump.

Decorate the “Stump” salad with herbs and pickled honey mushrooms. If you wish, you can boil a few quail eggs and make “fly agarics” out of them. It is advisable to decorate just before serving, so that the greens do not wilt and the pancakes do not become weathered. However, to cook Penek, you need to have great culinary skill. Of course, you don't have to be a chef. But, your hand should already be full of cooking various dishes, including those that require very careful elaboration of details and decorations.

So Penek salad is not suitable for beginners. There is a high probability that your stump will be rotten and fall apart without standing for even an hour. Therefore, first try to start with simple and light salads, and then move on to Hemp.

By the way, oddly enough, there are no mushrooms in this salad at all. They are imitated by other ingredients: eggs, carrots, potatoes. True, sometimes honey mushrooms or porcini mushrooms are added, but only for decoration.

  • milk – 250 g
  • flour – 130 g
  • turmeric (ground) – 1 tsp.

  • mayonnaise – 200 g
  • fresh herbs

3 eggs need to be boiled until thick, peeled and grated, and then mixed with mayonnaise. Boil potatoes and carrots in their skins, peel and grate separately and also mix with mayonnaise.

For this salad you need to prepare pancakes. First, mix milk, 2 eggs, turmeric, flour, salt and mix thoroughly so that there are no lumps. It is best to use a non-stick frying pan to avoid using oil. The pancakes should be fried thin so that you get 4-5 pieces. Grease each pancake with butter after frying. Cut the pancakes according to this pattern: 5 cm for the first pancake, 7 cm for the second, 9 cm for the third and halved for the fourth.

Arrange the pieces lengthwise so that the width constantly increases. You need to fasten them together with processed cheese. For such a long path, you need to start spreading the filling in any order: potatoes, smeared with mayonnaise. Then grate Estonian cheese on a medium grater, also greased with mayonnaise.

  • ham – 300 g
  • mayonnaise – 250 g
  • canned honey mushrooms – 250 g
  • processed cheese – 2 pcs.

First you need to bake pancakes. Beat flour, milk, 2 eggs, paprika, salt, finely chopped herbs and green onions. Fry pancakes until brown. Grease each pancake with butter.

Boil the potatoes in their skins, peel and grate. After this, mix the potatoes with mayonnaise. You can add sour cream to mayonnaise so that the sauce is not so high in calories.
