To prepare rolls, restaurants use:

  • special equipment or makisu - a bamboo mat. With its help, the formation of rolls will take place;

  • a very sharp knife that can cut thin layers of fish without much effort. It is better to choose one with a thin blade;

Basic products for rolls

The ingredients for making rolls can be very different. It is only important that the products are combined with each other. There are a huge number of variations of rolls; you can come up with your own, during the preparation of which you can use those ingredients that will seem tasty and appropriate. But there are some products that are used in the preparation of almost any variation.

  1. Rice– an important component of almost any roll. To create a culinary masterpiece, you need to use special rice; it is usually sold labeled “for rolls.” Rice must have certain qualities in order to be used in this dish. It should be quite sticky and tenacious. Sometimes special rice at home can be replaced with regular round grain rice.

  2. Nori– thin layers of compressed and dried algae. Preparing rolls is not complete without this ingredient. Usually all ingredients are wrapped in seaweed, but in some cases nori may end up inside the roll. It is better to choose dark nori, it is considered to have the best taste.

  3. Vinegar(su) for preparing this dish is called mitsukan, and this is not ordinary vinegar. It is due to this that it is possible to make rice so that it can be used for making rolls. This product makes the rice feel chewy and sticky at the same time, but also fluffy and delicious. If vinegar is not used, the rolls will crumble during eating. By the way, mitsukan is not at all as nasty as the vinegar that people in the European part of the world are used to.

  4. Fish- one of the main ingredients. Red varieties are usually used, but white fillets can also be used.
  5. Wasabi and ginger– these two products are always served with rolls, along with soy sauce. Wasabi is a kind of mustard, if this version of the seasoning can be called such. It is very sharp and burning. You can prepare wasabi yourself by purchasing special powder.

  6. Ginger otherwise called “gari”, it has a very interesting and specific taste. It is used before eating another piece, as it helps clear the mouth of the taste of previous rolls and makes it possible to taste the new ones in all their glory.

  7. Soy sauce used for dipping rolls into it. It is better to buy one that is sold in glass containers. It has better taste characteristics than what comes in plastic bottles.

Other products include cheese, shrimp, mussels and other seafood, vegetables, imitation crab meat, small tobiko caviar, greens and many others. But if you don’t have much experience in making rolls, or even in eating them, then it’s better to take a recipe as a basis and cook according to it. Otherwise, the rolls may turn out tasteless due to the fact that the products simply will not combine with each other.


Simple recipes

Let's look at the technique of preparing several simple types of rolls that have excellent taste. But first, let’s see how to cook rice correctly, because this is one of the main components of any roll.

Step 1. You need to pour some rice into the pan. It is best to navigate according to the selected recipe.



Step 3. The rice needs to be filled with water again so that it completely covers it to about the height of two fingers. After this, you need to run your hand over the surface of the rice so that it becomes even.


Step 4. Place the pan with rice on the stove and turn it on to maximum heat. The pan is closed with a lid.


Step 5. When the water boils, reduce the heat to low. While the rice is cooking, you can start preparing the dressing for the rice.


Step 6. You need to pour a little mitsukan and water into a small container in a 1:1 ratio.


Step 7 You should also add sugar. If you used 50 g of vinegar and 50 g of water, then about 90 g of sugar should be added. Salt is also added to taste.



Step 9 Then cover the pan with rice with clean gauze so that it is under the lid. This way the rice will reach the desired condition. The stove turns off and you need to wait 15 minutes.


Step 10 Pour the dressing into the rice and stir it.


After the rice has been cooked, you can start preparing the rolls. First of all, they need to prepare the filling depending on what kind of rolls are being prepared.

Cooking Philadelphia - open roll

To prepare these beloved rolls, you will need about 120 g of cooked rice, 15 g of cucumber, a little (about 40 g) salmon, 20 g of Philadelphia cheese, and half a sheet of nori.


Step 1. You need to lay a bamboo mat wrapped in cling film on the table.


Step 2. Place a sheet of nori on top, rough surface facing up.


Step 3. A lump of rice needs to be placed on the nori in the very center of the sheet. Next, you need to stretch it across the sheet so that about 1 cm of the sheet remains free in the upper part, and at the bottom the rice protrudes slightly beyond the edge of the nori. The rice should be spread out in an even layer.



Step 4. After this, this recipe requires you to turn over the nori with the rice laid out on it.



Step 6. Then you need to put thinly sliced ​​cucumbers next to it.

    First - rice. I don’t buy special grains for sushi, which in our realities are unreasonably expensive, I make do with the most ordinary round rice, which can be found in any store. Moreover, I am sure that even specialized restaurants in my city prepare sushi from the same rice that I buy. The secret of stickiness is not at all in the variety, although, probably, in it too. The secret is in the correct cooking technology: a little experience, and you will do it no worse than a professional sushi chef.

    So, we take three cups of round rice (I specially stood up and checked the volume of the cup that I use - 160 ml, it is convenient for me, so I give the amount of ingredients for it; if you have other volumes, just change the other components proportionally) and rinse well with running water. Fill with four cups of water and put on fire. Bring to a boil, cover with a lid and reduce the gas to a minimum. Without lifting the lid, cook for 15 minutes. It may take a little less or a little more time - listen to the rice: as soon as the nature of the sound of boiling water changes and you realize that all the liquid has “gone”, turn it off immediately, and do not hold it for more than the specified time. Note the time - do not touch the rice for the next 10 minutes.

    While the grain is resting, prepare the sushi vinegar. Again, you can buy it in specialized stores, or you can prepare it yourself. Of course, in the original it should be a special rice vinegar, however, we are talking about an adapted version of the rolls, so I still recommend not to lose your head, not waste your money and make do with what you have on hand.

    Mix sugar and salt and pour half a cup of boiling water over them. Stir until smooth and leave to cool. After 10 minutes, add vinegar.

    Let's move on to rice again. Open the lid, pour the vinegar evenly over the entire surface of the rice and mix with sharp cutting movements. Close again and leave until completely cool.

    The next stage is the actual formation of the rolls themselves, and you cannot do without a special bamboo mat with which you wrap nori into rolls.

    So, spread a sheet of nori on the mat. Cover approximately half of the sheet along the long side of the nori with rice - lay out a layer no more than 5 mm thick. It is convenient to place a bowl of water next to you and periodically wet your hands: rice is very sticky, and it is better to work with wet hands.

    Along the same long side we lay out the filling - cucumber, cut into long strips, fish and a little melted cheese. By the way, a few words about cheese. In this version, it replaces mayonnaise, which I personally don’t like in rolls. If for one reason or another you do not eat processed cheese, replace it with feta or even not very salty cheese. Well, or take mayonnaise, better homemade.

    Using a makisu, a bamboo mat, roll the nori, rice and filling into a tight roll. It's not difficult at all - just try once, you'll definitely succeed!

    The edge of the nori can be lightly moistened with water so that it sticks to the main part of the roll, or you can simply lay the roll cut side down - and everything will stick together on its own, saturated with moisture from the rice.

    Leave the rolls for 15-30 minutes, after which we cut them into portions with a sharp knife.
