Preparation

To prepare, take a 2 or one and a half liter saucepan. Pre-wash vegetables and herbs under running water. Peel and cut the potatoes. Fill it with water and send it to cook.

Cut the onion finely or into half rings, fry it in vegetable oil until transparent. You can take either regular onions or a white or red variety. Red onion gives the dish a special appetizing aroma.

Add carrots, chopped or grated on a coarse grater, to the pan along with the onions. It would not be a mistake to fry onions and carrots at the same time, the main thing is that the vegetables do not burn, but only become golden, aromatic and soft. To do this, 5 or 7 minutes of frying over medium heat is enough.

Add rice to boiled potatoes. If you are using long, parboiled rice, start cooking it along with the potatoes. Before adding to the soup, rinse the rice well under running water and place it in a sieve.

After boiling the potatoes and rice, add the fried carrots and onions to the broth. You can add frying at the end of cooking the soup, when the potatoes and rice are ready.

Mash the canned food with a fork, draining the oil. If the saury is in its own juice, you can add the juice from the can to the soup. Remove the bones from the fish fillet so that they do not crunch on your teeth. It tastes better if you don’t mash the fish too finely.

Put canned saury into the soup. Salt and pepper to taste. Add bay leaf, a couple of black peppercorns and allspice. Cook for another 5 minutes until done. Please note that the broth should not boil too much, otherwise its taste will spoil. Over low heat, the fish soup should simmer, covered, at a minimum boil.

Finely chop the green onions and add to the finished soup. Turn off the gas and let the dish sit for 10 minutes. If you don’t plan to eat everything right away, you can put the onions directly into the plates, because the next day they will darken in the soup.

The aromatic soup can be served with a slice of lemon and sprigs of fresh dill. Lemon reduces the pleasant fishy smell, so for fish lovers, it is not necessary to use it. It’s delicious to add a finely chopped boiled egg and a spoonful of sour cream to the finished saury soup.
