I don’t really like clear and not at all rich soup with meatballs. Therefore, with the help of experiments, I found the perfect recipe for this dish - creamy meatball soup. The soup turns out nourishing, tasty, and thanks to the greens, it’s also aromatic.

Ingredients

To prepare creamy meatball soup we will need:

500 g pork;

40 g butter;
2 potatoes;
1 onion;
1 carrot;

1.5 liters of broth (or water);
granulated garlic;

200 g cream (I used 30% fat cream);
greens, salt, pepper.

Cooking steps

Melt the butter in a saucepan, fry the grated carrots and finely chopped onion until golden brown, stirring occasionally.

Add the chopped potatoes and lightly simmer (for a few minutes) in the oil along with the vegetables, stirring occasionally.

Pour the broth into the pan with the vegetables, add salt and pepper and cook until the potatoes are ready.

Pass the pork through a meat grinder, add salt and granulated garlic. Mix everything and form meat balls from the resulting minced meat - meatballs.

Place the meatballs in the boiling soup with vegetables and cook over low heat for 5-7 minutes.

Then add cream and finely chopped herbs to the soup, cook for 5 minutes and turn off the heat under the saucepan. Creamy soup with meatballs turns out appetizing, satisfying and very tasty.

Ingredients

  • 1 onion, finely chopped
  • 2 prongs garlic, squeeze
  • 30 grams butter
  • 1 carrots, grated on a coarse grater
  • 2 medium potatoes, peeled and cut into cubes
  • 1.2 l
  • 200 ml cream 30% (can be replaced with homemade sour cream)
  • Salt to taste
  • Ground black pepper

For the meatballs:

  • 200 grams minced pork
  • 200 grams ground beef
  • 2 tsp granulated garlic
  • 100 ml water
  • Salt to taste
Cooking time: 40 minutes

1) heat the butter in a 3-liter saucepan, add onion and garlic. Add salt to taste and simmer until the onion is soft.

2) Add carrots and simmer everything together for another 2-3 minutes.

3) Add potatoes and broth and bring everything together to a boil. Cook the soup until the potatoes are soft.

4) Meanwhile, combine all the ingredients for the meatballs and mix well. Stir until the mixture becomes sticky.

For vegetable soup with meatballs you will need:

Chicken breast for minced meat (250-300 g)
- 1 large onion
- 1 egg
- 1 small broccoli (can be replaced with cauliflower)
- dill greens
- 2-3 potatoes
- 1 carrot
- 200 ml cream
- salt, spices to taste
- butter for sautéing

Grate the carrots into strips. Finely chop half the onion. Melt some butter in a soup pot. First, fry the onion for a couple of minutes, then add the carrots. Sauté over low heat for 5-7 minutes.

Cut the potatoes into small cubes. Separate broccoli into florets.

For the meatballs:
- mince chicken breast and remaining onion
- add an egg
- salt and season with spices
- add finely chopped dill
- Stir the minced meat thoroughly until smooth.

Form the minced meat into small balls (the size of a walnut).

Pour water into the saucepan and bring to a boil. Add salt, bay leaf, peppercorns and add chopped potatoes. Boil until half cooked (about 10 minutes)

Add broccoli to the soup last, along with the meatballs.

Since minced chicken has a very soft texture, it is more convenient to scoop it up with a wet spoon, giving it the shape of a ball, and immediately lower it into the soup - the balls will immediately set in boiling water.

To prevent chicken meatballs from being tough, it is important not to overcook them. After they float, it is enough to boil for 5-6 minutes at a gentle boil.

When the soup is almost ready, pour in the cream in a thin stream. Bring to a boil again and immediately turn off the heat. Sprinkle the finished soup with herbs and let it brew for a while.
