Good afternoon, lovers of cool desserts! I think that in such a hot summer everyone is a fan of cold drinks and ice cream. But the problem is, I don’t like ice cream lately. I don’t like it, no way! After it you just want to drink even more and that’s all. When it’s hot, I prefer to drink either water or homemade fruit drinks and compotes, and I don’t like any kind of carbonated stuff either. But the soul requires something like this: tasty, airy and always cold. And I found how to help her. This is an awesome homemade strawberry sorbet. Write down the recipe.

Forgive me, but I came up with the name myself. And such a “high” origin of blue bloods is due to the fact that I used the “Black Prince” berry variety.

Strawberry sorbet recipe

We will need a few ingredients, but we will need to devote time to this dessert. I advise you to start preparing it in the evening, at about 6 o’clock, so that in the morning you can please your loved ones.

Ingredients:

  • Strawberries - 600 grams.
  • Sugar - 150 grams.
  • Lemon - 1 pc.
  • Water - 50 ml.

Wash the strawberries well and let them drain. Then separate the sepals and cut the berry into slices. For me they were quite dense, so they should be crushed for further use. If you have very soft strawberries, then you don’t need to crush them with a knife.

How to make at home

Place the strawberries in a bowl and sprinkle with sugar. I took it a little more than normal. Since “Black Prince” seemed to me beautiful on the outside, but not very sweet on the inside. Let the berries stand for a while to release juice. And recently, I cooked. It turned out so delicious.

Squeeze all the juice out of the lemon. Gently mix the berries and leave them for another 15 minutes.

Using a blender, carefully puree the strawberries. How to prepare further mass for hardening will depend on you, proceed as you wish.

  1. You can strain the puree through a sieve to obtain pure juice for further use.
  2. You can leave the strawberries with pulp. This will make the sorbet thicker. But then make sure that there are no large lumps of strawberries.

I used the second option - with pulp.

Pour the mixture into the dishes in a thin layer. It is better to use wide shapes.

Don’t overdo it, the thickness of the puree in each bowl should be the same as in the photo - 1.5-2 cm.

Place everything in the freezer for 60 minutes.

After an hour, take out the sorbet and “fluff” it with a fork. Don't be afraid to destroy a thin layer of ice. Thus, we saturate the dish with air.

Then put everything back in the freezer and repeat the procedure three times every hour. After the last stirring, leave the dessert alone overnight.

When the desire arises, enjoy the cooling sorbet, use a special or regular tablespoon to form ice balls and serve them in a plate.

This wonderful berry sorbet is easy to prepare at home. You can pamper your guests with a custom dessert design, but for yourself it’s better to just put everything in a bowl in a large mound and enjoy the coolness.

How to make strawberry sorbet, step-by-step recipe with photos:

Step 1. To begin, wash the strawberries thoroughly, remove the soil from them and cut off the “tails”. We will not boil the berries or subject them to hot heat treatment, so it is better to select the most beautiful strawberries “at the start.”

Step 2. Squeeze the juice from a fresh orange into a saucepan.

If you don’t find an orange in the store, buy orange juice, just read the ingredients carefully, if the box says “juice”, then the fruit part in it is 100%, but if it says “nectar” - there is about 10% fruit, everything else – sugar syrup.

Step 3. Add sugar to the orange juice and bring the mixture to a boil. Boil for 2-3 minutes.

Strawberry sorbet turns out to be quite sour, and to make it sweet and more pleasant to taste, we use sugar and orange juice.

Step 4. Thoroughly grind the strawberries through a sieve or puree them in a blender and add orange syrup to them.

Step 5. Pour the berry mixture into a flat pan (this will allow the strawberry sorbet to harden faster) and place it in the freezer for 3-5 hours.

To ensure that the sorbet freezes evenly, stir it every hour with a wooden or silicone spatula.

Step 6. For a beautiful presentation of strawberry sorbet, use the remaining orange peel halves by cutting them into 2 parts and forming a “cup”. Scoop out the orange pulp with a spoon and rinse the peel with warm water.

Step 7. Serve strawberry sorbet in an orange “glass” with a leaf of meat or lemon balm.

Making strawberry sorbet at home

  1. Wash the strawberries in cold water and separate them from the stem. Don’t know how to do this as quickly as possible and with minimal loss of juice and healthy pulp? Use a regular drinking straw. Insert the straight end of the tube into the berry, push it towards the tail, and you will see on the tube a stalk already separate from the strawberry. Of course, the traditional option - tearing off the leg with your hands - has not yet been canceled.
  2. Place the berry in a saucepan, add sugar and fill with water.
  3. Squeeze the juice out of the lemon and add it to the strawberries, and leave for a quarter of an hour until the juice appears.
  4. Grind the strawberry mixture in a blender to a puree consistency. To make it more uniform and airy, it is recommended to pass it through a sieve.
  5. Pour the sorbet into a large container (preferably plastic) in a thin layer and freeze it in the freezer.
  6. After an hour, stir with a fork or turn over with a whisk. This procedure will prevent ice crystals from forming and saturate the strawberry sorbet with oxygen. We hide the dessert again in the freezer and stir it 3 more times with a time interval of 1 hour. Now for 12 hours we forget about him. Or, if you decide to prepare the dish in the evening, leave it overnight, and in the morning you can enjoy it.
  7. Place the finished dessert into a bowl with a spoon.
  8. We divide one berry into 4 parts and decorate with sorbet slices. For the same purpose we needed mint. We tear off three leaves from the branch and add to the strawberry.

Strawberry sorbet “Taste of Summer”

There is a simpler recipe for strawberry sorbet. Its main advantage is that it requires little time and the ability to prepare dessert at any time of the year, reminding yourself of summer.

Ingredients

  • Frozen strawberries – 500 g;
  • Sugar – 100 g;
  • Orange juice – 100 g.

How to make frozen strawberry sorbet

  1. We install a blade attachment on the blender.
  2. Pour sugar into a deep bowl and grind it with a blender.
  3. Add berries, juice to the powdered sugar and puree everything using a blender. It will be ideal if the juice is pre-cooled.
  4. Divide into portions, decorate, enjoy.

For more flavor variety, you can add some more fruits. For example, banana. Since it is not sold frozen, we first cut it, and then freeze it in the freezer for a couple of hours, and only then turn it into sorbet.

1. Wash the orange, dry it and cut it crosswise into 2 halves. Squeeze the peel over a cup with your hands and squeeze out 30 ml of juice from the pulp. For this purpose, you can also use a press or manual citrus juicer.

2. Pour the juice into a small saucepan. Add sugar.

3. Place on low heat and bring to a boil. Stirring constantly, cook the syrup for 2-3 minutes. Then remove from heat and cool.

4. Free the berries from the stems and place in a blender bowl. Grind on low speed until pureed.

5. Place the strawberry puree in a saucepan with the cooled syrup. Stir.

6. Place in the freezer for 5-6 hours. Stir thoroughly with a spoon every hour to prevent large ice crystals from forming.

Wash the mint, dry it and remove the leaves from the branches.

Place the finished strawberry sorbet in bowls, garnish with aromatic mint leaves and serve immediately to the dessert table.

You can make an equally delicious sorbet if you use fresh strawberries instead of frozen ones. The same amount will be required.
