  • bean pods – 100 gr.
  • fresh honey mushrooms – 150 gr.
  • 2-3 medium potatoes
  • onion - 1 head
  • sour cream – 3 tbsp
  • ready-made spice mixture for pork
  • salt to taste
  • greens in season

Cooking process

Sort the mushrooms, wash and clean them - remove the membranes, cut off the stems (the lower part for young ones, the entire stem for old ones). Cut into large strips, add water and put on fire. After boiling, remove the foam, add salt and continue to cook over low heat for 40 - 50 minutes. Drain the finished honey mushrooms in a colander.

Wash the pork and cut it as usual. Peel the onion and cut into half rings. Fry the meat for 10 minutes over high heat, then add the onion and cook for another 10 minutes.

Add boiled honey mushrooms, sour cream, a mixture of spices for pork and salt to taste into the pan with meat. Mix everything and simmer over low heat for 5-7 minutes.

Preheat the oven to 220 C. Peel the potatoes and cut into cubes. Boil the pre-soaked beans a little in salted water and drain in a colander. Wash and disassemble the greens.

Place the chopped potatoes in a large ceramic dish or in several pots. Place beans on top. Add the next layer of meat with mushrooms and sour cream. Cover with a lid and place in the oven. Bake for 30 minutes at 200 C.

  • Salt, a mixture of ground peppers, favorite seasonings.

It's no secret that all types of fruiting bodies consist of 90% water, so their volume decreases significantly when cooked. Thus, if you put them in a dish raw, then when cooked it will be almost half the size. Therefore, it is advisable to pre-fry the mushrooms in a frying pan until the liquid evaporates.

Clean the mushrooms from dirt, cut large specimens into pieces. Wash all the mushrooms, place in boiling salted water and boil (15 minutes).


Meanwhile, peel the potatoes and cut them into cubes or slices. Place in water and leave for 20 to remove excess starch.


Transfer the boiled honey mushrooms to a colander to drain the liquid and place in a frying pan with vegetable oil. Fry over medium heat until cooked and transfer to a deep plate.


Add onion cut into half rings, crushed garlic, spices to taste and mix everything together.

Take a baking dish and grease it with a thick layer of sour cream. Place ½ potatoes and then ½ mushrooms and onions. Grease with sour cream and repeat the procedure with the remaining potatoes and honey mushrooms.

Sprinkle with finely chopped herbs and bake.

Bake the roast with honey mushrooms in the oven for about 80 minutes at a temperature of 190-200°C. When serving, place the dish into portioned plates.

Preparation

Before frying honey mushrooms with potatoes, they need to be boiled for 10 minutes. After this procedure, drain the water, pour fresh water into the container, bring the mushrooms to a boil, salt and cook for another 15 minutes.

Place the boiled mushrooms in a colander and allow the excess liquid to drain.

While the mushrooms are being cooked, you need to peel, wash and cut the potatoes into strips.

While the potatoes are soaking, chop the onion.

Place the onion in vegetable oil well heated in a frying pan and fry until it acquires a golden brown color.

Mushrooms are added to the onions fried to the desired degree. Fry the ingredients together for 10 minutes.

The potatoes must be dried. To do this, use a paper towel.

Heat the oil in a larger frying pan and place dry potatoes in it. Fry it over high heat until it browns.

Onions and mushrooms are added to the fried potatoes. The ingredients are brought to full readiness over medium heat, stirring occasionally. At the end of cooking, salt the dish to taste.

The finished dish is sprinkled with chopped green onions, and fried potatoes with honey mushrooms are served piping hot.

If the housewife plans to fry potatoes with pre-frozen mushrooms, there is no need to defrost them before adding them to the dish. In this case, the frozen mushrooms are fried along with the onions until all the liquid formed during the cooking process has evaporated from the container.

To prepare fried potatoes with dried mushrooms, the dried mushrooms must be pre-processed. Soak dried wild mushrooms in water to make them softer and more elastic. This type of mushroom must be boiled as indicated in the recipe presented above.
