  • In a salad bowl, place a package of arugula or a mixture of lettuce leaves, 1-2 pomegranate seeds (depending on size), 150 grams of gorgonzola (soft goat cheese or feta), chopped into medium pieces, cooked beets and nuts. Stir gently.

For refueling:

  • Mix a third cup of olive oil, a couple of tablespoons of balsamic vinegar, 2 teaspoons of orange zest and 2 tablespoons of orange juice, and season with salt and pepper.
  • If you have it, add a tablespoon of fig jam. If not, then 2-3 chopped dried figs or raisins. These are additional options, depending on your taste.
  • Mix everything well and season the salad.

Broccoli and Bacon Salad

This unusual dish is prepared very simply and is perfect as a side dish for meat or on the festive table for Old New Year 2019.


Broccoli and Bacon Salad Recipe:

  • Using a small knife, separate the broccoli florets from the head; cut larger ones in half. Separate the coarse part from the head itself, and chop the stem itself into equal parts.

  • Prepare the dressing. Squeeze 4 cloves of garlic into a bowl, add the juice and zest of half a lemon, season with salt and pepper, whisk well, add 3 tablespoons of good quality olive oil.
  • Finely chop a bunch of herbs: mint, parsley, chervil - to your taste.
  • In a hot frying pan, lightly fry 100 grams of walnuts or cashews.
  • In another frying pan, heat a couple of tablespoons of olive oil and fry slices of halloumi cheese (250 grams) until golden brown. Finally, add a tablespoon of liquid honey and lightly caramelize.
  • In a salad bowl, combine broccoli, cauliflower, mung bean, add herbs, dressing, mix gently.
  • Sprinkle the salad with toasted nuts and top with halloumi.
  • Serve warm.
