  • a glass of flour and kefir;

  • 1 egg;

  • 0.5 tsp. salt;
  • 1 tsp. baking soda or baking powder.
  1. Kefir is mixed with butter, semolina is added.
  2. The mixture is left for 10 minutes.
  3. The remaining components are attached. The flour is added last.
  4. Part of the dough is poured into the mold, the filling and the rest of the mixture are laid out on top.
  5. Bake for about half an hour.

There was no semolina on the farm? There is another option for which you will need the following components:

  • 0.5 l of kefir;
  • 2 eggs;
  • 2 cups or a little more flour;
  • 1 tbsp. l. Sahara;
  • a teaspoon of salt and soda.
  1. Heat kefir, mix with eggs, add sugar, salt and slaked soda.
  2. Beat the mixture and gradually add flour into it. The consistency of the dough is like that of pancakes.
  3. Next, according to the usual scheme: dough - filling - dough.
  4. Place in the oven for 20-30 minutes.

Pie dough without eggs and kefir

  • 0.5 kg flour;
  • 1 pack (200 g) butter;
  • 2 tbsp. l. vodka;
  • 1 tbsp. l. Sahara;
  • a pinch of salt.
  1. The flour is sifted, laid out in a heap on the work surface, and a depression is made for the remaining components.
  2. Add melted butter, vodka, salt and sugar.
  3. The dough is quickly kneaded, placed in a cool place for 20 minutes, divided into two or three parts, from which the future product is formed and filled with filling.
  4. Bake for 25-30 minutes.

Simple pie dough

  • 200 g each of mayonnaise and sour cream (yogurt);
  • 3 eggs;
  • a glass of flour;
  • 15 g baking powder.
  1. Preparation involves mixing all the ingredients, preferably using a mixer or whisk.
  2. Part of the dough is placed in a mold, filled with filling, and filled with the remaining mixture.
  3. Bake for 20-30 minutes.

For the lean version, use soy milk and lean mayonnaise, no eggs are added.

Curd dough for pie

  • 300 g cottage cheese;
  • 3 eggs;
  • 2 tbsp. l. with a pile of sugar (for sweet pastries);
  • 2 tbsp. l. sour cream;
  • 500-600 g flour;
  • 1 tsp. quenched soda;
  • a pinch of salt.
  1. The cottage cheese is rubbed through a sieve. If it is low-fat, you can add 30-50 g of butter.
  2. Add sour cream with sugar and eggs.
  3. The flour is sifted, mixed with salt and quenched soda.
  4. All blanks are combined. The dough is kneaded.
  5. From this base you can make small pies and fry them in vegetable oil or make one dish and bake them in the oven.

Moldovan choux pastry

  • 1 glass of water;
  • 600 g flour;
  • 100 g vegetable oil;
  • 1 teaspoon each of salt and sugar.
  1. Oil is added to the water.
  2. The liquid heats up, but does not reach a boil. To speed up the process, you can use boiling water.
  3. The sifted flour is mixed with salt and sugar.
  4. The dough is kneaded first with a fork or spoon, and when it cools down, with your hands. The result should not be hard, but soft.
  5. The workpiece is rolled out thinly, part of the filling is placed in the middle in a strip, covered with one half, on which the rest of the filling is placed on top.
  6. Baked in the oven until golden brown.

All recipes are universal: the dough goes well with vegetable, meat, mushroom, fish, and sweet fillings. In the latter case, you need to increase the amount of sugar or add this component.

Several pie filling options

  • Potatoes and cabbage. Cabbage is fried until dark brown and mixed with puree.
  • Chopped meat (minced meat is possible) and onions. The ingredients are prepared in the usual way, resulting in a meat pie.
  • Canned fish. They are added “as is”, the liquid is first drained. Can be supplemented with onions, boiled rice, cheese.
  • Egg with green onions. Boil 2-3 eggs, chop and mix with green onions.
  • Cabbage. You can experiment with it: add stewed, fried, mix with sauerkraut. Cooked until soft and combined with a boiled egg works well.
  • Pumpkin. Finely chopped or grated. A convenient ingredient: you can add pepper, add onions, or just sprinkle with sugar.

For sweet fillings, fruits, berries, and jam are used. It is better to add chocolate, condensed milk, cream to the batter after baking, cutting the cake lengthwise or pouring it on top.

It is better to use refined vegetable oil, then the finished product will not have an unpleasant odor or taste.

Kefir in recipes can be safely replaced with sour milk, whey, sour cream or a mixture of all of the above, brought to the desired consistency with flour or water.

The golden brown crust will be more appetizing if you brush the product with sweet water or egg before the baking stage.

We make this pie on unleavened dough without yeast , which can be prepared very quickly; in the finished pie it will be thin, since it practically does not rise during baking, and slightly crispy. In order not to repeat ourselves, in this recipe we will not write about the dough, but we will assume that we already have the dough ready, and we will talk about further steps for preparing the pie.

You need (for filling and greasing the pie):

  • Apples (we prefer sweet and sour) – 1.2-1.3 kilograms (7-8 medium-sized pieces); if your baking tray is small, maybe 1 kilogram will be enough
  • Granulated sugar - about 3-4 heaping tablespoons per apples (generally, to taste, and depending on how sour the apples are) and sprinkle another 1-2 tablespoons on top of the pie.
  • Ground cinnamon (if desired, you can do without it, the taste will be different) - about 1.5-2 teaspoons
  • Chicken egg – 1 piece (brush the pie on top)

Preparation:

The apples, of course, must first be washed and wiped dry.

Next, cut the apples into small slices, do not peel the peel, and, of course, discard the core.

We take the dough, already prepared and divided into two unequal parts, out of the refrigerator. We take the larger part for the base of the pie, sprinkle the table or rolling board with flour and roll out the dough into a large thin layer, not forgetting to add a little bit of flour under the dough and on its surface so that it does not stick together. Remember, the size of the layer should be 5 centimeters larger than the size of your baking sheet on each side (more is possible), because you will then need to fold the edges of the base of the pie up so that the filling does not come out.

Fold the dough towards the middle on each side (or roll it around a rolling pin) to transfer to the baking sheet. Cover the baking sheet or grease it with margarine (or butter). Transfer the folded layer of dough to a baking sheet and unroll it there.

Now place the apples cut into slices on the base of the pie, trying to make a more or less even layer (it won’t be perfect evenly, since the apples are not cut very finely).

Sprinkle the apples evenly with granulated sugar and (if desired) ground cinnamon.

Take the remaining smaller portion of the dough and roll it out thinly for the top layer of the pie. The size of this layer of dough should correspond to the size of the base of your baking sheet. We fold the rolled out layer towards the middle or roll it onto a rolling pin for easy transfer to a baking sheet. By the way, at this time you can already turn on the oven to warm up.

Cover the pie on top of the apples with the rolled out dough, fold the edges of the base layer over the “lid” layer ( watch our video recipe!). Trim the protruding edges of the baking paper (if you used it) so that it does not touch the walls of the oven. Brush the top of the pie with egg (after mixing the white and yolk), this can be done with a special brush, or directly with your fingers. Don’t try to use the whole egg, it’s too much, your goal is to coat “without any bald spots.” Sprinkle granulated sugar on top of the pie (a little bit, not so much for taste, but for a beautiful appearance). Using the tips of the scissors, make cuts (20 times, no less) in the top covering layer of dough.

Place the pie in a preheated oven at medium height or slightly higher and bake at a temperature of about 190-200 degrees (this is, if your oven does not have a thermometer, medium heat level or slightly higher) for about 40-45 minutes.

We determine the readiness of our apple pie by color: the pie should brown and turn golden yellow, in places even a little brownish.

Cut the pie into pieces while it is still hot (preferably not on a baking sheet, but on a board). Since the dough turns out a little crispy, it is convenient to use a bread knife (with saw teeth), but this is not necessary, you can just use a sharp one. To make the pie cool faster and not get soggy from its own steam (the apples are juicy!), spread the pieces of the pie apart on the board. When the pie has cooled, you can place it on a flat dish in several layers. That's it, we hope you enjoy this one. If suddenly you do not eat the whole cake on the same day, it can be stored for 2-3 days at room temperature, you can cover it with a cake cover to prevent it from drying out. Line a wide baking tray with baking paper and lightly grease it with vegetable oil. Divide the dough into two equal parts. Roll out one part and place on a baking sheet. The dough is difficult to roll out with a rolling pin, since it is very tender, it is easier to stretch it with your hands.

Peel and cut the apples into pieces, arrange them in an even layer on the dough.

Cut the dried prunes into pieces and scatter them over the apples.

Roll out the remaining piece of dough and cover the fruit with it, pressing the edges of the pie with your fingers. Preheat the oven to 200 degrees and place the workpiece in it. All irregularities in your product will be hidden during heat treatment. The cake rises well in the oven and becomes porous and airy.

  • Flour - one glass;
  • Sugar - one glass;
  • Three eggs;
  • Two - three apples;

You can bake in silicone and springform pans, in a deep frying pan.

The frying pan needs to be prepared as follows: cover the entire surface with parchment, if there is no parchment, then grease it with sunflower oil and sprinkle with flour.

  • 3 raw eggs
  • 1 cup flour (6 heaped tablespoons of flour)

Mix everything carefully, being careful not to break the bubbles inside the delicate dough too much.

IMPORTANT: The shape should not be large, about 22x22cm. One portion of dough is not enough to cover the apples in a large pan and the pie will not turn out fluffy because the layer of dough is too thin.

Let's prepare the dough. In the milk, which we have warmed to room temperature, add yeast and 1 tbsp. l. Sahara. Stir until the yeast dissolves. Add a pinch of salt, pour in a glass of flour. Mix milk and flour, add another half cup of flour.

The dough should be lump-free and have the consistency of pancake dough. Cover the dish with the dough and place it in a warm place for at least an hour. If the yeast is good, then after an hour the dough will rise and increase in size by 2-3 times. A sign that the dough is ready will be large and small bubbles that appear on its surface.

Prepare the dough. Pour the dough into a spacious bowl in which we will knead the dough.

Add the remaining sugar, melted butter and eggs. Stir, add all the flour and start kneading the dough.

At first it will be sticky, but as you knead it will become soft, pliable and pleasant to the touch. Transfer it to a saucepan and place in a warm place to rise.

After an hour, when the dough has risen well, punch it down.

Divide into 2 parts. Place each one in a mold, using your palms to level it along the bottom and sides. There is no need to roll out the dough. Trim off any excess dough - it will be used to decorate the pie.
