Christmas Eve got its name from the ritual dish that must certainly be on the pre-Christmas and Christmas tables - sochiv.

Sochivo is steamed or boiled whole grains of wheat, rice, oats and other grains, seasoned with poppy seeds, nuts, dried fruits and honey. In terms of composition and cooking technology, everything is very similar to kutya, which is why in some areas this is what they serve at the table - there is no sin in that. Today I will tell you how to cook succulent rice from rice in a detailed recipe with step-by-step photos.

Like other traditional ritual dishes, sochivo contains a whole palette of symbols. Whole grains symbolize rebirth, sweet additives symbolize divine grace. But poppy, which, as a rule, is not added to kutya, is an ancient symbol of the dream of death (poppy is the flower of the pagan Slavic Morana-Death), that is, as if a reminder of the frailty of human earthly existence.

Like many other ritual dishes, for example, sochivo begins to be prepared in advance, two or three days before Christmas Eve.

To cook luscious rice, we took unpolished (that is, preserving the integrity of the shell) rice, dried fruits (dried apricots, raisins), nuts (almonds, walnuts), poppy seeds and honey. The set of dried fruits and nuts can be different, depending on taste and possibilities.

How to cook sochivo for Christmas Eve

Let the rice cook, adding a pinch of salt, a cinnamon stick and a few cloves.

We wash the finished rice, place it in a sieve and remove the cinnamon and cloves that have given off their aroma.

For a glass of dry rice, which has approximately doubled in volume during cooking, take a handful of nuts, dried fruits and poppy seeds.

Pour boiling water over the raisins, dried apricots and almonds and let them stand to soak. If the skins of the almonds do not come off well, you will have to scald them again or cook them in the microwave for a couple of minutes. The poppy seeds should be boiled for 5-10 minutes to soften.

Wash the soaked raisins and dried apricots and dry them on a napkin. After drying, cut the dried apricots into fairly large pieces. Remove the skins from the almonds and cut them in half. We carefully sort out the walnuts, lightly fry them and cut them too. Drain the excess water from the steamed poppy seeds and pound in a mortar (for larger volumes, you can use a blender).

Put 2-3 tablespoons of honey (to taste) into the poppy seeds and mix thoroughly so that the honey disperses. You can also use sugar, but the light honey sourness goes better with dried fruits.

Now all we have to do is mix everything, put it in a container with a lid and put it in the refrigerator for a couple of days for the flavor to mature. Unlike kutya, which can be eaten immediately after cooking, sochivo requires time for the oiliness of poppy seeds and nuts, the sweetness of honey and the acidity of dried fruits to create a harmonious bouquet and impart it to the boiled grain.

On Christmas Eve, when the first star rises, everyone must eat a couple of spoons of sochiv before starting their meal. After all, such a festive holiday, most importantly, is considered the key to prosperity and success in the coming year.

Sochivo from rice can be served to eaters in different ways. How I decided to decorate the traditional Christmas dish this year can be seen in the photo.

It was the first twelfth holiday of the new year. Orthodox people, out of respect for the great event - the Baptism of Jesus Christ - observed a short fast. For this reason, the second Christmas Eve was called “Hungry Kutya”.

Epiphany Christmas Eve: what is it?

Epiphany Christmas Eve (January 18) is a day of strict fasting and repentance. Fasting prepared believers for the feast of the Epiphany, which was always distinguished by pomp and solemnity. The blessing of water occupies a central place in it. Two rites of consecration of water are performed: one on the eve of the holiday - inside the temple, the other - on the day of Epiphany - at the nearest reservoir.

It is believed that Epiphany water gives health, sanctification, blessing and purification. On Epiphany at midnight we went to the river to fetch water. There is a belief that at this time the water in the rivers sways. Water was poured into the bowl in the evening, and at midnight it was supposed to sway on its own. If this happened, then this is a good sign - it means that the person saw the appearance of the Lord.

On Epiphany evening they collected snow. It is believed that it heals diseases. It was used for washing, so the water from it was stored for a long time. It was also believed that only with its help can the entire canvas be whitened as needed. Snow was also collected for the bathhouse: “ The snow bath will add beauty" They believed that if the snow collected that evening was thrown into a well, the water in it would not deteriorate or dry out throughout the year.

Epiphany Christmas Eve: traditions and customs

On the eve of Epiphany, a strict fast was observed. Therefore, the festive dinner on Epiphany Eve was nicknamed “hungry kutya”. Kutya, oatmeal jelly and pancakes were always present on the festive table. At Epiphany, pancakes were carried to the barn for the brownie to ensure the well-being of the livestock. The peasants ate pancakes so that there would be a good grain harvest in the coming year.

In the evening it was customary to eat juice. Until the beginning of the 20th century in Rus', this dish (like kutya) was prepared mainly from rye grains, and later from rice and wheat grains. That is why many city residents are more familiar with kutya and sochivo, made from rice.

To make it juicy, there are several surefire ways. First, the wheat grains are soaked, and then they are placed in a cast iron pot and filled with a large amount of water. The cast iron is put into the oven for 2.5-3 hours of simmering. After which the grains turn out soft and tasty. It is also very important to quickly pour hot, well-fed (a solution of honey and water) over the grains. Then the juice turns out really juicy.

“Sochivo”: recipe for making wheat

To prepare the dish you will need:

  • 1 cup wheat grains;
  • 100 g walnut kernels;
  • 100 g poppy seeds;
  • 1-3 tbsp. spoons of honey;
  • sugar to taste.

Wheat grains need to be crushed in a wooden mortar using a wooden pestle, while periodically adding a little warm water so that the wheat shell comes off. The kernel is then separated from the husk, sifted and washed. The usual crumbly liquid lean porridge is cooked from pure grains in water, cooled and sugar is added to taste.

Separately, grind the poppy seeds to obtain milk of the poppy seeds, add honey, mix and add to the wheat. If the porridge turns out thick, it can be diluted with boiled chilled water. At the end you need to add crushed walnut kernels.

“Sochivo”: rice recipe

If you want to make sochivo from rice, then the rice must be prepared in a special way. Pour a glass of rice into one and a half glasses of boiling water, cover the pan tightly with a lid, cook the rice for 3 minutes on high heat and 6 on medium. Do not open the lid for another 12 minutes and allow the rice to steam. For sweetening, it is better to use only honey. The ratio of other components for sochi is the same as in the previous recipe. Sometimes raisins are added, but this is not necessary.

Epiphany Christmas Eve: signs and beliefs

“Epiphany Evening” was considered a time of rampant evil spirits. During this period, it is possible to communicate with another world and evil, which strives to enter the home as a werewolf in any guise: dogs, cats, snakes, pigs. But often werewolves enter a house in the guise of a baby, a wanderer, a miller, a blacksmith, or they can take the form of an acquaintance - a relative or neighbor.

Ideas about werewolves go back to ancient times. They are associated with the belief that shamans or sorcerers have the ability to take the form of an animal, a person, a plant, and even a stone. The belief in the existence of werewolves developed under the influence of the idea of ​​the animation of all nature (animism), the origin of people from various animals (totemism), and the cult of fertility.

The Slavs divided the year into two halves - winter and summer. The off-season periods - autumn and spring - were considered “the times between times.” At this time, nature is on the verge of life and death. Our ancestors believed that during periods of “between times,” which also include midnight and noon, spirits and souls are especially active. According to the belief of the ancients, during these periods of time people, having changed their appearance, can visit another world and come into contact with evil spirits, to their detriment or benefit. A person only had to put on the skin of some animal or decorate himself with other attributes of nature, and he, while remaining human, at the same time turned into another creature or object, being at the same time “neither one nor the other.”

Over time, the idea developed in people's minds that some people are more capable of such transformations, while others are less capable. Those who are more capable are able to quickly and directly contact the forces of nature, either benefiting people or harming them. Based on these thoughts, the belief in werewolves arose.

Our ancestors believed that wolves that attack people in cold winters are “wolves” (people who can turn into wolves with the help of witchcraft). In Slavic mythology, volkolak, vurkolak, volkodlak are a werewolf, i.e. a person capable of turning into a wolf. To do this, he had to somersault over a stump or a knife or aspen stake stuck in the ground. People believed that a person could be bewitched and turned not only into a wolf, but also into a bear, which could then turn into a cat, a dog or a stump. The main feature of a werewolf is the fur on its body. It differs from real wolves in that its hind legs bend forward at the knees, like a human's. According to ancient legends, werewolves are capable of turning into ghouls, and during an eclipse they can eat the sun or moon.

To protect against a werewolf entering the home, cross marks were placed in chalk on all doors and window frames. From time immemorial, the cross has been considered a reliable protection against everything demonic. Therefore, in the old days, on Epiphany Christmas Eve, crosses were always drawn with chalk on the doors, walls, lintels of buildings (house, barn, barn, etc.), and at wells crosses were laid out from wood chips. It was believed that this ritual would help protect the house from troubles, the evil eye, evil spirits and lightning.

Chalk for baptizing houses together with water was blessed in the church. In whitewashed huts, crosses were made with coal or turpentine. To protect cattle from everything bad, they sprinkled them with holy water. They believed that if this was not done, the evil spirits would greatly torment the animals.

On the eve of Epiphany, cattle were fed bread with a cross on the top crust. In the southern regions, the owner often performed a ritual walk around the cattle in the yard with an ax in his hands, and then threw the ax over the animals gathered together.

According to Orthodox people, on Epiphany and on the eve of the holiday, not only consecrated water, but in general any water collected from natural sources and even snow had miraculous powers. It is believed that such water can remain in a closed vessel for several years and not deteriorate. Epiphany water was sprinkled on hives and livestock was given water so that they would reproduce better and not get sick.

On Epiphany Eve, women collected snow, which was used to treat various diseases and to whiten canvases. Snow collected in the field was lowered into a well to store water throughout the year.

Signs on Epiphany Christmas Eve

  1. If there is a snowstorm on this day, then take revenge on it in 3 months. Another snowstorm on Golodnaya Kutya indicates that bees will swarm well.

Epiphany Christmas Eve: fortune telling

Epiphany is the last night of Christmas fortune-telling. The girls went out of the gate to cast a spell on the first person they met:

  • meeting a young guy means getting married soon;
  • meeting an old man is not good.

They wondered about the harvest. According to legend, frost on Epiphany night falls on those grains that will be harvested next summer, and those whose harvest will be poor will remain dry. To do this, they put different grains in cups outside at night, and in the morning they examined them: whichever frost fell on, that one would be born.

On Epiphany Christmas Eve you can tell fortunes for the fulfillment of a wish. To do this, in the evening, light a candle in front of the icons and pray, asking the higher powers for patronage and protection. Then, on a separate sheet of paper, write down one of your wishes. There should be no more than ten of them in total. Desires must be feasible and real. Before going to bed, place the leaves under your pillow.

In the morning, wash yourself three times with Epiphany water and say:

“Let your wish come true on a magical night,

Everything good that you dream about will never be forgotten.

Epiphany water will wash away the evil eye and bad dreams,

And everything bad will leave my life forever.”

After this, take out one piece of paper from under the pillow without looking. The wish written on it will definitely come true in the near future.

Epiphany Christmas Eve, or Eve of Epiphany- this is the time when everyone prepares for the holiday. On January 19, the Epiphany of the Lord is celebrated. On Christmas Eve, water is blessed in Temples, which has all the properties of Epiphany water.

Candles

Epiphany evening, or the Eve (Evening) of Epiphany, is also called Epiphany Eve, Second Christmas Eve. Previously, another name for the holiday was popular among the people - "Candles". On this day, women tied church candles with ribbons (or colored threads) and placed them near the container in which water was blessed during the evening service. After the service, the women took candles home with them and placed them near the icons. Fast

On the Eve of Epiphany, a strict fast is observed until the first star that appears in the sky, i.e. before dark (as on Christmas Eve). At this time, they eat lean porridge, bread, vegetables, drink water, tea or compote. The first food after fasting is sochivo (kutia). In Rus' on this day there was such an order: after the family returned home from Church, bringing water blessed in the Temple, everyone sat down at the table and broke their fast with traditional sochiv (kutya).

Sochiv (kutia) recipe. 1 cup of whole (peeled) wheat grains, a symbol of resurrected life, should be boiled so that a thin, crumbly porridge is obtained. It is cooled, after which about 4 - 5 full tablespoons of poppy seeds are added (a symbol of family wealth), which is first kneaded strongly and mixed with 3 - 4 tablespoons of honey (a symbol of health and prosperity). Instead of wheat, rice is sometimes taken (less often barley), and poppy seeds are replaced with almonds. Too thick porridge is diluted with water. At the very end, 100 g of chopped walnuts and steamed raisins are poured into the porridge. To prepare classic sochivo you need: 1 glass of wheat, 100 g of poppy seeds, 100 g of peeled walnuts, 3 tablespoons of honey.

Epiphany water

On the Eve of Epiphany (Epiphany Eve), a liturgy is celebrated and the water is blessed. Water is blessed in the Temple on this day. This is the first consecration of water. The second consecration of water takes place, according to Russian custom, on January 19th. “The rite of blessing of water can be performed on the eve of Epiphany and on the day of the holiday itself. Water is stored in a closed container next to the icons. Holy water can be added to plain water, and it imparts its properties to it. Among the beneficial properties of holy water, its healing properties are especially valued. They drink it (at least a sip) in the morning on an empty stomach with prayer “In the name of the Father, and the Son, and the Holy Spirit. Amen".

Orthodox Christians sprinkle their homes with this water to protect them from evil spirits. Previously, it was customary for the head of the family to take a few sips of blessed water, then take a willow branch from behind the icons and sprinkle the house.

Folk traditions, fortune telling

The Eve of Epiphany, or Epiphany Evening, was rich not only in fortune-telling, but also in various rituals protecting family, home, livestock, etc. from all sorts of troubles. The rituals associated with Epiphany snow are interesting. They put crosses on windows and doors to protect homes, barns and other outbuildings from evil spirits. Chalk was sometimes used instead of snow. Epiphany snow was thrown into the well so that it would not dry out, and the water would always remain fresh. The snow was collected and allowed to melt. Melt water was stored for a long time and used for treatment and washing. It was believed that it bleaches canvas well. To do this, snow was collected not just anywhere, but from stacks. Moreover, the collection of Epiphany snow was entrusted to old women. The girls also did not miss the opportunity to collect snow from the stacks and wash themselves with melt water. They wanted to have white skin on their face. In some provinces, this evening they hung amulets in the house - crosses made from connected splinters.

There was also a fortune telling in which the owner of the house himself took part. On Epiphany evening, he brought several bowls filled with various grains into the yard. I placed them so that the chickens would not peck them. In the morning I looked to see which of the bowls had frost on them and which ones didn’t. Frost indicated the grain crop that would be productive.

Sochivo can be prepared from wheat, barley, rice, adding nuts and honey.

How to cook juicy

This is not difficult to do. But you need to know that the dish has its own subtleties that must be taken into account. The main secret is in a special method of cooking cereals. It is somewhat different from the traditional one: pour a glass of rice (preferably steamed) with a glass of water and boil it for twelve minutes over very low heat. Remove the pan from the stove and let the cereal sit for ten minutes. Season the rice juice with steamed raisins and honey water. You can add a handful of almonds, a handful of hazelnuts, a slice of lemon, a small orange, 50 grams of poppy seeds. It is advisable that the nuts are raw and fresh.

Sochivo from rice: recipe No. 2

Rinse a glass of rice well with running water, draining it several times. Place it in a small ladle or saucepan, cover with water (cold) and bring to a boil. Then drain the water through a sieve and rinse the cereal again. Return the cereal to the saucepan. Now you should add more water. As soon as it starts to boil, add salt to taste. Cook the rice until cooked, then discard the cereal in a sieve, but there is no need to rinse the rice anymore.

While the cereal is cooking, pour boiling water over it for ten minutes and let a handful of raisins brew (you can add more according to your taste). Grate 50-75 grams of almonds and hazelnuts on a fine grater. Place 50 grams of poppy seeds in a small container and fill it so that the water covers it by one finger. Place the dishes on the stove and boil it for twenty minutes, stirring constantly. Cool the poppy seed. Gradually adding liquid honey, use a wooden pestle to grind the poppy seeds into a homogeneous mass.

Place the cooked and cooled rice into a large bowl and mix it thoroughly with the honey poppy seeds. Then add the nut crumbs and mix well again. Add steamed raisins. Then squeeze the juice from a slice of lemon and orange and mix everything again. Place on a dish or large flat plate, fill it with the resulting mixture, carefully remove the mold and decorate with candied fruits and nuts on top. The dish is ready!

Sochivo: made from wheat

First, you need to buy whole (not crushed!) wheat grains. The fact is that

They are the basis of the original taste of this ritual dish. It is advisable that the grains be previously exfoliated and steamed. In this case, they will boil faster. It is prepared succulently, the recipe for which is quite simple, only using water. Under no circumstances should we add milk or cream: the dish is lean, and that says it all.

So, pour cold water over the wheat grains and cook them, covered, until soft over low heat. Check that all the water has not boiled away, add boiling water if necessary. Before the end of cooking, you should have a semi-liquid mass in the pan. In this case, we do not need crumbly porridge. You can remove the pan from the stove and add finely chopped dried apricots, prunes, and steamed raisins to the wheat. You can also add raw fruits: apples, pears - it depends on your preferences. Cover the saucepan with a lid and let everything steam well together.

Add nuts

Without nuts there is no such dish as sochivo. The cooking recipe involves using a variety of nuts, it depends on your taste. You can use hazelnuts, walnuts, cashews, almonds, peanuts, etc. Grind them into not too fine crumbs and fry a little in a frying pan. Do not add oil, but stir the nuts constantly.

How to cook poppy seeds

Now is the time to prepare the poppy seeds. Pour boiling water over it and let it stand under the lid closed for about thirty minutes. Then drain the water, add honey or sugar and grind it thoroughly until white juice appears. Add poppy seeds and nuts to the prepared wheat with dried fruits. Mix all ingredients well, add more honey if necessary. Now put everything beautifully on a plate and garnish with nuts.

How to make it juicy if the wheat is not prepared in advance

Take a glass of wheat grains, pound them in a wooden mortar, adding a little warm water so that the shell comes off the grains. The kernel is separated from the husk by sifting and washing. Then the usual lean crumbly porridge is cooked, to which nuts, honey, and poppy seeds are added.

Another recipe

Sort one full glass of wheat grains well and rinse. For two to three hours

soak them in cold water. Then place it on cheesecloth to drain and place the wheat in a ladle. Fill with cold water in a ratio of 1:3, add a little salt, and simmer over low heat for about two hours. You can place the container with the cereal in an oven preheated to 180 degrees and keep it until the grains are soft. While the wheat is cooking, pour boiling water over the poppy seeds and leave for half an hour. Drain the broth from the wheat, but leave a little of it to dilute the honey in it. Pour honey water over the wheat, grind the swollen poppy seeds until white juice appears, chop the nuts. Mix all the ingredients and let the dish brew for a while.

When to cook this dish?

Sochivo, the recipe for which we have offered you, is usually prepared on the eve of Christmas, on the festive Christmas Eve. Orthodox Christians celebrate it on January 6th, Christians who live there celebrate it on December 24th.

Holy Evening is the name given to the family dinner on the eve of Christmas. This is the last, final day of fasting, which believers should spend only on the water and in festive preparations and worries. Sochivo (Kutia)- a Lenten dish of grains mixed with seed juice and honey, which, according to the Church Charter, is prescribed to be consumed on Christmas Eve. Sochivo can be eaten after the first star appears.

Sochivo. Classic recipe

You will need:

  • a glass of wheat grains (200 g),
  • a glass of poppy seeds (200g),
  • honey,
  • walnuts (100 gr)

Preparation:

A glass of wheat grains must be crushed in a wooden mortar with a wooden pestle, periodically adding a little warm water (so that the wheat shell comes off). The resulting mass is sifted and washed, thus separating the kernels from the husk.

Modern housewives can immediately buy purified wheat grains.

Wheat grains can be soaked overnight to reduce cooking time.

From pure grains, ordinary lean liquid porridge is cooked in water, cooled and sugar is added to taste.

Grind 1 glass of poppy seeds (to obtain poppy milk), add honey (1-3 tablespoons), mix everything and add to the wheat. Poppy seeds can be ground in coffee grinders.
