How to cook chicken hearts:

Clean the hearts from films and wash them. Cut each heart in half.

Peel the onion and cut it into half rings.

Peel the carrots and cut into small cubes.

Heat vegetable oil in a frying pan or in a low saucepan. Fry onions and carrots.

Reduce heat and add chopped chicken hearts. Mix. Cover with a lid and simmer for about 30 minutes. If the liquid evaporates, add small portions during simmering.

When the chicken hearts are ready, remove the lid and increase the heat. Evaporate all excess liquid.

Open the can of beans and place them along with the liquid in the pan. Add crushed or finely chopped garlic cloves and finely chopped herbs. Season to taste with salt and spices.

My husband really loves chicken hearts, especially with buckwheat. Well, so that the buckwheat is not dry, I make the hearts with gravy.
I usually buy chicken hearts in trays, they usually come in 1 kg (sometimes a little less). Wash the hearts thoroughly several times in water so that all the blood clots come out of them.

Fill with water and let it boil. After boiling, I drain the first water because it immediately becomes very cloudy and greasy. I fill it with clean water just above the level of the hearts, add bay leaf, salt and put it on the fire.

After boiling, reduce the gas to low and cook for about 1.5 hours.

Now you can start preparing the sauce. I peel onions and carrots. I chop the onion finely and grate the carrots on a coarse grater. I fry onions and carrots in vegetable oil.

Then I add 1 can of canned beans in tomato sauce.
