Let's prepare the necessary ingredients for making Toffee candies. It’s better to take homemade, full-fat sour cream. If you buy in a store, then take non-powder, with a fat content of at least 20%. It will work great if you replace the sour cream with cream.

In the very first minutes, the sugar will begin to melt and the sour cream will change color. Sour cream is fatty - it will not stick to the sides, but it can burn, so you should not leave the stove, you need to stir periodically, but not constantly.

The longer you cook, the more intensely yellow the mixture will become and become thicker and thicker.

Step 1: prepare the ingredients.

Approximately in 20 – 30 minutes Before cooking, place the butter on the kitchen table, remove the packaging and cut into layers or cubes up to 2 centimeters thick. Place the sour cream (cream) in a small saucepan and place on the kitchen table the remaining ingredients that will be needed to make the sweets.

Step 2: prepare the candies.


Once the butter has softened, you can start making the toffee. Take a small non-stick saucepan or aluminum cauldron. Add the required amount of sugar and honey to it.
Mix them thoroughly with a wooden kitchen spatula until they have a homogeneous consistency, put them on medium heat and let them boil.

After boiling, reduce the heat temperature to a level between low and medium. Cook the resulting mixture, stirring vigorously, for 10 minutes until it turns a deep amber color. During this time, the sugar grains will completely dissolve, and a pleasant honey aroma will spread throughout the kitchen.

After 10 minutes We begin to add pieces of butter to the cauldron, mixing it with the honey-sugar mixture with a spatula. At the same time, heat the sour cream (cream) on the adjacent burner; this product must be hot; if you add it cold, the boiling candy mixture will begin to splash, which can cause a burn!

As soon as the sour cream (cream) warms up to the desired temperature, pour it into the cauldron with the still liquid candy mass and continue to cook for 15 – 20 minutes, stirring.

We check the viscosity of the toffee mixture in the usual way: using a tablespoon, drop a few drops onto a plate, let them cool, then try and decide whether the consistency of the finished sweets suits you. If yes, remove the cauldron from the stove and slightly cool its contents.

Step 3: bring the dish to full readiness.


In the meantime, we select the dish in which we will form the candies, in my case it is a regular rectangular baking dish. Cover it with plastic cling film and grease it with a thin layer of refined vegetable oil.
After the candy mixture has cooled slightly, pour it into the prepared pan, level it with a metal kitchen spatula and leave at room temperature until completely cooled.

After some time, divide the plastic, unhardened iris into portions, drawing them with a knife in the form of triangles, squares, rectangles or cubes.

Wrap each soft candy in parchment paper or foil and place them in the refrigerator for 1 – 1.5 hours until completely frozen.

Step 4: Serve the toffees at home.


Toffees at home are served chilled. They are placed in dessert vases and served at the table with other equally delicious sweets. Such homemade sweets are much healthier and tastier than store-bought ones; you can take them on a long trip, on a picnic, for a walk, or give them to children at school. Enjoy!

Immediately add sour cream and all the granulated sugar into the bowl, put it on moderate heat, and continuously monitor the process. If desired, you can add a pinch of vanilla sugar.


Stir frequently with a wooden spoon, helping all the grains of sugar to dissolve. The components quickly combine and a smooth liquid appears in the ladle.


We tirelessly move the spoon in a circle, maintaining the same heat - after 3 minutes the mass acquires the consistency of liquid semolina porridge.


At the next stage, a thickness appears, similar to paste or condensed milk, the color remains still white.


After another 2-3 minutes, the volume is noticeably reduced, the liquid evaporates, thickens and a creamy tint appears.


Carefully scrape the clots from the walls, bring to a richer caramel color, add 25 g of butter and mix thoroughly one last time until smooth.


We quickly fill the mold, oiled from the inside (both spacious and miniature molds for candies are suitable, it is better if they are silicone) and level the surface. We act quickly, since the viscous caramel hardens quickly.


After 4-5 minutes, we press down the indentations, imitating the boundaries of the candies.


Let cool for about 20 minutes, break into pieces and our homemade toffee candies are ready!

How to make homemade candy

In a microwave oven (at medium power) or in a water bath, melt the finely chopped butter toffee. When using the microwave, be careful not to burn the toffee. It is advisable to turn on the oven every 20 seconds, constantly opening it and checking the condition of the candies.


Next, add butter, instant coffee and water to the melted toffee, mix, and boil in a water bath for 5-7 minutes.

  5. Then the delicacy will begin to take on a different color, thicken and become creamy, this indicates that the sweets will soon be ready. To get the deepest color of the toffee, you need to cook it longer. Of course, it will be more difficult to interfere, but you need to try to do it quickly.
  6. And after obtaining the desired shade of the candies, you can remove them from the stove. Then add the oil and mix it well with the main mass.
  7. The next step is to quickly pour the thick mass into molds or onto a flat surface. Molds or any other surface on which you are going to place a thick mass can be greased with oil for better hardening.

  9. Remove the candies from the molds and divide them into portions. The quantity of these products according to the recipe yields 260 grams of toffee.

Anyone who loves coffee, I think, will appreciate the toffees prepared according to this recipe. It won’t take much time to prepare them, and there shouldn’t be any difficulties. This recipe makes 22 toffees, depending on what size they are; if they are very large, then the number of candies will be less.

Ingredients for the recipe “Coffee toffee” (for 10 servings):

  • 30 grams – coconut flakes;
  • 10 grams of coffee beans;
  • 100 milliliters – Espresso coffee;
  • 100 grams – butter;
  • 150 grams – sugar;
  • 120 milliliters - cream;
  • 100 grams – hazelnuts;
  • 30 grams – lemon zest.

  • 200 milliliters - cream (not fat);
  • 200 grams – sugar;
  • 30 grams – butter;
  • 3 tablespoons – honey;

Pour butter, sugar, salt and honey into a saucepan. Next, transfer to the stove, stirring until completely dissolved. The mixture should boil, then reduce the heat and simmer until thick for 30 minutes. The mixture will stretch like a thread. Pour the hot mixture into greased molds.

Leave to cool and then put in the refrigerator overnight. Due to the not very good quality of the cream, the mixture may not harden well.
