How to cook noodle soup with cottage cheese in the oven. Lapshevnik with cottage cheese - a recipe from childhood. Description of the cooking process

Hello, my dear home cooking fans! Then my childhood memories somehow came flooding back to me. You know, when certain dishes evoke certain associations. I remembered how in kindergarten we were often given noodle soup. This is that delicious sweet pasta casserole. All the kids devoured this yummy treat on both cheeks. I decided to prepare a dish for my family – the whole family was delighted! My son loves the casserole for its unique delicate taste, and my husband and I also love it for the warm memories :)

For many years I thought that casserole came only sweet: with cottage cheese, raisins, pieces of fruit and milk sauce. And only recently I found out that there is also a meat option - very satisfying and relatively easy to prepare.

For cooking, you can use a variety of types of pasta, but most often it is made from noodles or regular thin pasta. And today I propose to plunge into childhood and get acquainted with two versions of noodle maker - sweet and meat. I am sure that none of the four recipes I have proposed will leave you indifferent.

How to cook noodle maker from pasta with egg and milk in the oven?

The honor of opening our selection today falls to the classic version of the casserole, which I myself like the most. The egg and milk filling makes the dish very tender and soft, similar to a creamy dessert. Here you can add yesterday’s pasta that was left over from dinner - this is how you get “waste-free production”.

For the recipe take:

  • 200 g vermicelli;
  • 200 ml whole milk;
  • 4 eggs;
  • 1 cup of sugar;
  • vanilla sugar (or essence) to taste;
  • brown sugar for sprinkling;
  • sunflower oil for the mold.

Step-by-step preparation:

1. Pour vermicelli into boiling water and let it boil.

2. In a separate container, combine raw eggs, white sugar and vanilla sugar. Beat with a mixer at medium speed until smooth.

3. Add milk and stir with a spoon.

For juiciness, you can use 35% cream instead of milk.

4. Place the boiled pasta in a colander.

5. Grease a baking dish with vegetable oil and place vermicelli on the bottom of the pan in an even layer.

6. Pour the egg-milk mixture over the noodles. Lightly mix the ingredients with a spoon so that the filling is evenly distributed throughout the entire thickness of the future noodle maker.

7. Sprinkle brown sugar on top. If you can’t find brown, you can replace it with regular white.

8. Preheat the oven to 180-190 °C and place the dish to bake.

In about 40-45 minutes the noodle maker will be ready. It should have a nice golden hue on top.

We love to eat this casserole for breakfast - it turns out very filling, tasty and moderately sweet. You can drink it with tea, milk or juice. How to spice up pasta casserole with eggs, I. The dish is good both hot and cold!

Technological map No. 5.

Cooking technology and quality requirements.

Never skimp on pasta. This does not mean that you need to buy the most expensive ones, no, just the cheapest ones will be made from baking flour or soft flour. All this is completely refined flour, in which there is practically nothing useful left. Most often, turmeric is added to such pasta for color.

Turn the pack over and read the composition - the correct and necessary pasta will be made from durum wheat flour and water. That's it, there's nothing else in the composition. The exception is colored pasta. It can be added for color, for example, the juice of spinach, dill, carrots, tomatoes, and so on - everything is only natural. At the same time, the taste of the pasta itself changes slightly, which gives it a certain zest.

They need to be boiled in a fairly large amount of water. I noticed that in the technological map, in the description, it is written that for 1 kilogram of pasta take 6 liters of water and 50 grams of salt. Therefore, we need about a liter of water and 8 grams of salt. I took about 1.2 liters and 6 grams of salt.

So, pour water into the pan, put it on the fire, bring to a boil, add salt (just before adding the pasta, it turned out to be about 1 teaspoon, without much of a slide) and add our noodles. Immediately close the lid and bring to a boil again, reduce the heat, mix well so that the pasta does not stick to the bottom and cook for 10 minutes until tender.

See the packaging for cooking time. Basically it's 10-12 minutes.

My cottage cheese is 9% fat.

Rub the cottage cheese through a sieve or, second option, beat until smooth in a blender. I mainly use the second option - a blender. You can put everything there at once - cottage cheese, a pinch of salt, sugar, egg and beat until completely homogeneous. This time I used a sieve.

Turn on the oven at 200 degrees and let it heat up.

Wash the egg under running water.

So, add salt, sugar and egg to the pureed cottage cheese. Mix everything well until smooth.

Place the cooked noodles in a colander.

Add noodles to the bowl with the curd mixture and stir. Our “dough” is ready for baking.

I took a silicone muffin tin, size 10/24, to the walls of which practically nothing sticks when baking. Therefore, there is no need for lubrication and sprinkling. Therefore, after I poured the “dough” into the mold, I simply smeared sour cream on top, sprinkled a little breadcrumbs and laid out pieces of butter.

Place the noodle maker in the oven for ten minutes until a golden brown crust forms on top. After baking, we take it out and let it sit for a little while, about three minutes, so to speak, to come to its senses. That's it, you can cut it off and apply it. It turns out really tender and tasty. But! As soon as it cools down, it immediately becomes denser, and when reheated it is not so tender.

Serve with jam, sour cream, fruit sauce. It can be delicious with apple sauce, which I talked about in detail. I served with sour cream and a light sprinkle of brown sugar on top.

Bon appetit everyone!

But for myself, I make the “adult” version, which was invented a long time ago, the most preferred and loved. Here, the fattier the cottage cheese, the tastier the dish. We sell cottage cheese with 22% fat content - most often I take it. Any pasta, I prefer horns, shells and the like, not very large, hollow in the middle.

All types of noodle makers were popular during the Soviet Union. It was prepared in workers' and school canteens, even in kindergartens. The classic curd noodle maker was cooked mainly in the oven. This is a kind of casserole.

Cooking in a slow cooker

Noodle soup in a slow cooker also turns out unusually tasty and tender. Often in such recipes they use not ordinary noodles, but spaghetti.

For cooking we will select the following products:

  • 200 g spaghetti;
  • 400 g of any cottage cheese;
  • 450 ml hot boiled water;
  • 1 egg;
  • 1 tbsp. l. vegetable oil;
  • 1 tbsp. l. breadcrumbs;
  • 2 tbsp. l. Sahara;
  • salt (to taste).

Step-by-step instruction:

  1. Among the programs offered in the multicooker, we choose “Spaghetti”. If there is none, “Pilaf” or “Stewing”.
  2. Pour 450 ml of boiling water and pasta into a container.
  3. Cook until the end of the program.
  4. While the spaghetti is cooking, you need to prepare the cottage cheese: rub until smooth through a sieve or mix using a blender.
  5. Add eggs, sugar and salt to the cottage cheese. Mix thoroughly and, when the pasta is cooked, combine it with the curd mass.
  6. Grease the bottom of the multi-pan container with butter and sprinkle with breadcrumbs.
  7. Place the prepared mixture into the slow cooker.
  8. Among the modes, select “Baking” and wait for the end of the program.

With added dried fruits

To prepare a nutritious meal you need to take:

  • 250 g pasta;
  • 250 g cottage cheese;
  • hard cheese (according to taste preferences);
  • butter;
  • dry fruits.

We do the following:

  1. Boil the pasta and let it cool slightly.
  2. The curd mass can be either ground using a sieve or left in the grains. Add cheese, cottage cheese and your favorite dry fruits to the cooked noodles.
  3. Transfer the resulting mass into a baking dish and place butter on top of the future casserole.
  4. Preheat the oven to 180 degrees.
  5. Bake until golden brown.

Lapshevnik with cottage cheese and sour cream

Excellent noodle makers are made if you add a little sour cream to the classic ingredients.

To prepare this version of the dish you will need:

  • 300 g prepared pasta;
  • 300 g cottage cheese;
  • 2 eggs;
  • 2 tbsp. l. Sahara;
  • 8-10 g vanilla sugar;
  • 2 tbsp. l. sour cream;
  • 1 tbsp. l. breadcrumbs or flour;
  • salt.

An ideal noodle maker is obtained if the mass of cottage cheese and pasta is approximately the same.

Step-by-step instruction:

  1. Boil the pasta until partially cooked, drain it in a colander and rinse with running cold water.
  2. Add plain and vanilla sugar, eggs, and salt to the pre-grated cottage cheese. Mix the resulting mass thoroughly.
  3. Add cottage cheese to pasta and mix well.
  4. Grease the baking pan with butter and generously sprinkle with breadcrumbs or wheat flour. If the mold is made of silicone, it is not necessary to lubricate it.
  5. To prepare “that same” casserole, you need to take:

  • 160 g pasta;
  • 250 g cottage cheese;
  • 1 egg;
  • 25 g sugar;
  • 12 g butter;
  • 12 g sour cream;
  • 1 tbsp. l. vegetable oil;
  • breadcrumbs;
  • salt.

Here's what you need to do:

  1. Cook the pasta until tender with the addition of a spoonful of olive or grape oil and salt.
  2. We rub the cottage cheese through a sieve and mix with sugar, salt and eggs.
  3. Pre-grease the baking pan with butter and sprinkle with breadcrumbs.
  4. Combine the mixture with pasta and place in the pan.
  5. Preheat the oven to 220 degrees and bake the noodle soup for 15 minutes until golden brown.
