The same UMKK has gone crazy. All sorts of SAVVs and Mikoyans are not so far from them, raising prices to the skies. Okay, Pyaterochka and other networks have become impudent in the other direction. They started selling outright rubbish for cheap.

First, a little theory from the field of stew cooking, which can help when choosing the most important food product for a tourist.

About GOST and TU

Stewed beef is produced exclusively in accordance with GOST 5284-84 and is of the highest and first grade. The recipe is the same, only the highest grade stew is made from category I meat, and the first grade stew is made from category II meat. Products manufactured according to specifications are canned meat and differ from real stew both in content and taste. However, this does not at all exclude its use in the tourist menu. In addition, the inscription on the label “GOST 5284-84” only speaks of the manufacturer’s competence, but does not in any way guarantee the quality of the internal contents. Therefore, it is better to buy a can of canned meat from a familiar manufacturer than a can of Gost stew from an unknown meat processing plant.

About packaging and labeling

As a rule, stewed meat is produced in two types of cans - a tall tin can with a net weight of 338 g and a flat aluminum or tin can with a net weight of 325 g. If a label is applied to a tall can using a lithographic method, this indicates that the company is making products for the Ministry of Defense (During storage stews in warehouses apply a special anti-corrosion grease to the jars (do not apply grease to a jar with a paper label). For a tourist, stew in an aluminum can is more convenient - it is lighter and, when empty, it melts wonderfully in the fire. Each can is mechanically or lithographically marked with information about the date of manufacture, product and manufacturer. For example, the bottom line of the Orsk stewed meat label “101BA12” reads like this: 1 - first shift, 01 - beef stew, B - highest grade (nothing is written for the first grade), A - the plant belongs to the meat industry, 12 - code of the Orsk meat processing plant. Products packaged and labeled differently should be selected with caution.

About the manufacturer

Stewed meat is produced everywhere, but a higher quality product can be expected from producers located in livestock-raising regions of Russia: Orenburg, Chelyabinsk regions, Bashkiria, Buryatia, Altai, etc. It is more profitable for them to use local meat or import it from Mongolia than to import kangaroo meat from Australia . The name of the meat processing plant should also be well known - it is difficult to expect quality products from small fly-by-night cooperatives.

Armed with this information, we take a large string bag and head to the nearest store. And there's a surprise! While UMKK products are widely represented everywhere, the choice of canned meat from other manufacturers is very small. Only the great and terrible Glavprodukt stretched its tentacles across the shelves of all stores, from METRO to the last general store. Since we don’t want to take known guano, we choose from different stores the crumbs that are on sale.
Thus, for comparison, all five types of canned beef from the Ufa Meat Canning Plant were selected, of which only one can is, in fact, stewed meat, and even then not the highest, but the first grade, and the rest are canned meat (they were out of competition ) and ten types of stew from third-party manufacturers.

Let's start the test. Laboratory accuracy in home testing is not guaranteed because it is very difficult, if not impossible, to separate the contents of the jars into their components for weighing. Therefore, the ratio “meat-fat-broth-offal” is given approximately. The organoleptic properties of the products were assessed subjectively, only by the author, due to the fact that it was decided not to assemble a commission for fear of subsequent collective poisoning. The meat block is pressed from 80% meat and 20% veins and films of medium grinding. The meat fibers are large. The taste of the meat is harmonious.

Inside the jar is some solid fat, jelly and a block of meat. The jelly is a little too salty. The meat block consists of 60% fine meat fibers and 30% finely chopped connective tissue. The meat is reddish, apparently a dye was used. The taste has a slight aftertaste, either vegetable protein or some kind of bone meal. Without an examination it is difficult to judge this. However, the taste is very slight; it will not be noticeable in any finished dish.
Rating - Good.

3. Beef “Bogatyrskaya”

The characteristics are almost identical to Stolichnaya beef, but the taste of the meat and jelly is more delicate. I would like to highlight canned meat with finely chopped veins and intestines - unlike natural stew, even very impressionable people can eat them.

The fat inside the jar is soft and it is quite difficult to separate it from the block of meat and walls. Jelly and meat form one lump. Ingredients: fine meat fibers - 20%, finely chopped connective tissue - 50%, jelly - 20%. The taste of jelly and meat is unsaturated and bland. I would not recommend consuming such a product in its pure form, without cooking.

In appearance it is very similar to “Homemade” meat, only inside the block of meat there is not jelly, but fat. It should be noted that these are the cheapest UMKK canned meats, but they still contain natural meat! Maybe a little, but it is there.

In times of various crises and beyond, people rush to stock up on food. And what could be more satisfying and tastier than a good stew? Stew made in accordance with all GOST requirements can be stored for five years in a tin can and up to three years in a glass can. However, a completely reasonable question arises: “Is it possible to find stewed meat made according to GOST on the shelves of modern supermarkets?” Yes, it's quite possible. Oddly enough, there are still conscientious producers of stewed meat. This article will tell you how to choose stew according to GOST.

So, what should you pay attention to when purchasing:

The first is the product name

If the stew is made according to GOST, it is called “stewed pork” or “stewed beef”. The rest of the names are just attempts to pass off something unknown as stew. By the way, it is worth noting that even the word “stew” on the product packaging also gives reason to doubt its quality.

The larger the meat processing plant that produces stewed meat, the less profitable it is for it to sacrifice its reputation. Little-known manufacturers are another matter. Of course, there are exceptions to the rules. Also, if a meat processing plant is located in an area where livestock farming is traditionally developed, then it is simply not profitable for it to replace cheap meat with surrogates at the same price. Moreover, sometimes stew made from meat turns out to be more profitable.

Areas with developed livestock farming include: the Republic of Buryatia, the Orenburg region and some other regions.

Third - label

The label on a stew can tell a lot. On a normal product it is glued along the entire length. But dubious manufacturers prefer to save on everything, including glue, adding a couple of drops of it to the edges of the label. In some cases, instead of a paper label, tin printing is used. This is a rather complex technology, left only at large enterprises, so this stew can be trusted (of course, subject to other conditions).

If the stew is made according to GOST, it is called “stewed pork” or “stewed beef”. The remaining names are attempts to pass off something unknown as stew.

Fourth - according to GOST or TU

In general, in theory, products manufactured according to specifications may be no worse than GOST. Unfortunately, in practice this is practically not observed. In addition, the GOST requirements are available to any consumer on the Internet, but the terms of the technical specifications are a sealed secret, sometimes a very terrible secret.

Fifth - packaging of stewed meat

It is better to give preference to products in a tin can rather than in a glass one. At least for safety reasons during storage and transportation. In this case, the can should not be dented, much less swollen or have traces of rust. All this indicates non-compliance with storage conditions. And if a dent is nothing, then rust has every chance of penetrating into the meat.

By the way, the presence of bulging cans on store shelves is a reason to contact Rospotrebnadzor. After all, such a product is clearly spoiled, which means it should not be on sale.

Real stew: what is it like?

Real “Premium Grade Stewed Beef”, as well as “First Grade Stewed Beef” contain pieces of meat, approximately 30 grams each, and all this is in the broth. If you touch the pieces with a fork, they easily separate from each other. If there is something monolithic in the jar, then the manufacturing technology is clearly broken, according to which all the ingredients are added to the jar separately, and not as a whole. This may not affect the taste of the product.

Many are sure that real stewed meat is Belarusian stewed meat!

When heating the stew, the color of the broth should be from slightly yellowish to light brown. The presence of suspended protein substances in the form of flakes, as well as slight turbidity of the broth, is allowed. But the most important thing is that when cooling, the stew broth should not turn into jelly. If this happens, then the conclusion is simple - an unscrupulous manufacturer added thickeners, and this is no longer in accordance with GOST.

But at the same time, its quality and price have changed. A standard can of stewed meat of 340 grams (I mean only GOST 5284-84, the highest grade) now costs from 50 to 200 rubles. The difference is significant. GOST these days has ceased to be a guarantor of quality. As a result, per capita sales of canned meat continue to decline. People, having tried low-quality canned food once, do not want to be burned again.
I offer a short overview of the types of beef stew that are sold in our region.
My initial knowledge about this product, at the initial level and when selecting canned food, I was guided by the following:
A. Store markup.
- I buy it at a minimal markup in chain supermarkets or wholesale markets.
b. In addition to the store's markup, the price of stew depends on the percentage of meat at the time of packing. In Russia, according to GOST, meat at laying is 57.5%, and for Belarusians, according to GOST, meat at laying is 97.5%. Ingredients: beef, fat, onion, salt, black pepper, bay leaf.
- I try to match.
V. Be sure to use an iron can, standard, approximately 340 grams. Only the highest grade.
- I try to match.
d. No products from Glavproduct, no matter what is written on the can of this manufacturer.
- My personal opinion: I have never bought anything worthwhile from this manufacturer, including canned vegetables and fish.

The contents fell out in one big piece. An unknown substance. There is no meat fiber at all. The smell is strange. I didn't eat.

No more experiments with unknown manufacturers!

There is a tempting inscription on the can: “EXTRA 100% MEAT. From selected premium meat.” After I opened the jar, it became clear that the manufacturer, in this case, meant that all the premium meat was taken away, and a stew was cooked from the leftovers. There is a lot of so-called broth in the stew, but there is very little meat, and even fat. The smell of stewed meat is present.

Shelf life: no more than 3 years.

The jar of this manufacturer also contains an interesting inscription: does not contain GMOs. There was no piece of meat in this jar at all. Meat fibers are present, but they seem to be all mixed with fat. The taste is pleasant. There is a smell of stew. The price corresponds to the quality.

There is a lot of meat, but some of it is very small. The taste and smell of stew is present. The price corresponds to the quality.

Good stew. But, to be honest, I expected more from a product that contains 97.5% meat.

Consistent quality. Excellent taste, just like in childhood. The company still works for Russian granaries.

Just meat and that's it. They are not allowed to have discrepancies! If it says GOST highest grade, then this is it! Contains only meat and spices. Leader in quality and price.
But for this money you can buy almost two cans of Orsk stew :)

When choosing stew, it is worth remembering that high-quality canned food will not cost less than its ingredients. That is, a good stew cannot be too cheap.
When purchasing, you should also pay attention to the manufacturer. These should be large meat processing plants (from among the former state ones); as a rule, they are preferable to small companies such as Processed Cows LLC. While their product may not always be what you want, they at least make the contents of the can more consistent and more often than not what it says on the label.
The label is also of great importance. Printing on tin is a rather complex technology, available, as a rule, only in old state-owned meat processing plants. This to some extent guarantees against obvious counterfeiting and forgery, which can be practiced by small fly-by-night companies. Well, if the label is paper, it should be rolled with glue along its entire length.
The place of manufacture is also an important factor. For factories located in peripheral regions of Russia with developed livestock farming (Orenburg region, Buryatia), it is often cheaper to put real meat in cans than to carry out petty scams with soybeans. The same applies to factories in some CIS countries (Belarus, Kazakhstan).

This time we decided to test the stew. Many of us remembered the stew according to GOST of the USSR, and assured the youth that in those days the stew was like stew, not like now. Looking ahead a little, let's say that none of the tested cans of stew even came close in taste to the one from childhood.

The meat is fibrous, almost no veins. The only can that had to be opened with a knife. But experts gave it only 1.75 points for appearance and 2 points for taste.
