The peculiarity of this particular recipe is the addition of sour cream, it is what binds all the ingredients together and makes the meat with pumpkin so tasty. My husband, despite his dislike for pumpkin, devoured this dish with great pleasure and constantly praised it.

Preparation:

Let's start cooking by preparing the ingredients. Peel the onions and carrots. Grate the carrots and cut the onion into cubes.

Wash the pumpkin, peel and cut into large cubes. You can use frozen pumpkin.

Peel the potatoes too and cut them into cubes. Rinse the sliced ​​potatoes under cold running water to remove excess starch.

Rinse the meat, dry and cut into cubes. For cooking, use meat that has been removed from the refrigerator in advance, so it will cook more evenly and be juicier.

The products are prepared, you can proceed directly to preparing the dish. Heat a little odorless vegetable oil in a frying pan and fry the onions and carrots in it for 10 minutes. The vegetables should be slightly browned.

Increase the heat to maximum and add the meat to the fried vegetables. Fry the meat while stirring for 5 minutes, then add a glass of hot boiled water to the pan, cover the pan with a lid and simmer the meat. I used beef and simmered it for 40 minutes before adding the rest of the ingredients. If you use veal or pork, the cooking time needs to be reduced. If the water boils away quickly, add a little more.

Then add the pumpkin and potatoes to the pan and simmer the stew for another 20 minutes. The total cooking time for the meat in my case was 1 hour, vary this time depending on the type and quality of the meat.

5 minutes before the end of cooking, add sour cream to the pan. To prevent sour cream from curdling, first mix it with 3-4 tbsp. spoons of hot boiled water.

Add salt, pepper, mix everything carefully and at the very end of cooking add finely chopped fresh herbs.

Mix everything again and remove from heat.
