  1. Heat the milk in a small saucepan until it begins to boil, then remove from the heat and cool to 45°C. Mix in the yeast and let sit until foamy, about 10 minutes.
  2. Pour the yeast mixture into the bowl of a stand mixer fitted with a dough hook. Add sugar, butter and 2 eggs and mix until smooth.

    Add flour and salt and mix on medium speed until dough comes together. Switch to medium-high speed and knead until dough is smooth and elastic, about 8 minutes.

    Transfer the dough to a lightly greased large bowl, cover with plastic wrap and let rest until the dough has doubled in size, about 1 hour.



  3. Preheat the oven to 180°C and line a baking sheet with parchment.
  4. Turn the dough out onto a lightly floured work surface. Take 1 piece of dough the size of a golf ball and roll it into a ball, this will be the pom pom for Santa's hat. Take 1 piece of dough the size of a ping pong ball and roll it into a ball - Santa's nose. Cut a strip of dough 2.5 centimeters wide, 23 centimeters long, just over 0.5 centimeters thick and roll it into a sausage, this will be the border of the hat.

    Cut another piece of dough into a strip 5 centimeters wide, 12 centimeters long, and just over 0.5 centimeters thick. Make cuts on the strip from the middle and stretch it slightly with an accordion to form a mustache.

  5. Roll out the remaining dough into an elongated diamond, the top edge of the diamond being twice as wide as the bottom edge. Place the diamond on the prepared baking sheet with the long side facing up so that the edge hangs over.

    Using scissors or a knife, make cuts just over a centimeter wide on the wide side of the diamond, stopping at an imaginary line where the top and bottom triangles meet. Take each beard strip and twist it, placing the braids in rows to make them look like a beard.


  6. Fold the overhanging corner of the dough so that it resembles the tip of Santa's hat. Place a long sausage of dough in the top half of the triangle where the end of the cap begins, and tuck the ends of the sausage under the sides of the triangle; it turned out to be the border of Frost's hat.

    Place a large ball of dough on the tip of the hat and press the pom pom lightly. Place the mustache on the top of the beard, then place a small ball over the mustache to create Santa's nose.

How to make a Santa Claus pie with your own hands

This pie is made from yeast dough. So it's quite simple, but keep in mind that you will need extra time for the dough to rise. Therefore, it is better to start preparing this baking not on the evening of December 31, but a little earlier. First, for an ideal yeast dough, stir dry yeast and 2 tsp in a bowl. Sahara.


Add a little warm milk (no more than 50 ml) to the dry mixture, mix and place in a warm place. A freshly extinguished burner on a gas stove is perfect for this: the yeast will quickly “work” in the warmth, and the dough will rise in a neat cap.


While the dough is rising, take a large bowl and crack one egg into it (save the second one for brushing the pie). Stir the egg with a fork to obtain an almost homogeneous consistency, and add vegetable oil to it.

Open the bowl slightly after an hour and check if the dough has increased. If the mass is already twice as large as it was, then you can start creating the face of Grandfather Frost!


Line a baking sheet with parchment. Remember when you added vegetable oil to the dough? Thanks to this, the dough will not stick to the parchment, so there is no point in greasing it again. Knead the risen dough again with your hands and divide it into two parts: use the larger one immediately, and leave the smaller one for decoration. Roll out most of the dough with a rolling pin to a thickness of 1 cm. Give this mass the shape of an elongated pear with a pointed top. Place the dough on parchment.


This dough “pear” is the future face of Santa Claus along with his hat. Fold the top edge of the dough down and move it slightly to one side: this will be a cap. From the smaller part of the dough that is waiting in the bowl, tear off a small piece, roll it into a ball and stick it to the tip of the cap to make a bamboshek.


Tear off another piece of dough, larger this time. Roll it into a thin sausage and place it horizontally under the cap. With these menacing eyebrows, grandfather will turn out to be slightly gloomy, but also funny. Just below, place two raisins or two dried cranberries - these will be the eyes. Well, under them stick another ball of dough - a nose.


Divide the remaining dough into two parts again: large and small. Roll out the larger one into a horizontal rectangle and cut its bottom into strips 1 cm wide (this is a beard blank, and at this stage it will look like an ad with tear-off phone numbers). Place the future beard at the bottom of Santa Claus's face, and twist the thin strips of dough to look like a curly beard. Make a mustache from another piece of dough and place it under your grandfather’s round nose.


Turn on the oven and set the temperature to 180 degrees. While the oven is preheating, crack the second egg, stir it with a fork, and then whisk the mixture onto Santa. You need to cover everything except grandpa's eyes with the egg: thanks to this, the pie will turn out ruddy and very appetizing in appearance.


Place the sheet with the future pie in the heated oven and bake for 20-30 minutes.

Add flour to your mixture and knead the dough. It is important to know that you may need not as much flour as indicated in the recipe, but more or, conversely, less.




When kneading, be guided by your own feelings. The dough should be soft and pleasant, but not dense and heavy.






Cover the dough with some cloth and leave to rise for 1-1.5 hours. You can place the bowl near a radiator or other soft heat source.




Divide the dough into parts, from which in the future you will make the base of the head, beard, nose and pompom for the hat.
Roll out the “head” of Santa Claus, which should visually resemble a pear. It’s better to do this directly on parchment, so it will be more convenient for you to transfer the New Year’s cake to a baking sheet.
