Apple charlotte is the most tender and airy pie made from sponge dough. It is complemented in the classic version by apples. Pumpkin will also come in handy. It makes the dessert healthier and more flavorful.

Ingredients for the dough:

  • Flour - 120-160 g (about 1.5 cups)
  • Eggs - 3 pcs.
  • Sugar - 160 g
  • Salt - 1/4 teaspoon
  • Baking powder - 1 teaspoon

  • Pumpkin – 300 g
  • Apples - 2 pcs.
  • Butter - 50 g

How to cook delicious charlotte with apples in the oven

1. Peel the ripe pumpkin, wash it well, and wipe dry. Cut into small cubes 1-2 cm thick.

2. Heat a frying pan with butter and place the pumpkin in it. Stirring constantly, fry the pumpkin over medium heat for 3-4 minutes until golden brown. Then simmer for 2 minutes with the lid closed. The pumpkin will become moderately soft, but will not lose its shape. Let it cool.

3. We begin to prepare the dough for the pie. Break the eggs into a deep container. Add sugar and a pinch of salt to them. Salt to make the mixture whip better. Beat with a mixer at high speed until the mass increases 3 times. Approximately 3-4 minutes in time.

4. Add half a glass of flour sifted through a sieve to the egg mass. Beat with a mixer for 1 minute. Then add the second part of the flour with baking powder and mix thoroughly again.

The dough should be runny, with the consistency of thick sour cream. If necessary, reduce the amount of flour, it all depends on its characteristics. It is better to use premium flour. It makes any baked goods more tender. If the dough is very thick, the charlotte with apples and pumpkin will not rise as well and will not be as light and airy.

5. Wash the apples and cut them into small cubes just like the pumpkin. If the peel is not thick, you can leave it on. The apples will bake well in the dough; there is no need to bake them additionally.

6. Add pumpkin and apples to the finished dough. Mix well.

7. Preheat the oven to 180 degrees. We will bake in a detachable metal pan with a diameter of 18 cm. Grease the pan with butter along the entire perimeter and along the edges. You can line it with baking parchment if the container burns.

It is convenient to use a silicone baking pan. There is no need to lubricate it with fats.

8. Pour the dough with the filling into the mold and bake for 40-50 minutes.

9. Take the pie out of the oven and check for doneness. We make a hole in the pie with a long wooden skewer. If it remains dry, the baked goods are ready. If it’s wet, it means you need to bake the charlotte until it’s completely cooked.

10. Remove the pie from the oven and leave it on the table to cool. Then carefully open the mold and take out the charlotte. Or we turn the mold over onto a plate or board, bending the edges of the silicone mold.

You can decorate the pie however you like! For example, grated chocolate and crushed walnuts. It will be no less tasty if you sprinkle the charlotte with pumpkin and apples with cinnamon and sugar. Cinnamon can be added to the dough.This spice goes well with the taste of apples and pumpkin.
