A recipe for delicious homemade baking - shortbread pie with cheese and onion filling. The snack pie according to this recipe turns out to be very aromatic, with a crispy golden brown crust.

My favorite onion pie. No one ever guessed that the filling here was only onions and cheese. Everyone always says that it is a pie with mushrooms. The pie is very tasty and sooooo filling!!!


For the test:
Butter or margarine - 200 g
Flour - 300 g
Sour cream 20% - 6 tbsp. spoons
Soda - 1 teaspoon
Vinegar 9% - how much will it take?

For filling:
Processed cheese - 4 pcs.
Medium onion - 6 pcs.
Salt - to taste
Ground black pepper
Chopped greens
Eggs - 4 pcs.


Pour flour into a large deep container. We take the butter or margarine out of the freezer and periodically roll it in flour and grate it on a coarse grater. Add salt, then rub the butter and flour with your hands into a homogeneous crumb.

Make a well in the flour, pour in sour cream and soda slaked with vinegar. Mix.

Using your hands, simply gather the dough into a ball, but do not knead. Wrap in cling film and refrigerate for at least 2 hours, preferably overnight.


Cut the onion into thin half rings and pour into a heated frying pan with vegetable oil. Simmer over low heat until soft.

Beat eggs with salt (0.25-0.5 tsp) with a fork.

Add chopped frozen, dry or fresh herbs.

When the onion becomes soft, salt it (0.5-1 tsp) and pepper. Cook for another 3-5 minutes.

Mix hot onion with cheese, grated on a coarse grater. Taste and adjust to taste if necessary.

Then combine the cooled cheese and onion mixture with the eggs. The onion filling for the pie is ready.

We take the dough out of the refrigerator, visually divide it into 3 parts and cut off one piece. Roll out a large lump (2/3 of the dough) on a floured surface into a thin layer (0.3 mm). Grease a mold with a diameter of 26.5 cm with oil, transfer the dough there and level it, forming sides.

Pour the filling into the mold.

Roll out the remaining dough and cover the filling.

We secure the edges and remove the protruding parts of the dough.


Place the onion pie in a hot oven. Bake at a temperature of 160-170 degrees for 25-30 minutes (check readiness with a toothpick - it should be dry). 4-5 minutes before readiness, brush the onion pie with cheese with beaten egg.

Remove the shortbread pie with onions from the oven and leave to cool.

Onion pie with processed cheese- one of the most delicious onion varieties that I have encountered before. I used to make onion pie using a slightly different recipe. No eggs were used in the filling, the cheese was rubbed directly onto the stewed onions with sour cream, and the dough was not shortbread, but yeast dough. I liked the version of French onion pie that I want to present to you today much more.

Filling ingredients:

  • Onions - 500 gr., or about 6 pcs.,
  • Processed cheese - 4 pcs.,
  • Salt - to taste
  • Chicken eggs - 4 pcs.,
  • Sunflower oil for greasing the mold,
  • Spices - to taste
  • Young dill - 10 gr.,
  • You will also need one egg to brush the finished pie.

Onion pie with processed cheese - recipe

Cooking onion pie begins with preparing shortcrust pastry. Sift wheat flour into a deep bowl.

Immediately grate the butter into the flour using a large (medium) grater.

Mix butter and flour into crumbs.

Add sour cream. I would like to note right away that in some recipes sour cream is not used, and in order to make the dough not dry, but fattier and crumbly, more butter is used.

Using a fork or spatula, stir the onion pie batter again.

Add the required amount of salt.

Quench the soda with vinegar and pour into the dough.

Mix the finished shortbread dough with butter and sour cream for onion thoroughly with your hands until it has a homogeneous consistency.

It is recommended to cool the bowl of dough in a cold place. Cover it with cling film and place it in the refrigerator for about 30 minutes. Meanwhile, prepare the onion filling. Peel the onions and quarter them into rings - this is the classic form of chopping onions, but you can chop them finer.

Grate the processed cheese on a coarse grater.

Fry the onion in vegetable oil for 10-15 minutes until soft and light golden brown.

Place it in a deep bowl and let cool to room temperature.

Beat the eggs with a fork (whisk).

Add grated onions to the already cooled onions.


Stir.

Pour in the beaten egg mixture.

Grease the mold (in my case it’s a round glass mold) with a small amount of vegetable oil. Use a rolling pin to place the rolled out dough into the mold, forming sides.

Pour the onion filling onto the top of the dough.

Roll out the remaining shortbread dough with a rolling pin. Cover the pie with it. Pinch the edges tightly.

Using a pastry brush, brush the top of the pie with beaten egg.

Bake the onion pie in the oven at 180C for 30-35 minutes.

The top of the finished pie should be covered with a golden brown crust, the filling should become somewhat thicker than it was raw, and the bottom layer of the onion pie should be completely baked. Under no circumstances should the dough be raw.

  2. Meanwhile, the filling is being prepared. Onions (3 pcs.) are cut into half rings and fried in vegetable oil until tender, then removed from the heat until completely cooled.
  3. Processed cheese (200 g) is grated and mixed with eggs (3 pcs.). Add cooled onion, salt and pepper to your taste.
  4. The chilled dough is rolled out and placed in a mold. It needs to be evenly distributed over the bottom and walls of the mold. The filling is laid out on top.

Peel the onions and cut into small cubes. Heat a frying pan with vegetable oil in it. Fry the onion pieces until pale golden brown and place in a deep plate. Wait until the onions have cooled to room temperature before continuing to cook.

Step 6: bake the snack pie.



Preheat oven to 200 degrees Celsius and place the formed pie in it. This dish needs to be baked for 30 minutes. The finished snack pie will be covered with a golden brown crust. Take it out after the specified time and leave it to cool to room temperature, and then start serving it.
