How to properly cook a pie with potatoes and minced meat

The advantages of this dish are that it requires a minimum of ingredients for preparation, and even if you want to add spices or fresh herbs, they will go perfectly with the meat filling. And to knead the dough and prepare the filling for the pie, it is not at all necessary to go to the store - the products can be found in almost every home.

Well, the result will be a hearty and very tasty homemade cake, prepared in almost a matter of minutes, and if you want to pamper your family members, prepare such a pie.

About the dough for a pie with potatoes and minced meat

It's no secret that the success of home baking depends, first of all, on delicious dough. The base can be anything - unleavened and rich, yeast dough, or you can make shortbread dough, or roll out ready-made puff pastry bought in a store. The choice depends on the preferences of the hostess and her availability of free time.

About the filling for meat and potato pie

You can diversify the potato filling not only with minced meat, but also with other products and spices. Mushrooms (fresh or canned champignons), hard cheese, sun-dried tomatoes, fried root vegetables (onions, garlic and fresh carrots), fresh and dry herbs, seasonings and spices are very suitable for this.

Minced meat can also be anything from chicken, beef or pork. Already boiled meat or thermally processed offal is good for these purposes. You can also use fish, both fresh and canned.

So making a pie with potatoes and minced meat is not at all difficult; just check the contents of the refrigerator and select the main ingredients for the filling.

As for potatoes, you can use them raw or pre-boil them to make the pie. Some quick recipes suggest using ready-made mashed potatoes, which you can cook and cool, or use leftovers from lunches and dinners.

Onions are also added to the filling; you can chop them very finely and add them raw, or fry the onions in a small amount of vegetable oil.

There are two ways to shape a pie before baking - make a closed pie so that the filling inside is steamed (ideal if the meat filling and potatoes are used raw), or make an open pie, and to make the baked goods juicy, consider a creamy filling, for example made from eggs, milk or cream, with the addition of grated cheese.

Easy to prepare mince and potato pie

Delicious and appetizing homemade cakes, which are perfect for family tea, lunch or dinner. The recipe is distinguished by its ease of preparation; the potatoes are used in the form of an airy puree, which is why the pie will come out tender and juicy.

Required Ingredients

  • 2 tbsp. spoons of good tomato paste;
  • 250 ml. fat sour cream;
  • 2 onions;
  • 3 cloves of garlic;
  • 3 - 4 eggs depending on size;
  • 50 - 60 gr. butter;
  • 75 gr. any hard cheese;
  • 250 gr. wheat flour;
  • 500 gr. homemade minced meat;
  • 1 fresh tomato;
  • A little salt and black pepper;
  • 4 - 5 sprigs of fresh herbs;
  • 200 gr. potatoes.

Preparation

Peel the potatoes and boil in salted water until tender. Make puree using a masher or grate the tubers using a fork and cool well. When chopping, it is recommended to add a little butter.

As soon as the puree has cooled, pour wheat flour into it and add 2 beaten chicken eggs. Check the amount of salt, remove the dough and roll it out into a greased pan. Place the pan with the potato dough in the refrigerator and, while it cools, start preparing the filling.

Peel the onion and garlic, finely chop and fry in a hot frying pan with the addition of a small amount of oil until rosy and golden brown.

Add the minced meat to the fried onion, level it over the surface of the frying pan and fry until tender, stirring continuously so that no large pieces remain. As soon as the minced meat is ready, it must be salted and seasoned with spices, and add tomato paste. Fry a little more, at this stage you can add fresh or dried herbs to the meat filling.

Remove the form with the dough from the refrigerator, lay out the meat filling (it should not be hot) and smooth it out. Cut fresh tomatoes into rings (if large, then into half rings) and place on top of the meat.

Mix the remaining 2 eggs with sour cream, salt and spices and pour this mixture over the pie. Grate the hard cheese on a coarse grater or cut into thin slices and distribute over the surface of the pie.

Bake in an oven preheated to 180 C for approximately 20 - 25 minutes, until a golden-crisp crust appears on the surface. Since all the ingredients are almost ready, you won’t have to wait long for them to be ready. This pie is very good served for dinner along with a vegetable salad.

Closed yeast pie with potatoes and minced meat

Another recipe for a great meat pie with potatoes, made with yeast dough. You can buy ready-made dough or knead it yourself from simple ingredients. For minced meat, you can use any type of meat (only minced meat prepared at home is recommended, since the composition of a purchased product may be of poor quality).

To prepare you will need

  • 2 cups wheat flour;
  • 2 - 3 eggs;
  • 250 ml. fresh milk;
  • 50 gr. quality margarine;
  • 35 gr. granulated sugar (brown is recommended);
  • 0.5 teaspoons of salt;
  • A packet of yeast;
  • 75 ml. vegetable oil;
  • 650 gr. homemade minced meat;
  • Three large potato tubers;
  • 2 onions;
  • A large bunch of parsley;
  • 10 black peppercorns;
  • Fresh or canned mushrooms - optional.

Cooking the pie

To prepare a yeast pie with minced meat, heat the milk in a small saucepan, pour it into a large container (so that the dough, which will increase in volume, can fit in it) and add granulated sugar. Stir, wait for dissolution and add yeast. You need to wait a little. Then add a couple of tablespoons of flour to the resulting mixture.

We wait 10 - 15 minutes until a dense, holey “cap” appears on the surface, which indicates that the yeast has begun to work.

Now you need to add soft margarine, 2 eggs and the remaining flour to the future dough, season it with a little salt. Knead the elastic dough and, covering, leave for a couple of hours. During this time, it will need to be kneaded and kneaded a couple of times.

Prepare the filling - you will need two frying pans. Wash and peel the potato tubers, cut into small cubes and rinse in running water. Chop the onion and fry half in oil until golden brown. Add the potatoes to the onion and brown them over high heat until crispy.

In another frying pan, fry the remaining onion with minced meat, season it with chopped black pepper and salt, add spices and fresh herbs. Mix all the fried ingredients for the filling in one bowl.

Roll out the dough, place the filling in the center, and carefully pinch the edges. Place baking paper on a baking sheet, grease it with oil and place the yeast pie with minced meat and potatoes, seam side down. Gently press down on top to give the cake an even shape. Beat the chicken yolk with a drop of milk or water and brush the top of the pie so that it has a golden crust when baked.

Bake the yeast meat and potato pie in the preheated oven for 40 to 45 minutes until the potatoes are tender. Sour cream with garlic and herbs, or a salad of fresh vegetables are ideal as a sauce.

General tips for making potato and mince pie

To get a golden and crispy crust on the surface of the pie, you can grease it not only with egg, but also with butter or vegetable oil, or use full-fat sour cream.

In order not to be mistaken with the degree of cooking of raw potatoes inside the pie, before cooking it is recommended to minimally process it in any thermal way - boil or fry.

The more onions in the pie filling, the juicier it will be. It is recommended to use two methods - adding both onion fried in oil and raw.

We have already made pies with mushrooms and meat. But there are also more unusual recipes. At least, I personally came up with and prepared such a pie. You can find minced chicken on sale. It is, of course, inferior in taste to beef, but the price is noticeably less. So, the other day I bought it and decided to take a risky step - make a pie with minced chicken. The end result was a fairly satisfying dish, although to be honest, it was intended for an amateur. Please note that the minced meat crumbles, so be careful when eating and have a spoon. The dish is made based on the assumption that the family will eat it in one sitting.

  • Cooking dough - 1 kilogram
  • Flour - 1-2 tablespoons
  • Minced chicken - 400 grams
  • Onion - 1 piece
  • Potatoes - 600 grams
  • Vegetable oil - 6-8 tablespoons
  • Water - for extinguishing
  • Seasonings - for taste
  • Salt - for taste

Method for preparing pie with potatoes and minced chicken:

  • Place a saucepan on the stove, turn on the heat and add oil.
  • Carefully pour in the minced meat and cover with a lid. Add salt, pepper, water during the stewing process. Bring to a state of semi-preparedness.
  • Potatoes in the shell

  • Wash and peel the potatoes. Cut the potatoes into medium-sized cubes.

  • Cutting potatoes

  • Peel and cut the onion into half rings. Onions can be lightly marinated in lemon juice.
  • Divide the fresh dough into 2 equal parts. Sprinkle flour on the free surface of the table.

  • Roll out the dough

  • We take the first part and begin to roll out the dough to the size of a baking sheet using a regular rolling pin.

  • Place the dough on a baking sheet

  • Place the finished bottom of the pie on a baking sheet, having previously greased it with oil.
  • Place potatoes on a layer of dough. Salt and pepper.

  • Potatoes on dough

  • Temperature control knob
  • Bake at 200 degrees Celsius until done, 30-35 minutes.

  • Pie in the oven

  • We take out the pie and cover it with plastic wrap, and then tear it with a thick towel.

  • Cutting a piece of the pie

  • We keep the cake in this state for about half an hour, and then cut it into pieces.

  • Piece of finished pie

    My pie turned out a little dry, so I advise you not to skimp on the gravy and herbs that you can add to the pie filling. I’ll say it again that the pie filling turned out to be extremely crumbly, so it could be tied together with something, for example, grated cheese. Don't forget the seasonings.

    If there are a few pieces left from the pie dough, I always use them - fry the flatbreads on kefir.

    Recommended dish: from PowerСooks.ru

    Ingredients:

    • Dough: 500-700g flour, 500ml kefir, 250g margarine, 1 teaspoon each. spoon of salt and soda.
    • Filling: five to six potatoes, three onions, 700g of any meat, salt, pepper.

    Pour two or three glasses of flour and salt into a bowl and mix. Grate a pack of cold margarine (250g) directly into the flour. Gradually mix small portions of grated margarine with flour so that it does not have time to combine into a lump. After mixing all the margarine with flour, pour half a liter of kefir into a bowl, add 1 tsp. spoon of soda and mix everything thoroughly. Stir in flour until a soft dough is obtained. You can prepare the pie right away, but if the filling is not ready yet, it is better to keep the dough in the refrigerator.

    For the filling, finely chop five to six medium potatoes; You can add a little oil: vegetable or melted butter. Leave about a third of the dough, and roll out the rest and place it on a baking sheet or frying pan, making sides so that the juice does not leak out of the pie. We place salted potatoes on the dough, on it a layer of finely chopped meat mixed with finely chopped onions, salt and pepper to taste. You can grind the onion and meat in a meat grinder, then put the minced meat, already salted to taste, on the potatoes. The leaner the meat used for the pie, the more fat it is better to add to the potatoes to make them juicy. For fatty meats there is no need for potato oil. The meat can be anything; it turns out very tasty when using chicken fillet.

    Cover the pie with thinly rolled out remaining dough and carefully join the edges. Bake until done at medium oven heat for 40-60 minutes. After about half an hour, you need to make a small hole in the center of the pie to remove excess steam; through it it is convenient to determine readiness by tasting the potatoes with a small spoon.

    You can add carrots, fresh cabbage, fried mushrooms to the pie - there is plenty of room for the housewife's imagination.

    The pie turns out very tasty, satisfying and, importantly, cooks very quickly.

    We combine in one product a delicate base with the taste of potatoes and a hearty meat filling with juicy tomatoes and melted cheese - we prepare a potato pie with minced meat in the oven. A mixture of sweetish vegetables and a small amount of ground paprika “play” an important role here, giving savory baked goods a special appeal.

    You can use ground beef, turkey, or chicken for this recipe. The universal filling goes perfectly with potato dough, and the pie itself turns out appetizing, presentable and tasty.

    Pie with minced meat and potatoes in the oven recipe

    Today we will prepare a pie that has a special taste. Among savory pies, this is one of my family's favorites. So, I hope you will like it too. At the same time, we can compare this dish with the already familiar potato casserole with minced meat, the recipe for which can be seen here. since both of them contain a similar set of products for cooking.

    Ingredients for minced meat and potato pie:

    400 g minced beef

    four potatoes (medium size)

    50 g vegetable oil

    wheat flour (for forming the cake)

    butter (50 g)

    salt (one level teaspoon)

    ground black pepper (one third of a teaspoon)

    Preparing minced meat and potato pie:

    The pie dough can be prepared according to the recipe, the link to which is in the ingredients above, or you can purchase it ready-made. Knead on a cutting board or table and let rest for a while.

    Peel and peel potatoes and onions.

    The dough should be divided into two parts, two thirds and one third. Roll out most of it and place it on a baking sheet greased with vegetable oil (I use sunflower oil with the addition of olive oil). Put the smaller one aside for now.

    The minced meat needs to be transferred to a bowl.

    Chop the onion (preferably smaller).

    Add onion to the minced meat.

    Pepper, salt and mix.

    Cut the potatoes as shown above.

    Place the potatoes on the rolled out sheet of dough and add a little salt.

    Place a few pieces of butter on the potatoes (this will give the pie a special taste and extra juiciness).

    Place minced meat on top of the potatoes in an even layer.

    Roll out the remaining dough and cover the pie with it. Seal the edges so that they do not fall apart during baking, and make small cuts on top.

    Heat the oven to 170 degrees Celsius. When it warms up, place the baking sheet with the pie there. Bake for approximately 35 minutes until done.

    Remove the finished pie from the oven. And before it cools down, grease the top with butter.

    The pie with minced meat and potatoes is best served warm. And since it is quite filling, you can use it as an independent dish for dinner or breakfast. If it seems to you that the potatoes in the pie are a little damp, but they are soft enough, this is how it should be; the potatoes here should not be boiled. Bon appetit.

    To gather friends or family, you just need to cook a delicious pie with potatoes and minced meat in the oven. Our recipe with photos will help you with this. No one will refuse such a treat. In addition, this is a very filling snack that you can take with you on the road, to work or school. Even if there is no place to warm up a piece of pie, it is good cold.
    This pastry can be made from kefir dough or yeast dough. I prefer the second option. Don't worry about there being more dough than filling. It is quite thin and tasty. You can make both closed and open potato pie. For an open pie, use sour cream and eggs. It’s also very tasty, but this is a different recipe. Let's prepare a savory yeast pie with a delicious filling.

    - water - 1 tbsp.
    - flour - about 3 tbsp.
    - sugar - 1 tbsp.
    - salt - 1 tsp.
    - dry yeast - 1 tsp.
    - vegetable oil - 3 tbsp.,

    - minced meat - 200 g,
    - potatoes - 2 pcs.
    - onion - 1 pc.
    - pepper, salt,
    — egg - 1 pc. (for greasing the pie).

    Pour 2 cups of sifted flour into a deep bowl. Combine with yeast, sugar and salt. Mix all these dry ingredients.

    Fill with one glass of warm water. Mix.

    Add vegetable oil.

    Add flour until you knead a dough that does not stick to your hands.

    Grease the bottom of the bowl with vegetable oil. Place the formed ball of dough into it. Cover with cling film and place in a warm place to rise for 1 hour.

    Let's prepare the filling. Add finely chopped onions to the minced meat. Season with salt and pepper.

    Cut the potatoes into thin slices. I use a housekeeper knife to peel vegetables. Mix potatoes with salt. You can add spices to taste.

    An hour later we take out our yeast dough, which has already risen perfectly.

    We divide it into two parts. Roll out one and place the first layer in a greased form. I have it with a diameter of 26 cm. Place the potato filling so that the edges remain free for easy pinching of the dough. I ended up with several layers of potatoes.

    Top with a layer of minced meat. Distribute evenly, leaving free edges as well.

    Roll out the second part of the dough and place it on top.

    We pinch the edges. We make a hole in the center of the pie for air to escape. Brush the surface of the product with beaten egg. Let it sit in a warm place for 10 minutes so that the dough rises a little more. Place in the oven, which we preheat to 180 degrees. Bake for about 40 minutes.

    Here is our pie with potatoes and minced meat in the oven, well browned and completely cooked inside.

    Remove from the mold, grease the surface with a piece of butter (optional), cover with parchment and a towel. Let the product rest for 10-15 minutes.

    Then we cut it. Can be served both warm and cold.

    The result was a very tasty yeast pie with potatoes and minced meat. It's juicy inside and really has a lot of filling. This means that baking in the oven was a great success. It is not only tasty, but also filling.

    On a note
    If you want to cook the product on a baking sheet, you will have to double the amount of dough and filling ingredients.
    Ground meat can be made from beef, pork, turkey or chicken. In this case it's just pork. The ideal option is minced pork and beef.
    In order for the potatoes to bake well, they need to be cut very thin.
    If you like a crispier dough, add 2 tbsp chicken fat or margarine to it. it will turn out very tasty.
    If you have leftover pie, cover it with cling film and refrigerate. The next day, reheat in the microwave. And then the baked goods will again become fresh, soft and no less tasty.
