  • Wheat flour - 410 g
  • Live yeast - 20 g
  • Milk 3.2% fat – 120 ml +100 ml
  • Butter – 120 g
  • Sugar – 50 g + 50 g
  • Chicken egg - 2 pcs.
  • Poppy – 150 g
  • Small plum or cherry - 400 g

Preparation:


Before putting the roll in a hot (180 degrees) oven, let it stand for 20-30 minutes. Bake for 35-40 minutes, monitoring readiness by the condition of the surface: when it turns golden brown, you can remove the dish and transfer it to a wooden surface.   • Frozen puff pastry – 500 g
  • Poppy – 140 g
  • Boiled condensed milk - 400 g
  • Sweet and sour apples - 2 pcs.
  • Cinnamon - 1 tsp.
  • Sugar - 2 tbsp.
  • Butter - 10 g
  • Egg - 1 pc.

Preparation:

  1. Peel and cut the apples into small cubes and place them in a hot frying pan. Add butter, sugar and cinnamon and cover with a lid. Within 15 min. simmer over medium heat, turning occasionally with a wooden spatula. The apples should soften and turn into a homogeneous mass.
  2. Roll out the defrosted layers of dough in the direction away from you (puff pastry cannot be rolled out in several directions at once). In a large bowl, combine apples, boiled condensed milk and poppy seeds, stir. Distribute the filling into layers and roll them into rolls.
  3. Place on a baking sheet, seam side down, make transverse short cuts on the surface. Brush the rolls with beaten egg and place in an oven preheated to 190 degrees for 30 minutes.

It is better to make puff pastry rolls in portions, since when slicing it crumbles: before putting it in the oven, cut the rolled layers into pieces 2-3 cm wide and lay them out flat. The only drawback of this method is that the filling will leak out and burn on the side touching the baking sheet. To avoid this, cover it with a clean piece of dough.

  • 1.5 tsp. dry yeast
  • 200 ml milk
  • 600 g wheat flour
  • 150 g sugar
  • 3 eggs pinch of salt
  • 80 ml vegetable oil
  • 0.5 cups chopped nuts

For filling:

  • 200 g poppy seeds
  • 250 ml water
  • 80 g sugar

For the glaze:

  • 250 g sugar
  • 75 ml water
  • a few drops of lemon juice
  • 5 tsp. cocoa powder

Biscuit roll step by step recipe:

  1. Prepare the filling. Pour hot water over the poppy seeds, bring to a boil and boil for about 10 minutes. Place on a sieve and let the water drain. Mix with sugar and set aside.
  2. Dissolve yeast in warm milk, add 100 g flour and 1 tbsp. spoon of sugar. Stir and leave in a warm place until foam appears.
  3. Add eggs, remaining sugar, a pinch of salt and vegetable oil to the prepared dough. Mix. Add the sifted flour, knead the dough, cover it with cling film and put it in a warm place to proof for about 2 hours.
  4. Divide the finished dough into 4 parts, roll each into a layer about 5 mm thick. Spread the poppy seed filling evenly over the surface of the dough in a thin layer, leaving the edge 1.5–2 cm free. Roll the rolls, starting from the side completely occupied by the filling.
  5. Place the rolls on a baking tray lined with baking paper and let rest for about 20 minutes. Bake the rolls at 180°C for about 30 minutes.
  6. Prepare chocolate glaze. To do this, combine sugar in a saucepan with water, boil the syrup (without changing color), adding lemon juice at the end. Beat the finished syrup with a whisk or mixer. When it starts to turn white, add cocoa powder and mix well.
  7. Apply chocolate glaze to the finished rolls and sprinkle with crushed nuts. Let the glaze harden.

How to make sponge roll at home

First of all, I make an airy dough, for this I beat 4 eggs into the mixer bowl and add a glass of sugar. One glass contains 200 ml. Using a mixer, beat them at high speed for 5 minutes until thick foam. Please note that if you have a weak mixer, the beating time can be up to 12-15 minutes. The main thing is that in the end you get a fairly thick foam. After this, add flour sifted through a sieve to the whipped mass and stir. If you did everything correctly, then you will have a very airy dough and you do not need to add soda or baking powder to it.

I cover the baking tray with parchment paper and make appropriate folds in the corners so that the corners are evenly baked. After this, I pour the dough onto a baking sheet and distribute it evenly over the entire area.

I bake it in a preheated oven at 180 degrees for 10 - 15 minutes. The exact time depends on the size of the pan and the thickness of the base being baked. As usual, I check the readiness with a wooden toothpick by piercing the dough in several places. If a toothpick comes out clean, it's ready.

When it is baked, I quickly take it out of the oven and roll it into a roll using a towel. Be careful because it is very hot. The easiest way to do this is to help yourself with a dry towel. Also, do not try to remove the parchment right away, but rather roll it up with it. I leave it to cool to room temperature while I prepare the filling.

Now I’ll show you how to make poppy seed filling. Pour half the milk into a small saucepan and put it on the fire until it boils. I add poppy seeds, raisins, sugar and semolina to the rest of the milk. Don't forget to rinse the raisins first.

Next, I stir them to form a homogeneous mass.

When the milk has boiled, add the rest of the mixture to it and stir. I put it all on low heat and cook until the poppy seed filling begins to thicken. This takes about 5 minutes. Now I set it aside to cool a little.

Carefully remove the parchment from the biscuit so as not to damage the edges. Do not unscrew it too much, and do not do it sharply, because it may crack. Next, I prepare an impregnation for it, for this I mix water with sugar and put it on fire. As soon as the sugar dissolves, the impregnation is ready.

I pour the impregnation over the biscuit, and then distribute all the filling, which has already cooled a little, over it. It turned out to be quite thick, so it does not spread and holds its shape well. Then I twist the roll so that the edge is at the bottom.

After that, I transfer it to a dish and prepare the chocolate glaze. To do this, I break the chocolate into pieces, add milk and butter. Then I put them on the fire and melt them. By the way, this can be done in a water bath or in the microwave. I cover the roll with melted chocolate and sprinkle coconut flakes on top. Here is a simple roll recipe I have prepared for you.
