Pasta “Nests” with meat filling is a quick and very satisfying second course. Of course, it does not belong to the category of gourmet dishes, but it is just right for an ordinary weekday dinner. In addition, it does not require special culinary skills and its preparation does not take much time.

The combination of pasta with minced meat has been known to everyone for a long time - this includes the favorite navy pasta, lasagna, pasta casserole and stuffed shells.

Pasta “Nests” with minced meat are cooked in the oven, in a frying pan or in a slow cooker. The cooking principle in all variants is quite similar and differs only in the time spent on the cooking process.

Ingredients

  • Pasta “Nests” – 1 package (350 gr.);
  • Homemade minced meat (pork + beef) – 250 gr.;
  • Onions – 1 pc.;
  • Garlic – 1 clove;
  • Hard cheese – 100 gr.;
  • Vegetable oil – 1 tsp;
  • Salt and ground black pepper to taste.

Preparation

The first step in preparing “Nest” pasta with minced meat is preparing the meat filling. Use minced meat, ground from equal parts of beef and pork, with the addition of 1 onion, chopped with a knife or a clove of garlic passed through a press, salt and ground pepper. To make the meat filling more tender, when grinding in a meat grinder, add a piece of soft white bread soaked in milk. Mix thoroughly.

Grease a deep saucepan with vegetable oil and place the pasta in it at a short distance from each other.

Using a fork, place a small heaped amount of meat filling into them and gently press it down.

Add enough water to the pan to completely cover the pasta and lightly add salt. Cover the saucepan with a lid and place over medium heat. Cook the “nests” with meat until fully cooked and soft, about 15-20 minutes. Add water if necessary. Grind the cheese on a fine grater and sprinkle it on each product. Once melted, the cheese will give the dish a creamy taste and make it more flavorful. If you cook “Nests” pasta with minced meat in the oven, then you should not cover the baking dish with a lid, and add the cheese about 5 minutes before the dish is ready. In the case of a multicooker, use the “Baking” mode and cook until the beep sounds. Also add cheese 5 minutes before the end of cooking.

Serve “Nests” with meat filling in portions or directly on a common platter, lightly sprinkled with fresh herbs.

Cooking tips:

  • add finely chopped fresh herbs, coriander or paprika to the meat filling, they will make the taste of the dish richer;
  • The most suitable additions to pasta with meat would be cream-based sauces to further emphasize the creamy taste of the dish. “Bechamel” will also be very beneficial when combined with meat and pasta.
  • Serve the dish with a fresh tomato salad and a glass of dry red wine.

To prepare this dish, you will need special pasta that has Italian roots - nests (tagliatelle). These pasta products can be bought in almost any store; in fact, they are a type of noodles that are rolled into a circle. The dish, despite its original presentation, is very easy to prepare and does not require any special skills from you. This is not the first time I have prepared such nests of pasta with minced meat in the oven and I would like to note that it is really very tasty! Pasta must first be boiled and then filled with filling, in this case it will be minced meat. The highlight of this recipe will be the tomato-sour cream sauce in which they will be baked. Thanks to him, the dish turns out not only nourishing and tasty, but also very tender and juicy! Let’s finish all this off with a cheese “cap” to give the nests a more appetizing and elegant look. This dish will not only be a luxurious dinner idea for the whole family, but will also be a great idea for a holiday table. I recommend trying it! A step-by-step recipe with photos is presented below.

Ingredients:

  • 12 pasta nests.
  • 500 grams of minced meat.
  • 2 onions.
  • 1 medium sized carrot.
  • 2 tbsp. spoons of tomato paste or sauce.
  • 2 tbsp. spoons of sour cream of any fat content.
  • 150 grams of hard cheese.
  • mayonnaise to taste.
  • salt and spices to taste.
  • vegetable oil.
  • Number of servings: 12.

For the filling, combine minced meat (I have beef + pork), one chopped onion and add salt and spices of your choice.

Then boil the pasta. To do this, you need to bring salted water to a boil, and then put our pasta nests on the bottom of the pan. We boil the nests in parts so that they lie in one layer. As soon as the pasta is placed in the water, you need to move it a little with a spatula so that the pasta does not stick to the bottom, and after boiling, cook it for no more than 3-5 minutes, depending on the manufacturer, until al dente. You need to pour in enough water to cover the pasta by 1-2 cm.

We take out the finished nests and put them in a baking dish, which must be greased with oil.

For the sauce, fry grated carrots and diced onions. There is no need to fry too much, just enough to soften the vegetables. Then add tomato paste, sour cream and cook everything together for another 2-3 minutes.

Then pour in 1.5 cups of water, I use the water left after cooking the pasta. Add salt to taste, you can add spices, bring everything to a boil and turn it off. The sauce is ready!

Now we prepare our dish for baking. Fill the pasta nests with minced meat, slightly pushing the middle apart, and press the minced meat with a fork. The nests can be planted either separately from each other or in an even layer, at your discretion.

Pour the prepared sauce over everything, trying to avoid the minced meat.

Then we apply a “cap” of mayonnaise to the minced meat. You can also replace it with sour cream, but our family prefers this option.

Distribute the grated cheese evenly over the mayonnaise.

Bake the nests in the oven at 180-200*C for about an hour. I go by the golden brown cheese crust on top.

All that remains is to cut the dish into portions and serve. Pasta nests prepared according to this recipe are a self-sufficient dish and a side dish is definitely not needed here. The only thing you can add when serving is fresh herbs or any vegetables.

This is how you can prepare a simple, but at the same time, gourmet dinner! The result is an excellent treat that truly no one can resist!

Bon appetit!!!

Best regards, Oksana Chaban.

The most popular is nest pasta, which is served with various fillings. Their advantage is the speed of preparation. Meat ones are prepared from minced meat and themselves become the basis, waiting to be filled. They look like stuffed cutlets, zrazy. The only difference is the shape and size. A nice filling is made from a whole egg, boiled and peeled or raw, baked into a fried egg. Instead of chicken, you can use quail. A cheese cap is able to hide any contents underneath it: for example, chopped vegetables. And she looks good.
