I first tried these bagels in a small bakery and thought that there was nothing complicated about making them. Taking note of the idea, I soon prepared this pastry. My family loves bagels with meat because you can eat them at home, for example, with a glass of cool milk, and take them with you to work or school.

A little skill is needed when shaping bagels, but in general it’s a normal process for preparing yeast pies with filling.

Let's prepare the ingredients and get started.

It is advisable to use homemade minced meat, unseasoned and without additives; we will add flavor to it during the preparation of the filling. If the minced meat was frozen, like mine, then it needs to be completely defrosted in advance.

You can use a regular onion or use a sweet white onion. Peel and finely chop the onion. Remove the seeds from the sweet pepper and cut the pulp into small cubes.

Spices for meat - to taste, I took ground black pepper, ground coriander, sweet ground paprika and, of course, salt. The butter should be softened at room temperature, the milk should be warmed a little until it becomes pleasantly warm.

Knead the dough in a bread machine; to do this, put all the necessary ingredients in a bowl in the order indicated in the instructions. Let's turn on the yeast dough kneading mode and wait for the bread machine to signal that the dough is ready.

While the dough is preparing, prepare the filling. Heat the vegetable oil in a frying pan, add the minced meat and fry it over medium heat until cooked, breaking up large lumps. If juice is released during the cooking process, evaporate it. We need crumbly minced meat.

Next, add finely chopped onion and sweet pepper to the minced meat. Continue cooking the filling over low-medium heat, stirring for another 5-7 minutes to soften the vegetables, then season to taste with salt and spices, stir and turn off the heat.

Before adding cheese and herbs to the filling, it must be completely cooled. In the meantime, grate the cheese on a fine grater and chop the greens with a knife.

Place the cheese and herbs into the cooled filling and mix.

By this time, the bread maker has “notified” that the dough is ready; it is soft, but at the same time holds its shape perfectly. You can start forming bagels with meat.

Divide the dough into three equal pieces, round them, cover two balls of dough with a napkin or film, and take the third one to work.

While shaping the bagels, dust the work surface with a small amount of flour. The dough is manageable and almost non-stick, so you need a minimum of flour.

Roll out a piece of dough into a rectangular layer approximately 0.5 cm thick.

Let's cut the layer into strips 4-5 cm wide. From each layer we get 3-4 strips.

Place the cooled meat filling on each strip of dough. We spread the filling so that it does not reach the edges a little.

Let's start pinch the dough along the entire length, in the end you should get a “tube” with holes at the ends, with meat filling inside. We act carefully, the dough should not tear. Let's roll the “tube” along the board a little so that the seam becomes less convex.

Let's roll the “tube” into a donut, connecting the open ends so that the seam is inside the circle.

Place the bagel on a baking sheet lined with baking parchment and do the same manipulations with the remaining dough and filling.

Place all the formed bagels on a baking sheet, leaving a distance between them - the yeast dough will increase in volume. It’s okay if at the preparation stage the bagels look unpresentable; in the oven the dough will rise and all the wrinkles and irregularities will straighten out.

Cover the baking sheet with bagels and leave in a warm place for 30 minutes so that the dough increases slightly in volume. In the meantime, turn on the oven to warm up to a temperature of 200-205 degrees.

Brush the surface of the prepared pieces with beaten egg...

And sprinkle with a small amount of sesame seeds.

Bake bagels with meat in a preheated oven for 25-30 minutes or until done.

Transfer the bagels from the baking sheet to a wire rack and let them cool slightly. Serve warm or completely chilled.

Then remove the softened bagels and place them on a paper towel to absorb excess moisture. Fill the dryers with minced meat - place a teaspoon of meat filling in the middle of each bagel.
