Baking with kefir in the oven usually turns out very fluffy and rises well.

After all, kefir contains an acid, which, interacting with soda or honey, causes the dough to rise.

General principles of baking with kefir

You can take not the freshest kefir, but yesterday’s or even the day before yesterday’s, it’s still impossible to get poisoned: the temperature in the oven is very high. However, if you find the taste of kefir too sour, you can add more sugar or other sweet ingredients.

We will focus on sweet baked goods using kefir in the oven, but in principle, using kefir you can also make a savory pie (say, with fish or potatoes) or something ultra-quick in a frying pan - pancakes, pancakes, flatbreads...

You can add a variety of ingredients to kefir baked goods in the oven: raisins and dried fruits, jam and honey, apples and berries. Kefir dough usually goes well with everything that the housewife and her household like.

If you decide to put raisins or other dried fruits in sweet kefir baked goods in the oven, and they are too dry, you need to soak them in cool water for half an hour. You shouldn’t use hot water: you’ll end up with compote.

The dough for baking with kefir in the oven must be made in advance and allowed to stand before baking so that all the ingredients have time to interact and then bake well. Kefir dough is usually quite liquid: it should flow in a thick wave and not flop. It has a consistency similar to pancake batter.

Sweet pastries are prepared with kefir in an oven heated to 180 degrees, sometimes a little less. Its readiness is checked with the help of a splinter, which must be inserted into the middle of the cake or cupcake, and then taken out and see if it is dry. If it is still wet and with sticky dough, baking with kefir in the oven is not yet ready.

Kefir of any fat content is suitable for baking. In the dough, some of the beneficial properties of the fermented milk product are lost, but the result is a light mass similar to a biscuit. This is a universal base for pies with any filling.

The morning that greets us with the aroma of pancakes seems welcoming even on Monday. And the phrase “guests are on the doorstep” causes more joy than worry if there is kefir in the refrigerator to bake charlotte. Kefir is a product that gives us so many different dishes! And what unites them all is the taste of childhood, sunny, warm and carefree.
I will roughly divide these dishes into those that can be cooked in a frying pan and those that are baked in the oven. Conditionally, because many of them can be baked and fried.

What to cook from kefir in a frying pan?

Traditionally, Russian dishes are prepared with yogurt, while American dishes are prepared with milk. Kefir decorates dishes, giving them splendor and lightness.

Kefir pancakes

Sweet and savory, with and without filling. There are so many pancake recipes! I will give a basic recipe that can easily be supplemented with any ingredients.

Required Products:

  • Flour – 200 g;
  • Sugar – 60 g;
  • Kefir – 220 ml;
  • Egg – 1 pc.;
  • Soda – 0.5 teaspoon.

How to prepare pancakes with kefir:

  1. Mix kefir, egg and sugar. You can separately beat the sugar and egg until foamy, but this is not important. From my experience, I will say that this is not what makes pancakes fluffy.
  2. Add oil. I noticed that a spoonful of oil allows the dough to fry well and evenly inside.
  3. Mix some of the flour with soda. Add this part to the mixture in portions, mixing well each time.
  4. We also add the rest of the flour in small portions. We need to achieve the thickness of the sour cream.
    Here's a small nuance. If you make the dough less thick, the pancakes will bake and rise. They will be very tender, but they will absorb more fat than with thick dough. Here it is better to focus on your taste.
  5. The oil in the frying pan should be hot. Its readiness is checked with flour. If the butter starts to foam when the flour gets in, it's ready to fry.
  6. Fry each side with the lid closed.

You can add apples, raisins, banana and other fruits. If you do not put sugar in the dough, you can add meat, vegetables and herbs.

If you like vegetable pancakes, take note

Pancakes

Well, who doesn’t know how to cook them? But there are so many recipes that I will tell you my own, win-win version. You will get pancakes right the first time and without lumps.

What we will make pancakes from:

  • Kefir – 500 ml;
  • Sugar – 3 tbsp. spoons;
  • Milk – 1.5 tbsp;
  • Flour (I won’t say how much. It will be visible in the process);
  • Vegetable oil – 1 tbsp. spoon;
  • Salt – a pinch.

Let's prepare:

  1. Combine kefir, salt and sugar. Mix.
  2. Add flour. We need the thickness of the dough, like for pancakes (thick sour cream).
  3. Add butter and milk. Mix.
  4. Check to see if the dough flows in a thin stream (liquid sour cream), then it’s ready to fry.

The only thing better than pancakes are pancakes. An absolutely universal dish. Any filling will do. Yes, and you can roll them either with a tube, or with a bag or an envelope.

Pancakes with kefir

I so often hear recipes for pancakes that are practically no different from pancakes. In this recipe, I will show why chefs call pancakes a fried sponge cake.

  • Kefir – 350 ml;
  • Butter (you can melt butter, you can also use vegetable oil) – 4 tbsp. spoons;
  • Sugar – 4 tbsp. spoons;
  • Eggs – 3 pcs.;
  • Salt - a pinch;
  • Soda - teaspoon.

How to make pancakes with kefir:

  • Beat the yolks (separate from the whites) with sugar until foamy.
  • Add room temperature kefir. Beat the mass.
  • Add sifted flour. Beat at low speeds. The consistency of the dough should be like liquid sour cream.
  • Continue whisking and add oil.
  • Beat the egg whites and salt separately until fluffy.
  • Combine the mixture with the proteins.
  • You need to fry without oil.
  • As soon as delicate bubbles and holes begin to appear on the surface, turn it over.

And don’t forget that the “biscuits” turn out a little dry without cream, syrup or jam. You can decorate the dish with berries.

Verguny

Vergunas dusted with powdered sugar have a golden crispy crust on the outside and soft inside. What could be tastier?

  • Eggs – 2 pcs.;
  • Sugar – 0.5 tbsp;
  • Kefir – 2 tbsp;
  • Vegetable oil – 1.5-2 tbsp. spoons;
  • Soda – 1 teaspoon;
  • Salt – 0.5 teaspoon;
  • Oil for frying.

Let's cook:

  1. Mix and beat sugar and eggs a little.
  2. Sift the flour and add salt and soda to it.
  3. Gradually add a glass of flour to the egg-sugar mixture. Mix.
  4. Add kefir and oil. Mix everything again.
  5. Add the remaining flour to the dough.
  6. Knead the dough and leave it to rest for 10 minutes.
  7. Divide the dough into parts. Roll out one part.
  8. Cut the dough into strips. We divide each strip into several diamond parts.
  9. We cut a hole in the middle of each diamond.
  10. We insert the sharp corner of the diamond into the hole and pull it out.
  11. Heat the oil. There must be a lot of it. So that the verguns “swim” in it.

Sprinkle the fried verguns with powdered sugar. It’s beautiful and tasty when the powder becomes a thin crust.

Secrets of kefir dough

Surprisingly, even such a simple dough has its own subtleties of preparation. It's not enough to just gather and mix the ingredients if you want to create treats that will delight you and your family.
Here are some important conditions for delicious baked goods with kefir:

  • You've probably noticed that all recipes use baking soda instead of baking powder. In most cases, this is enough to lift the dough and make it fluffy. But pay attention: soda cannot be quenched with vinegar!
  • The best kefir for baking, sour, stale. It should stand for several days, only then will the baked goods rise well.
  • Don't set the temperature too high. In order for the products to rise well and bake inside, 180 degrees is suitable.
  • The kefir temperature should be at room temperature.
  • You can quickly make kefir from milk using citric acid.

We will need: a glass of flour, half a glass of sugar (if the apples are sour, you can add it to taste), half a glass of kefir, vegetable oil, soda. For the filling - several large apples.

We bake the pie in a ring mold so that it looks like a cake. First, prepare the dough as for pancakes - medium thickness, but so that it still flows and does not fall in pieces. Beat it well. Peel the apples, remove seeds, stems and cut them into small cubes (you cannot grate them, as the result will be porridge). Add the processed apples to the dough and mix thoroughly again. Pour the resulting homogeneous mass into the mold. Bake in the oven at medium temperature for up to half an hour (or until done). Here's a simple kefir bake (photo). A recipe available to every housewife. Serve on the table for dessert with drinks: tea, coffee, compote, wine.

With fish

It doesn’t require much effort and won’t take up much of your precious time, and besides, it can be not only sweet. We offer a simple recipe for a fish dish that can be used as a full second dish.

We will need: three eggs, half a glass of kefir, a couple of spoons of low-fat mayonnaise, a glass of flour, soda on the tip of a knife. For the filling - a can of canned saury, pink salmon or herring in its own juice, a glass of pre-boiled rice, two onions.

Let's start cooking: first you need to knead the dough with mayonnaise and kefir - like pancakes in their thickness. Strain the liquid from the canned fish and mash it a little with a fork until smooth. Fry the onion in vegetable oil and add to the fish. There is also boiled rice. Mix the filling. Place half of the dough into a mold that suits your culinary tastes. Place the prepared filling on the dough. Fill the top with the remaining dough again. And all this goes into the oven, preheated.

Fish pie - a quick baked product made from kefir - is prepared at a temperature of 180 degrees for about half an hour. We check the dough: an ordinary wooden match should come out of the pie dry! And before taking it out of the oven, it would be good to sprinkle the dish with grated cheese and let it sit in the oven for a while. You can serve it as a full second dish, garnished with sprigs of fresh herbs.
