The cooking recipe that I have prepared for you today is rooted in the ancient traditions of Indian culinary art. Due to this, the dish has its own unique name - tamatar paneer malai, which has been consistently used for centuries. And, as is typical for Indian cuisine, the recipe itself has never changed. If we approach the name our way, it will mean fried tomatoes with cheese.

Only natural ingredients are used for the dish, preferably grown and prepared at home. In India, this is the only approach to products.

It is better to choose small tomatoes for this dish, with aromatic smell. Unfortunately, we very often come across watery and tasteless tomatoes in our stores. Therefore, it is better to spend some time to find good promidors. Another ingredient of the dish is made from milk, which in India is called paneer. We got acquainted with its preparation technology earlier.

Tamatar paneer malai is very tasty, tender and filling. And, as expected for an Indian dish, the recipe is completely balanced in terms of nutrients.

Ingredients:

- paneer (homemade cheese) 450 g

- tomatoes 700 g (8-10 pcs)

- vegetable oil 3 tablespoons

- cumin seeds 2 teaspoons

- turmeric 1 teaspoon

- homemade sour cream 150 ml

- fresh herbs (cilantro or parsley) 1 bunch

- salt 2 teaspoons

- ground black pepper ½ teaspoon

Yield of finished dish: 900 g.

  1. If you have already prepared the paneer, then you can move on. If it is not there yet, then return to the cooking recipe.

We wash the tomatoes and herbs. Cut the paneer into fairly large cubes (about 2.5 cm on each side). Cut the tomatoes into 8 slices. If the fruits are small, then you can cut them into 6 parts.

  1. Heat the frying pan over medium heat. Add oil to it and heat it up. Add the cumin seeds and fry them until dark for 30 seconds. Turn the heat to maximum and add tomato slices into the pan. We need them to be fried on all sides and not stewed in their own juices. Therefore, we turn the tomatoes over quickly but carefully.

All actions are performed over high heat, so be careful when you start adding tomatoes to the pan. Their juice will splash out when it comes into contact with hot oil. Don't get burned.

Once the tomatoes are fried, you can add the cheese cubes and stir the dish carefully so that the tomato and paneer pieces do not fall apart.

  1. Add salt, ground black pepper and turmeric to the pan. Mix everything again and continue to fry over high heat for 2-3 minutes. At the very end, you can evenly pour sour cream over the contents of the pan.

No matter how many times I make tamatar paneer malai, this dish absolutely always turns out delicious. In addition, it can be varied by adding colored kaputa or green peas. Additional ingredients should be steamed first. They can be placed in a dish along with paneer. And I like to serve this recipe with fried green beans.

Before serving, be sure to decorate the dish with fresh herbs.

PREPARATION: 1. Heat a pinch of cumin seeds and a pinch of mustard seeds in a tablespoon of ghee. Heat until the mustard crackles and begins to emit a pleasant nutty aroma. 2. Cut a head of Adyghe cheese (or paneer) into cubes, fry in oil with spices for 5-7 minutes. Add a teaspoon of black salt (regular salt is fine). 3. Two peeled tomatoes, chopped. Add to cheese. Add heat and fry for five minutes. Be careful not to burn. 4. In 5 minutes. Reduce heat, cover with a lid, simmer for another 5 minutes. Then add half a can of green peas.   2. Grate the cheese on a coarse grater, and the peeled garlic cloves on a fine grater or chop the garlic using a garlic press.
  3. Combine cheese with and mayonnaise.
  4. Mix the cheese mixture and stuff the tomatoes with it.
  5. Garnish tomatoes stuffed with cheese and garlic with a fresh sprig of parsley.
