You can use not only cow's milk, but also goat's, fresh or sour, store-bought or homemade, and even powdered milk!

The product tastes even sweeter and softer. The store-bought product is sour and more crumbly. It is a pleasure to prepare casseroles from such a product. The baked goods are more tender. And my son eats it just like that without any sweet additives :) In a word, there would be a desire, but there are a lot of options. This is also a great way to diversify the menu for the whole family and take care of the health of loved ones.

Cottage cheese from fresh milk at home - a quick recipe with vinegar

Using this option, I made my own cottage cheese at home for the first time. It still tops the list of my favorites. The mass turns out soft, airy, and at the same time the taste of vinegar is absolutely invisible. To be honest, this ingredient confused me a little, but then I never regretted that I decided to try it. It turns out very quickly and is suitable for children.

Ingredients:

  • 2 liters of milk;
  • 35 ml table vinegar;
  • a pinch of salt (optional).

Step-by-step cooking recipe:

1. Place a saucepan with milk on low heat. Choose suitable dishes - it’s better not to take enamel dishes so that nothing gets burnt. Heat to approximately 90 C without boiling. Turn off the stove.

Cottage cheese is healthier than milk: calcium is absorbed from it much better and.

2. Pour in the vinegar in a slow stream, trying to distribute it evenly - for this I pour it in a “spiral”, moving from the edges of the pan to the center. Then stir, cover and leave for 20 minutes. During this time, whey is formed.

3. The resulting mass can begin to be filtered. Place it in gauze or a clean cotton bag and place on a sieve. Leave for 5-10 minutes.

4. Once the whey has drained, transfer the mixture to a plate, mash with a fork, adding a pinch of salt. Ready!

From this amount of ingredients I get a little more than 300 g of cottage cheese.

It can be eaten fresh or added to baked goods. I especially love to cook. When I give my son such a tasty treat, after eating he starts dancing and humming something. It’s so funny and joyful to see this :)

And if you compress the product well, after a few hours you will get something like fresh soft cheese. I sometimes like to cut it into pieces and eat it as a snack with tea or coffee.

Delicious curd made from milk and kefir for babies

A friend whose baby is growing up shared this interesting recipe with me. She was very pleased with the quality and ease of preparation. It turns out very tasty and healthy for children. By the way, you can make cottage cheese from goat’s milk this way.

You will need:

  • 150 ml milk;
  • 150 ml kefir.

How to cook:

1. Bring the milk to a boil and quickly pour kefir into it.

2. Stirring gently, hold on the stove for 5 seconds and remove the pan from the heat.

If you forgot about the milk in the refrigerator and it turned sour, don’t despair. It can make a wonderful cottage cheese. As it turned out, this is exactly the recipe my grandmother used when she treated me as a child.

1. Pour water into a wide saucepan, place a napkin on the bottom, and place a jar of yogurt on top. It will be enough for the water level to reach half the jar. The effect of a water bath is obtained.

If you take a sourdough starter from another company, then be guided by the quantity based on the manufacturer’s instructions.

8. After 15-20 minutes, the resulting mass can be thrown onto gauze or cloth. Tie the cloth and hang it over a bowl or sink to catch excess whey under its own weight. At this stage, you can adjust the desired density of the finished product.

What do you need:

milk - 2 liters, a 3-liter saucepan, a piece of gauze folded in several layers, a colander.

Pour the milk into a saucepan, cover with a light cloth and leave at room temperature to sour and form curdled milk. In the summer, milk turns sour within a day. In cold weather, this process can take two days. When milk has soured, a layer of sour cream may form on top - this depends on the fat content of the milk. This layer must be removed from the surface. Place the pan on low heat; heat the pan with yogurt to 70 ºС. Place your hands on the pan - your hands should be hot.

A volume of two liters warms up in about 20-30 minutes. If you have a larger volume of curdled milk, you will need more time. Don’t forget to stir the yogurt, but you need to do this very carefully and infrequently.

It is important here not to miss the very moment when the cottage cheese has reached the desired consistency. Overheated yogurt will make dryish cottage cheese. How do you know when the cottage cheese is ready? It settles to the bottom of the pan, and the whey turns out to be greenish (yellowish) transparent. Turn off the heat and leave the contents of the pan until completely cool.

After cooling, the top whey can be poured into jars, and the rest of the contents of the pan, along with the cottage cheese, are poured into a colander lined with gauze. You can press the curd mass with a wooden spatula so that the moisture drips off. You will get soft, slightly moist cottage cheese.

If you hang the cottage cheese wrapped in several layers of gauze and leave it for 12 hours (place a bowl for the draining whey), then all the whey will drain and you will get homemade granular cottage cheese.

In a water bath

This cooking method will require two pans. One is small, in which we already have yogurt, and the second is larger, so much so that the first one fits in it. Pour water into a large saucepan, place a small dish in a large one, then put it on the fire. Bring the water to a boil. After a few minutes, a yellowish serum will begin to appear. It is necessary to carefully monitor the separation of whey. Then, without leaving for a second and without taking your eyes off the curdled milk, wait until curd clots appear. They will gradually sink to the bottom. Important: the curdled milk should not boil.

When curd clumps have formed, remove the pan from the heat. After the whey has cooled, strain the curd through cheesecloth or a sieve.

Cottage cheese made from fresh yogurt can be stored in the refrigerator for up to 5 days. Of course, after this you can eat it, but it is better to use this cottage cheese for baking.

We use sourdough

Another way to prepare cottage cheese is with sourdough. First, you need to boil the milk; at the stage of cooling the boiled milk (at a temperature of 32-36 degrees), add yogurt (or kefir) to the milk at the rate of 2-3 tbsp. spoons per 1 liter, mix lightly with a metal spoon, cover the pan with a lid and place in a warm place.

Fermentation of milk under these conditions occurs much faster. Next, you need to heat it in a water bath until the whey is released, as with the method of preparing cottage cheese described above.

Delicate curd cookies

Cottage cheese is an excellent base for baking. A variety of cookies, cheesecakes, manna cakes, muffins - probably every housewife has several favorite recipes for baking with cottage cheese. We suggest baking tender cookies with cottage cheese filling, in which it is better to use homemade cottage cheese.

Ingredients

Cottage cheese - 200 g Sugar - 50 g Salt - 2 g Baking powder - 10 g Vanilla sugar - 8 g Butter - 150 g Sour cream (20%) - 50 g Chicken egg - 1 pc Wheat flour - 350-400 g Filling:

Cottage cheese - 200 g Chicken egg - 1 pc Sugar - 100 g Salt - 1 g Semolina - 40-50 g Vanilla sugar - 8 g Preparation

Sift the flour into a bowl (preferably 300 g of flour to start with), mix it with salt, sugar, baking powder and vanilla sugar. Beat cottage cheese, butter, sour cream, egg with a blender until smooth. Add this curd mass to the flour and start kneading the dough. Add flour if necessary. It may need from 350 to 400 g, depending on the moisture content of the cottage cheese. The dough should be soft, elastic and not stick to your hands. Wrap the dough in cling film and leave at room temperature while you prepare the filling.

For the filling, mix cottage cheese, salt, sugar, egg and vanilla sugar. Add semolina, stir and leave for 10 minutes. The amount of semolina depends on the moisture content of the cottage cheese

Roll out the dough 0.5 cm thick, cut out circles. In half of the circles in the center, use a notch to make a cutout of any shape (you can just use a circle of a smaller diameter). Connect the circles in pairs. The lower part is a solid circle, the upper part is with a cutout. Place the curd filling into the resulting cavity. Bake at 180 degrees until golden brown (about 15 minutes), use your oven as a guide. Make the decoration to your taste: you can sprinkle with powdered sugar and decorate with fresh berries.

  • fatty: proteins – 15 g, fats – 18 g, carbohydrates – 2.8 g, calorie content 236 kcal/100 g;
  • semi-bold: proteins – 18 g, fats – 9 g, carbohydrates – 3 g, calorie content 169 kcal/100 g;
  • low-fat: proteins – 22 g, fats – 3 g, carbohydrates – 3.3 g, calorie content 120 kcal/100 g.

Homemade cottage cheese, like other fermented milk products, contains lactic acid and lactose. These components, together with some enzymes, have a beneficial effect on the stomach and digestion. Among the vitamins, we can note A, C and D, as well as group B. The product also contains useful chemical elements: calcium, phosphorus, iron.

In order to make curdled milk from fresh milk, it is best to use glass or earthenware, for subsequent cooking use enamel or galvanized pans, and for further storage any suitable container, for example, plastic containers. For squeezing, you need a piece of clean gauze, for example, medical gauze.

To ferment fresh milk and make curdled milk from it, there are several traditional methods. The main thing is to add an ingredient that contains yeast or acid to promote fermentation. This could be a piece of rye cracker, a couple of spoons of sour cream or a glass of kefir, half a teaspoon of vinegar or citric acid. If you are using homemade cow's or goat's milk rather than store-bought milk, then to be safe, it is better to boil it.

Homemade curdled milk should be stored in a warm place: near the stove, radiator, behind the refrigerator. Avoid exposure to sunlight, as it destroys beneficial vitamin C. Three days are enough for complete aging under such conditions.

You should not keep the yogurt mixture in the refrigerator, since the milk does not ferment, but simply deteriorates over time.

Country milk is usually boiled before making yogurt and cottage cheese. Next, you need to wait until the mixture has completely melted and the liquid has drained. The result is a delicate and crumbly product.

Instead of yogurt, you can use low-fat kefir to make delicious cottage cheese. It is poured into a transparent glass container and placed in a warm, dark place. When whey forms in the mass, place the container in a water bath and heat for 15 minutes, then separate the curd and strain on gauze.

A delicious dessert for children can be prepared by heating 3 liters of milk to a boil, then adding 1.5 liters of kefir. Next, the mixture is heated over low heat for 10 minutes with stirring. When it curls, it needs to be cooled and strained through a colander with gauze.

The prepared cottage cheese can be mixed in a blender until smooth with chocolate, fruit, honey, sour cream, sugar and other sweet ingredients. The delicacy will appeal not only to children, but also to adults.

You can prepare a product from boiled village or store-bought milk as follows. 1 liter of milk is poured into an enamel pan and brought to a boil, after which the fire is turned off and half a teaspoon of salt and citric acid is added. Next, the container is placed under cheesecloth for 4 hours, then the resulting whey is drained, the cottage cheese in the gauze is washed with warm water and squeezed out. Without heat treatment, it is possible to preserve some useful substances in homemade cottage cheese. Although if you freeze it, then under the influence of low temperatures in the freezer it can also lose a number of useful properties.

When cooking in a microwave, you should not set it to the highest power setting. This will not speed up the process, and the cottage cheese may dry out, burn, or turn out rubbery.

Modern household kitchen appliances allow you to prepare this product quickly and tasty without burning or escaping milk. You can always make homemade cottage cheese in a yogurt maker, slow cooker, or microwave oven. Depending on the selected mode and time, it can turn out soft and juicy or dry and crumbly.

To strain the curd mass correctly, it is necessary that the gauze be folded in at least 2 layers and protrude beyond the edges of the colander.
