Homemade banana wine is an aromatic honey-colored drink with light notes of the raw material, the taste is difficult to compare with anything. Wine requires any ripe bananas. They will be suitable even with blackened skin, as long as the flesh is not rotten or moldy. Ingredients:

  • bananas – 5 kg;
  • water – 10 liters;
  • sugar – 2 kg;
  • citric acid – 7 teaspoons (35 grams);
  • unwashed raisins (any fresh berries) - 100 grams or wine yeast per 15 liters of wort.

Citric acid is needed to increase acidity and break down sugar into fructose and glucose, which promotes fermentation, improves taste, increases shelf life and prevents the appearance of some wine diseases. To activate fermentation, wine yeast is required (other types are not suitable) or raisin starter (you can use fresh berries).

Banana wine recipe

1. If there is no wine yeast, 3-5 days before processing the bananas, make a starter from unwashed raisins (raspberries, currants, cherries, etc.): pour the raisins or berries into a jar, add 25 grams of sugar and 250 ml of unboiled water , mix, cover with gauze, place in a dark place at room temperature.

After 2-3 days, the starter will be ready - foam will appear, a slight sour smell will appear and a hiss will be heard.

2. Peel bananas. Grind the pulp with your hands, a wooden rolling pin or a meat grinder until pureed.

It is not advisable to make wine with banana peels because the peels are treated with toxic chemicals to increase shelf life.

3. Mix 5 liters of water (half), 1 kg of sugar (half), banana puree and citric acid in an enamel saucepan. Bring the mixture to a homogeneous consistency.

4. Heat the wort to 55-58°C, maintain the specified temperature range for 60 minutes, warming the pan over low heat. Stir occasionally so that the mixture remains homogeneous and there are no lumps at the bottom.

It is very important not to let the temperature rise above 60°C, otherwise the enzymes will be destroyed and the release of fructose from bananas and sugar will stop. As a result, some of the raw materials will be wasted.

5. Cool the wort to 25-27°C. Add the remaining water and sourdough (along with raisins) or wine yeast. Mix. Cover with gauze and leave for 4 days in a dark place at room temperature. Stir once every 12 hours with a clean hand or a wooden stick. After 3-8 hours, foam and the smell of fermentation should appear on the surface.

6. After 4 days, strain the wort through 4-5 layers of gauze, squeeze the cake well, removing all the liquid. No more squeezes needed. Add 500 grams of sugar to the liquid part and mix.

7. Pour the resulting banana juice into a fermentation container. Fill to a maximum of 60-65% of the volume. Install a water seal of any design on the neck (you can pull on and secure a medical glove with a small hole in one of the fingers).

Attention! When fermenting banana wine, a lot of foam appears during the first 6-10 days, so I advise you to fill the container halfway or even less.

8. Transfer the container to a dark place (or cover) with a stable temperature of 18-27°C and leave until the end of fermentation.

9. After 5 days from the moment of installing the water seal, add the remaining sugar (500 grams). To do this, pour 250 ml of wort through a tube into a separate container, dilute sugar in it, pour the resulting syrup back into the fermentation container and close it with a water seal.

10. Depending on the activity of yeast and temperature, homemade banana wine ferments for 30-60 days. The end of fermentation is indicated by the absence of gas from the water seal (the glove is deflated) and a layer of sediment. You need to drain the young wine through a straw, without touching the sediment at the bottom, into another container.

If fermentation does not stop after 50 days from the start of preparation, drain the wine from the sediment and leave to ferment at the same temperature, otherwise bitterness may appear.

11. Taste the drink. If desired, sweeten with sugar (to taste) or fix with vodka (alcohol) in an amount of 2-15% of the volume of drained wine. Hardening promotes storage but makes the taste somewhat harsh.

12. Pour the wine into storage containers. To minimize contact with oxygen, it is advisable to fill to the top. Close tightly. If sugar was added at the previous stage, I recommend keeping it under a water seal for the first 7-10 days in case of repeated fermentation.

13. Transfer banana wine to a refrigerator or basement at a temperature of 5-16°C. Leave for at least 4 months (preferably 7-8). Aging significantly improves the taste.

14. Every 15-20 days (then less often), as sediment appears in a layer of 3-5 cm, filter the wine by pouring through a straw into another container.

15. When no sediment appears, homemade banana wine is ready. The drink can be poured into bottles and capped. Shelf life – up to 3 years. Strength – 9-12%.

  6. We place the container in a dark place where the temperature does not drop below 18-20 degrees, and leave the mass there until the end of the fermentation process.
  7. After five days after installing the water seal, add the remaining granulated sugar. To do this, you need to pour about 200-240 ml of wort from the container using a straw and dilute sugar in it, after which the resulting syrup is returned back to the fermentation container and the water seal is installed again.
  8. We are waiting for the end of fermentation. On average, banana wine ferments anywhere from 40 to 50 days. Fermentation is complete when carbon dioxide ceases to be released and a layer of sediment has formed.

The final stage

  1. Carefully drain the new wine using a straw, trying not to touch the sediment at the bottom of the container.
  2. Let's taste the drink. If necessary, sweeten with sugar or fix with vodka or alcohol. Fixing with alcohol promotes longer storage, but at the same time makes the taste slightly harsh and increases the strength of homemade alcohol. If sugar is added again, we strengthen the water seal again and return the vessel to its original place for about a week.
  3. Pour the finished wine into three-liter glass jars, filling them to the very neck to minimize contact with oxygen.
  4. We seal the jars hermetically and put them in the refrigerator or any other cool place.
  5. We allow the alcohol to mature for at least 4 months, and preferably 7-8. Long aging will definitely improve the taste of the drink.
  6. Every 17-21 days, as a sediment 4-5 cm thick appears, filter the liquid, draining it from the sediment through a tube into another container.
  7. When sediment stops forming, pour the alcohol into bottles.

Subtleties of cooking

  • Do not wash raisins under any circumstances, as there is “wild yeast” on their surface that will help activate the fermentation process. You just need to carefully sort it out, removing rotten or moldy berries, which can significantly spoil the taste of the alcohol, giving it too tart notes.

I used the inner bowl of a rice cooker since I didn't have a muffin tin. Place in the oven and bake for about 40-45 minutes (if making muffins, then 20-30 minutes) at 180 degrees. If you are expecting guests or just have time, you can sprinkle the finished cupcake with powdered sugar or chocolate glaze with nuts or come up with something else, but I didn’t do anything, it’s so good and quick to eat. Grease the mold with oil (we have a large baking sheet, I used it instead of a mold, the cake turned out thinner than the original, but no less tasty). Pour in half the dough, distributing it evenly. Cut the bananas in half lengthwise or into 3 parts if there are not enough of them. Place it on the dough. Sprinkle the remaining dough evenly on top. Beat the whites and yolks separately. Pour the whipped yolks into the whites, mix gently while gradually pouring in the milk. Pour this mixture over the pie and bake at 180-200 degrees for about 30 minutes. The tradition of eating fruits without heat treatment, only after peeling them, is typical for countries with a temperate climate, and in the tropics they are most often boiled, fried and prepared from bananas not only for dessert, but also for main courses, side dishes, appetizers and much more.

During World War II, the Philippines even invented banana ketchup, since regular ketchup had become scarce; to make it, banana puree was mixed with vinegar, sugar, spices and red coloring.

In addition to their wonderful taste, bananas have become famous for their beneficial properties and nutritional value. Banana fruits are recommended to be eaten in case of anemia, because... They contain iron, and thanks to potassium, bananas lower blood pressure and help eliminate irritability that occurs with its deficiency. The substance tryptophan helps with heartburn and improves digestion in general. It is believed that banana is one of the best helpers in eliminating depression, and it also improves the condition of premenstrual syndrome. The vitamins contained in bananas are C, P and group B, and the calorie content of the fruit is about 100 kcal per 100g.

Banana-coconut cream dessert


You will need:

  • 2 cups shortbread
  • 2 tsp. Sahara
  • 1/4 cup butter
  • 1 package pudding mix
  • 1 3/4 cups milk
  • 2 medium bananas
  • 2 cups whipped cream
  • 1/2 cup coconut flakes

Preparation:

  1. Preheat the oven to 190 degrees.
  2. Mix the crushed shortbread cookies and butter in a blender until smooth. Place in a mold.
  3. Place in the oven and bake for about 15 minutes until golden brown.
  4. Combine pudding mixture with milk and whisk.

  • 250 ml milk
  • 175 g flour
  • 1 banana
  • 1 tsp. baking powder
  • 2 tbsp. l. Sahara
  • pinch of cinnamon

Preparation:

  1. Chop the banana and mix with milk in a blender until smooth.
  2. Sift flour, baking powder and cinnamon into a bowl, add salt, sugar and mix.
  3. Pour the liquid mixture into the dry mixture and whisk.
  4. Heat a frying pan and grease it with vegetable oil (just before frying the first pancakes).
  5. Pour the dough 1 tablespoon at a time, giving it a circle shape.
  6. Bake over medium heat until bubbly, then flip to the other side.

Banana mini bread


You will need:

  • 230 g wheat flour
  • 120 g sugar
  • 1 tsp. baking powder
  • 1/4 tsp. soda
  • 1/4 tsp. sols
  • 1 tsp. cinnamon
  • 2 eggs
  • 115 g butter
  • 400 g banana puree

Preparation:

  1. Roast the walnuts in a dry frying pan for 8–10 minutes. Let cool, then chop into large pieces.
  2. In a large bowl, mix all dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon.
  3. Add walnuts. Mix well.
  4. Separately, whisk the eggs, add banana puree and melted butter (cooled to room temperature). Mix well.
  5. Pour the liquid ingredients into the dry ingredients and, using a silicone spatula, stir the mixture in a circular motion from bottom to top. Once the flour is moistened, stop stirring. The dough should be lumpy.
  6. Preheat the oven to 180 degrees. Grease muffin tins with vegetable oil and sprinkle with flour. Transfer the dough to the prepared pans and place in a hot oven on the middle rack for 50-55 minutes.
  7. Baking time depends on the size of the molds: the longer the mold, the lower the bread and the less time it takes to bake.
  8. Check the readiness of the bread with a wooden stick.
  9. Remove the finished bread from the oven and let it stand in the pan for 10 minutes. After this, remove the bread from the pan and leave to cool on a wire rack.

Sandwich with banana and Nutella


You will need:

  • 1 ripe large banana
  • 4 slices sandwich bread
  • 2 tbsp. l. roasted almonds
  • 60 g Nutella or any nut-chocolate spread

Preparation:

  1. Peel the banana and cut into slices. Chop the almonds.
  2. Spread chocolate spread on all 4 slices of bread. Sprinkle with almonds and press down with a spoon. Place banana slices on 2 slices.
  3. Assemble 2 sandwiches by covering 2 slices of banana bread with 2 slices of Nutella, spread side down.
  4. Place the sandwiches on the grill grate and place a weight on top of the board. Grill for 5 to 6 minutes, turning once to create browned stripes on the bread.
  5. Cut each sandwich in half diagonally. Serve hot.

Banana cookies with coconut flakes


You will need:

  • 3 bananas
  • 1/2 cup coconut flakes
  • 2 cups oatmeal
  • 1/4 cup vegetable oil
  • 10 g vanilla sugar

Preparation:

  1. Preheat the oven to 180 degrees.
  2. Prepare banana puree in a blender or mash bananas with a fork.
  3. In a large bowl, whisk together mashed bananas, oatmeal, coconut, vegetable oil and vanilla.

  1. Place bananas in the freezer for 30–40 minutes.
  2. Melt the chocolate in a water bath and grind the nuts.
  3. Remove bananas from freezer, dip in chocolate and sprinkle with nuts. It is important to do this quickly so that the chocolate does not have time to cool down and the bananas do not have time to heat up.

Oatmeal muffins without butter


You will need:

  • 200 g oat flour
  • 50 handfuls of wheat flour
  • 1 banana
  • 2 eggs
  • 100 g applesauce
  • 2 tbsp. l. Sahara
  • 2 tsp. baking powder
  • 1/2 tsp. cinnamon

Preparation:

  1. Combine applesauce with sugar.
  2. Add eggs and mix well until smooth.
  3. Peel the banana and crush it well with a fork in a separate container. Add the resulting pulp to the applesauce with sugar and eggs, mix.
  4. Sift both types of flour and baking powder into the liquid mixture, add cinnamon, knead the dough: it should not turn out too stiff.
  5. Preheat the oven to 160 degrees. Place paper cups into muffin tins (if you don’t use these, you can simply grease the first ones with a small amount of vegetable oil). Divide the dough into the molds and place in the oven for 25–35 minutes. Check readiness with a toothpick.

Banana pudding


You will need:

  • 2 tbsp. milk
  • 70 g sugar
  • 1 tbsp. l. flour
  • 2 tsp. starch
  • a pinch of vanillin
  • 2 yolks
  • 14 pcs. easy-to-soak biscuits
  • 2 bananas

Preparation:

  1. First, heat the milk, but do not bring it to a boil.
  2. Beat the yolks separately and pour in about a quarter of the heated milk. Beat further.
  3. Mix sugar, flour, starch and vanilla in a saucepan with the remaining milk.
  4. Cook, stirring, over medium heat until the mixture thickens. After this, remove from the heat and let the pudding cool, covered.
  5. While the mixture is cooling, prepare the molds. Place cookies and sliced ​​bananas on the bottom.
  6. Add another layer and fill with remaining pudding.
  7. Garnish with banana slices and cookies.

Banana jam


You will need:

  • 5 bananas
  • 850 g canned pineapples
  • 25 g coconut flakes
  • juice of 1–2 lemons
  • 320 g sugar

Preparation:

  1. Peel and cut the bananas.
  2. Cut the pineapples into rings or pieces - it doesn’t matter. Pour the liquid into the pan together.
  3. Measure out the coconut flakes.
  4. The sweetness of the syrup in pineapples from different manufacturers varies. First add 320 g of sugar and increase to taste.
  5. Add freshly squeezed lemon juice.
  6. Mix all ingredients in a saucepan.
  7. Stirring frequently, bring to a boil. Reduce heat and cook for 10 minutes. Then beat with a blender until the mass is homogeneous and cook until the desired thickness.

You will need:

  • 2 small lemons
  • 4 bananas
  • 6 tbsp. l. powdered sugar

WHAT CAN BE COOKED FROM BANANAS

You will need: 500 ml vegetable broth, 50 g cashews, 1 banana, apple, leek, 2 tbsp. butter, 1 pinch ground ginger, ¼ tsp. curry.

How to make banana soup. Peel the apple, cut into cubes, cut the peeled banana into circles, wash the leek, cut the green part into pieces 4-5 cm long, and the white part into rings. PIE RECIPE WITH BANANA DOUGH

You will need: 100 g butter, 1 cup each flour and powdered sugar, 4 bananas, 2 eggs, 1 packet of baking powder, 2 tbsp. water and ground walnuts, salt.

How to make banana pie. Soften the butter and grind with powdered sugar until smooth and white, gradually adding beaten eggs. Pour warm water into the mixture, add flour mixed with baking powder. Peel the bananas, mash them into a puree, add to the mixture along with the ground nuts. Grease the pie pan with oil, place the dough, bake the pie for 20 minutes at 180-200 degrees, then leave in the pan for 5 minutes after baking. How to cook pork goulash with banana. Peel the potatoes, rinse, cut into large slices. Place all the prepared ingredients in a deep frying pan or saucepan, pour in the meat broth - it should cover half of the ingredients, simmer the goulash for 40 minutes, stirring occasionally, over medium heat. RECIPE FOR COOKING CHICKEN WITH RICE AND BANANAS

You will need: 30 g butter, 2 cups each of water and banana, 1 cup each of rice, chicken, a bunch of parsley, a head of garlic, 2 tbsp. ground crackers, vegetable oil, ground black pepper, salt.

How to cook chicken with banana and rice. Cut the chicken into pieces, rub with pepper and salt, and make cuts in the flesh with a sharp knife. Finely chop the parsley, pass the garlic through a press, mix with the parsley and fill the cuts (stuff) the chicken. Heat vegetable oil in a frying pan and fry the chicken pieces until cooked. Wash the rice and put it in salted boiling water, prepare crumbly porridge, peel the bananas, cut them in half lengthwise, bread them in breadcrumbs, fry them in butter on both sides until browned. Melt the butter in a frying pan, fry 4 slices of ham for 1 minute on each side, coat the slices with half the honey, fry for another 2-3 minutes, place on a heated dish. Cut peeled bananas into circles, mix with the rest of the honey, place in the same frying pan where the ham was fried, fry for 2 minutes, place on pieces of ham. Pour wine into the same frying pan, bring the mixture of wine, fat and honey to a boil, pour the prepared sauce over the entrecotes. You can serve vegetables or mashed potatoes as a side dish.

BANANA AND HAM SALAD RECIPE

You will need: 100 g of bananas, 50 g of cream, 25 g of lean ham and raisins, 5 g of rolled oats, lemon.

How to make banana salad. Soak raisins in water for 2 hours. Fry rolled oats in butter. Cut the banana into 0.5 cm thick slices. Finely chop the ham. Squeeze out the raisins, cool the flakes, combine with ham and bananas, mix carefully. Lightly beat the lemon zest and juice with cream, place the salad on lettuce leaves and pour over the dressing, refrigerate for 30 minutes before serving, and serve with champagne.

The best way to pleasantly surprise your family and friends is to invite them to try banana wine. Amazing banana wine has a soft taste and light fruity aroma. The original recipe for making a light alcoholic drink from bananas came to us from Latin America, where abundant harvests of tropical fruits encouraged people to make full use of them.

Due to the high percentage of fiber content, wine can be safely consumed even by people with digestive problems. B vitamins, vitamin A, ascorbic acid, manganese, potassium, magnesium - this is an incomplete list of what banana wine can boast of. In addition, it is useful for hypertensive patients due to its mild effect on lowering blood pressure. In short, a drink with such healing properties should definitely be kept in stock in case of guests who have some health problems. So, let's begin!

How to make healthy banana wine?

First you should prepare everything you need. We will need:

Bananas of sufficient ripeness - 10 kilograms;
Granulated sugar - 10 kilograms;
Black raisins – 1.5 kilograms;
Water - 20 liters;
Citric acid - 6 teaspoons;
We take yeast based on the calculation: 1 gram of yeast per liter of wine material;
Tannin - 1.5 teaspoons;
Fermentation enzymes - 25 ml glucamyl + 15 ml amyl.

Cooking sequence

— there is no need to peel the bananas; cut them into pieces no more than 2 centimeters thick;
— place chopped bananas in any heat-resistant container with a volume of at least 40 liters;
- add granulated sugar there;
- add 10 liters of water;
— place the container with the preparation on low heat for 45 minutes;
— we monitor the process, stir frequently and do our best to help transform the fruit mass into a homogeneous puree;
- remove the wort from the heat;
- add citric acid to the mass;
- add tannins;
— add amyl enzyme at the rate of: 0.5 ml of amyl per 1 liter of wort;
— enrich the wort with glucamil at the rate of: 0.8 ml per 1 liter of wort;
- mix thoroughly and set aside for a while;
- take another clean and dry prepared container;
- add unwashed but sorted raisins, previously separated from rotten and damaged berries;
- pour the prepared cooled wort onto the raisins;
— add the remaining 10 liters of water;
- seal with a water seal;
— our wine material costs one night.

The next day you need to remove the fruit mass from the liquid. For this:
- drain the liquid from the container;
- squeeze out the remaining sediment at the bottom;
— add the spin result to the liquid;
- remove fruit residue;
— introduce yeast into the wine preparation;
- close with a water seal;
- place in a dark place at room temperature for one week for fermentation;
- don’t forget to stir the drink;
— after a week, drain the wine material from the sediment;
- close the water seal tightly;
— place the vessel with the future wine in a cool place for a period of 1 month for thorough fermentation;
— repeat the procedure for removing wine from the sediment;
- bottle the purified banana wine for long-term storage.

The drink gains its best taste and aroma a year and a half after its production. But, as practice shows, it is quite difficult to maintain this period - banana wine is too delicious!
