Yeast-free jellied pie with cabbage and cheese on kefir. Cabbage pie with semolina Kefir jellied pie with Chinese cabbage, green onions and egg

Jellied pie with cabbage is made using different doughs. This article is about the kefir test. Let's look at the classic version without eggs, and also see in what proportions other ingredients need to be added so that our baked goods turn out great!

Now I want to tell you a little about the filling: you can limit yourself to only one cabbage and use it fresh, stewed or fried. However, you can diversify it and prepare the following options:

  • with egg
  • with mushrooms,
  • with meat,
  • with minced meat,
  • with vegetables.

We will look at some of them below.

If you have fresh cabbage, you can use it right away. It is quite juicy and soft. But if you have a stale winter head of cabbage, then it is better to chop it and stew or fry it for softness.

And, if you like cabbage filling, then I suggest baking with it.

The jellied pie is prepared very quickly, it turns out tender and nutritious. For many housewives, this is a quick recipe. You can choose the cooking method yourself: you will bake it in the oven or in a slow cooker.

Now I want to give important advice to all housewives that they have not yet prepared such dough with kefir. Use only warm fermented milk products and, if possible, not very fresh ones. This product has a higher acid concentration and will better extinguish soda. This means that your pie will turn out fluffy and beautiful.

In this recipe we will use the simplest ingredients. You won't even find eggs among them. We will cook without them. I believe that this is the fastest option that is suitable for our very busy women.

Let's take:

  • flour - 2 cups,
  • kefir - 2 cups,
  • soda - 1/2 tsp,
  • butter – 100 g,
  • sugar - 2 tbsp,
  • salt - 1/3 tsp,
  • half a medium fork of cabbage.

Let's start preparing the products. Take the kefir out of the refrigerator in advance and let it warm up a little.

Transfer the drained oil to a ceramic plate and melt until liquid. I find it convenient to do this in the microwave. The main thing is that it doesn’t boil there, otherwise you won’t be able to clean the walls of the microwave. Therefore, I turn it on a couple of times for 2-3 minutes and look at the intermediate result.

We don’t waste time, but manage to sift the flour into a separate bowl. Immediately pour baking soda into it. Next, pour in kefir warmed to room temperature and our oil.

To ensure that the dough is not fresh, add a little salt and sugar.

You can mix with a mixer, or you can use a regular whisk. The dough turns out to be quite liquid and its consistency resembles sour cream. It is dense, but pours from a spoon and hardly holds its shape. That's what we need. By the way, it also looks like .

We leave it aside so that the kefir reacts with the soda and the gluten in the flour swells. And during this time we will prepare the filling.

We will make it from fresh cabbage. She is young, juicy and sweet. Therefore, we will neither stew nor fry it. It will be soft in the pie anyway.

Chop the forks and add salt. We knead it a little with our hands so that the whole mass settles a little and gives juice.

Most often, small baking dishes are suitable for such a pie. If you have springform pans, then take a diameter from 20 to 24 cm. If you have a lot of dough and the pan is small, then divide the dough into two parts and bake two pies.

By the way, the cake is not baked in silicone and glass forms! Use only metal options.

Coat the baking sheet with vegetable oil. Pour out some of the dough and smooth it out. Distribute the filling over it and fill it with the rest of the dough on top.

Shake the mold a little so that the air comes out from inside and the resulting voids are filled with dough.

It is advisable to bake in an oven preheated to 180 degrees. Baking time is approximately 40-50 minutes. But be sure to check the middle with a toothpick. It should be baked well.

The top can be greased with butter, then the crust will become softer and browner, and also acquire a creamy taste.

If desired, you can decorate the surface with sesame seeds.

Dietary recipe stuffed with stewed cabbage and egg

This recipe is lower in calories because we remove the butter and add eggs. For the filling, take stewed cabbage and hard-boiled eggs.

Let's take:

  • 400 ml kefir,
  • 2 eggs,
  • 0.5 tsp soda,
  • 0.5 tbsp. salt,
  • flour - 300-400g,
  • 3 boiled eggs for filling,
  • 1 glass of water,
  • 0.5 fork white cabbage.

It's best to start by preparing the filling. Let three chicken eggs cook over medium heat. Let's cook them for 12 minutes.

Shred the cabbage and add it quickly. Salt and pepper, add other favorite spices. For example, it is very complemented by nutmeg.

Pour a glass of water into the frying pan and turn on the stove to heat slowly. Simmer the cabbage until soft and moisture has evaporated. Approximately 15 minutes. If desired, you can add butter or vegetable oil.

Then turn off the heat and let the cabbage cool slightly. Meanwhile, peel the hard-boiled eggs and add them to the frying pan. Mix and the filling is ready.

Separately, pour soda into a glass with kefir. A reaction will occur and it will begin to foam a little.

Beat two eggs into a deep bowl and add a teaspoon of salt.

Stir and sift a couple of glasses of flour. It can be of different types and with different amounts of gluten. Therefore, you may need either less or more of the amount specified in the recipe.

Knead the dough until it drips off the spoon.

Take a heat-resistant form, cover it with paper and grease it with oil. Pour out a small amount of dough.

Place the filling and cover the top with a layer of dough.

Preheat the oven to 190 degrees and set the timer for 45 minutes.

How to quickly and tasty make a mayonnaise pie (filled with chicken)

Another interesting version of the test is when we add mayonnaise to kefir. And for the sake of variety, we’ll prepare not a simple filling, but with chicken fillet.

For the dough we will need:

  • 250 g flour,
  • 3 medium eggs
  • mayonnaise - 100 g,
  • kefir - 200 ml,
  • soda - 0.5 tsp,
  • baking powder for dough - 1 tsp,
  • salt - 0.5 tsp.

Let's prepare the filling:

  • 0.3 kg chicken,
  • 0.2 kg chicken fillet,
  • 1 onion,
  • salt pepper.

Let's start the process again by preparing the filling. To do this, finely chop the cabbage and salt it. By the way, if you want to get thin and long stripes, then use a special grater for Korean salads.

Thinly slice the chicken fillet.

The thinner the pieces, the faster they will cook.

Chop the onion into half rings.

And we send them to fry in a frying pan until they acquire a golden hue. And then we put it on top of the cabbage and fillet. Stir, don’t forget to add salt and pepper a little.

Now let's start preparing the dough. At this time, you can already turn on the oven to heat up.

Break the eggs into a deep cup and squeeze out the required amount of mayonnaise.

Separately, add soda to a glass with kefir, mix this mixture and pour it into the eggs.

Also, in a separate container, mix flour with baking powder. And then we introduce it into the dough. To prevent lumps from forming, mix everything with a mixer.

Line a mold with a diameter of 24 cm with parchment.

To make the finished baked goods come off easier, the sides and bottom can be coated with butter and also sprinkled with flour.

We make a layer of dough in it. We spread the filling and make a layer of dough again.

First, bake in an oven preheated to 200 degrees for 15 minutes. Then reduce the temperature to 180 and cook for another 20-25 minutes.

It is better to coat the hot crust with butter.

Recipe for quick filled cabbage pie with sour cream (filled with minced meat)

Jellied pies are also called liquid pies. In general, the essence does not change much. Just so you know, in case you come across this name.

Let's take:

  • 200 g flour,
  • kefir - 200 ml,
  • sour cream - 150 g,
  • eggs - 4 pcs.,
    baking powder – 1 tbsp,
  • granulated sugar – 0.5 tbsp.,
  • salt - 0.5 tsp,
  • 0.6 kg cabbage,
  • minced meat – 0.5 kg.

First, let's deal with the cabbage and minced meat. Chop the vegetable, add salt and squeeze with your hands so that juice begins to form. After 10 minutes, squeeze out the cabbage and transfer it to a separate plate. Drain the juice. If you don't do this, the cake will turn out soggy. And no matter how much you bake it, it will look like it’s not baked inside.

During this time, we will have time to fry the minced meat for three minutes in odorless vegetable oil. It is important for us that it brighten up.

We combine both products and add chopped herbs and salt to them.

Let's move on to the test.

Beat three chicken eggs and the white of the fourth into a bowl.

Separate the yolk and reserve for greasing the top of the pie. Add salt and sugar here.

Then add kefir and sour cream.

Separately, add baking powder to the flour, mix and sift the dry ingredients into the dough.

Cover the bottom of the pan with parchment paper and grease the sides with butter.

Place the filling on the bottom and fill it with dough. It will seep through the food. Shake the mold until all the voids are filled.

Remember we left the yolk? Add 1 tbsp to it. sour cream, shake and pour it over the top of the dough.

Place in the oven for 45 minutes at a temperature of 180 degrees.

Delicious quick kefir jellied pie in a slow cooker

I made my first jellied cabbage pie in a slow cooker. She did great. Only the top crust was not golden brown. But then I took out the baked goods, turned them upside down and turned on the mode for 10 minutes.

In this recipe we fry the cabbage.

  • 1 onion,
  • cabbage – 1 head,
  • greenery,
  • kefir - 250 ml,
  • 3 eggs,
  • 1 tsp salt,
  • 0.5 tsp soda,
  • flour – 250 g.

As I wrote above, it is better to stew or fry winter cabbage. Then the pie will turn out more tender and satisfying.

Chop the head of cabbage and salt the vegetable mass. Then we remember it with our hands.

Chop the onion.

Turn on the multicooker to the “Fry” mode. After 10 minutes, pour a little oil into the bottom and add the onion.

After five minutes, add cabbage to it. Cook it in the same mode for another 10 minutes. The mass will greatly decrease in size. To evaporate excess moisture from it, open the multicooker lid for a few minutes.

Let's quickly make the dough.

Add all three eggs to the kefir. Mix them with salt. Let's add soda.

Combine the mass with a whisk and add flour in parts. Make sure that no lumps appear in the dough, they are very noticeable in such delicate baked goods.

Turn off the frying program, mix the semi-finished vegetable mass and fill it with dough.

Click on the “Cake” mode and set the timer for 40-50 minutes. We are waiting for the end of the program, then we will hear a sound signal.

There are multicookers with automatic time selection when you press the program. It varies from 40 to 60 minutes.
