So, based on 20 servings we will need:

  • 200 ml vegetable oil (preferably odorless);
  • 200 ml of plain boiled water;
  • 200 grams of nuts;
  • 200 grams of granulated sugar;
  • 450 grams of sifted wheat flour.

Recipe for nut rolls in action

First, you need to pour vegetable oil and boiled water into a small saucepan, bring the mixture to a boil and set aside to cool.

Then we begin to pour wheat flour into the warm mixture and knead an elastic and smooth dough. Here you need to pay attention to the following: you may need less flour than indicated in the recipe for nut rolls: the dough should not turn out too tight.

You can use any nuts for the filling, and the most delicious filling will come from a mixture of different varieties.

Peel the nuts and grind them using a rolling pin or blender to the desired degree. Add granulated sugar to the nuts. If desired, you can replace it with honey. This way, the filling will not crumble too much, and it will be easier to wrap it in the dough.

Roll out the dough as thin as possible (about 3 mm thick) and cut into equal rectangles in a ratio of 10:5 (cm).

Now you need to put the nut filling on the edge of the rectangle and roll the dough into a tube. We place the resulting tubes on a baking sheet: they need to be laid out at a short distance from each other.

Then bake the tubes in the oven for 30 minutes at 200 degrees. When serving, sprinkle the nut tubes with powdered sugar (optional).

Honey rolls with walnuts

To prepare the dough we will need:

  • 4 cups wheat flour;
  • 1.5 cups fat sour cream;
  • 200 grams of butter.

For the sweet filling:

  • 2 cups walnut kernels;
  • 1.5 cups granulated sugar;
  • half a glass of flower honey;
  • 1/2 teaspoon ground cinnamon (cardamom can be used);
  • several egg yolks for greasing the products.

Preparing honey and nut dessert

Place softened butter in a bowl and beat until fluffy. While stirring, add sour cream and small portions of flour (only half), knead the dough. Place the prepared dough on a floured table, add the rest of the flour to it, continue kneading for about 8-10 minutes until a homogeneous mass is obtained.

At the same time, prepare the nut filling. To do this, pass the peeled walnuts through a meat grinder, add granulated sugar, crushed cinnamon (cardamom), honey and mix everything thoroughly.

Divide the finished dough into several pieces. Roll out each piece into a strip so that it is wider at one end.

Grease the surface of the dough with oil. Place the filling on the strips and roll them into a tube, starting from the wide end. Place the prepared tubes on a greased baking sheet, cover them with egg yolk and bake for about 30 minutes in a preheated oven. Sprinkle the finished tubes with powdered sugar and vanilla if desired.

I prepare these delicious nut rolls according to a recipe from the book “On Tasty and Healthy Food,” which my husband gave me 35 years ago. In those days it was not so easy to buy it, only at a flea market, paying a third of your salary for it. Now, of course, it is a little dilapidated, but the dishes prepared according to its recipes are really tasty.

Butter with flour

Crumble the butter into the flour with a knife, grate it on a coarse grater or grind it in a blender until crumbly.

Oil-flour crumbs

Combine the butter and flour crumbs with the sour cream and egg mixture and quickly knead the dough. The shortbread dough for mutaki nut tubes is ready.

Shortbread dough

Divide the dough for the mutaki nut rolls into 8 balls. I have trouble with my eye, so I divide with the help of scales, each bun turns out to be 100-115 grams.

Divide into 8 parts

Cover the buns with cling film and place in the refrigerator for at least an hour. It is convenient to prepare the shortbread dough for nut rolls in advance, the day before. Separately, lightly beat the egg whites with a whisk.

Divide the circle into 8 triangles. Place a teaspoon of nut filling in the wide part of each triangle.

Distribute the filling

Roll into tubes. Carefully pinch the edges, otherwise the filling will leak and burn.

Roll up the tubes

Line a baking tray with baking paper, grease with vegetable oil and place the tubes with the mutaki nut filling, tail down. In total you will get 64 pieces of these tubes.

Finished tube

Place in an oven preheated to 200 degrees and bake the mutaki nut tubes until golden brown for 15-20 minutes.

Sand tubes with nut filling

Sand nut tubes can be placed close to each other, they hardly increase in volume. From the last kolobok I will make coffee straws. The coffee aroma is very subtle, the taste of the filling is slightly bitter. This addition is a pure gag; it is not included in the classic recipe for mutaki nut tubes, but try it, maybe you will like it too. Add a teaspoon of ground insoluble coffee to the last part of the filling and stir.
