  • flour – 230 grams;
  • sugar (white) – 180 grams;
  • butter (butter) – half a pack;

Cooking:

Cooking:

This simple recipe can be made even easier by grating the apple.

You can add pieces of nuts or pumpkin seeds. You can increase the amount of sugar to taste; there is a minimum amount in the recipe. Although the original recipe does not contain it at all, this is a cupcake from the “sugar-free” category.

You can sprinkle with powdered sugar or chocolate white or lemon glaze, it will be beautiful and tasty.

Instead of an apple, you can put a pear, pumpkin and even carrots, as in this one. You can add canned pineapple pieces. This recipe will do it all.

You can bake small muffins in tins, or you can bake small muffins in any shape.

Ingredients:

  1. Flour – 300 g
  2. Honey – 150 g
  3. Eggs – 2 pcs.
  4. Kefir* – 100 g.
  5. Apple – 1 pc.

Preparation:

1. If they are dry, prepare raisins in advance. Soak very hard raisins overnight; you can use rum, cognac or liqueur instead of water. Soft raisins simply need to be washed well, dried, and can be blotted with a paper towel. Roll in flour.

2. Melt butter with honey and sugar in a water bath. Cool until warm.

3. Add spices and soda to the flour (do not extinguish!), mix well with a whisk.

4. Combine kefir with eggs and mix.

5. Knead the dough: add a little flour to the melted honey and butter, mix, then add the eggs with kefir, then the rest of the flour. Knead the dough to the consistency of thick sour cream. It does not pour, but falls from the spoon.

If the dough turns out to be thicker, add 50-100 grams of kefir or water.

6. Wash the apples, remove the skin, cut into 4 parts, cut out the core. Cut into small cubes and pieces. Sprinkle with lemon juice, stir so that all the pieces are moistened with juice. Lightly roll in flour, 1 tablespoon of flour from the total amount will be enough.

7. Add apples and raisins to the dough, mix.

8. Place the dough in the mold. It should be approximately two-thirds full.

I have a silicone cake pan. It's too big, so it's half full.

Bake in an oven preheated to 180 degrees for about 60 minutes. Check for doneness with a match or wooden barbecue stick.

9. Serve cooled with tea or coffee. The cupcake is very tender and moderately sweet. If the sweetness is not enough, you can sprinkle the cupcake with powdered sugar or cover it with icing, preferably white.

First, let's prepare the applesauce for the muffins. If you don’t have any time at all or are simply overwhelmed by laziness, then you can choose the path of least resistance and buy ready-made applesauce in the store. Typically, it can be found where baby food is sold. But I prefer muffins with mashed potatoes that are prepared at home. It has a richer taste, this puree is thick and aromatic.
Without peeling, cut the apples into halves and remove the core, and then cut each half into three or four more pieces. Place the chopped apples in a glass or ceramic bowl and bake in the microwave for about 10 minutes.
Apples can also be baked in the oven. Choose the method that is closer to you.


Let the apples cool and use a spoon or fork to scoop out the pulp and then mash it.
The apples are very soft, so you can get by with a fork. I got 450 grams of applesauce from this amount of apples. To bake cupcakes we need 250 gr. You can transfer the rest of the applesauce into a container or jar and place it in the refrigerator; it will keep well there for a couple of days.


In the meantime, let's start preparing the cupcakes themselves.
Rinse the raisins thoroughly under running hot water and dry well.
Instead of raisins, you can use any dried fruits (cranberries, cherries, dried apricots, prunes), candied fruits, nuts or even poppy seeds. Only poppy seeds should first be filled with hot water, left for 5-10 minutes, and then drained.


Mix together flour, raisins, cinnamon, baking soda and sugar.


Mix applesauce well with vegetable oil.

Place 1-1.5 tbsp in molds. test. Try to fill the mold 2/3 full - the dough is guaranteed not to crawl out of the molds.
Preheat the oven to 180°C. Bake the cupcakes for 30-40 minutes.

Based on the cooking time of your own oven, start checking the readiness of the cupcakes after half an hour - the stick should come out dry, without lumps of dough.
Let the cupcakes cool completely and serve with hot fragrant tea.
