I don’t think it’s worth asking you whether you like salmon or not, since it is one of our preferred fish. Salmon is very healthy. Salmon protein contains the largest amount of taurine compared to other types of protein, a sulfur-containing amino acid that is responsible for improving metabolic processes in the body. Therefore, regular consumption of salmon can prevent obesity. And, any housewife can tell you how many dishes can be prepared using salmon. In this post I want to offer you several recipes for pies with salmon, which can be prepared from various doughs - yeast, puff pastry, curd. Let's go cook...

Pie with salmon (curd dough)

You will need: salmon - 350 g, Gouda type cheese - 300 g, margarine and low-fat cottage cheese - 200 g each, onion - 1 pc., 6 tbsp. flour - 6 tbsp. l., 2 tbsp. mayonnaise - 2 tbsp. l., salt.

How to cook: Cut the raw salmon fillet into small pieces, grate the cheese on a coarse grater, and cut the onion into half rings. Mix softened margarine and cottage cheese, add flour and knead the dough, place it on a floured table, knead lightly so that it does not stick to your hands. Divide the dough into equal parts. Line a baking sheet with baking paper, lay out one part of the dough, spread it over the pan with your hands - the layer should be approximately 0.8 cm thick. Lay out the chopped fish in an even layer, add salt, put onion on top, grease with mayonnaise and sprinkle with grated cheese on top. Roll out the second part of the dough and cover the pie with it. Seal the edges. Bake at 180C for about 50 minutes.


Pie with salmon and leeks (puff pastry)

You will need: puff pastry dough 500 g, salmon - 400 g, rice - 150 g, leek - 1 pc., onion - 1 pc., dill - 1 bunch, pepper, salt, vegetable oil.

How to cook: Chop the leek and onion and fry in oil in a frying pan until translucent. Finely chop the fish fillet, rinse the rice, boil it until half cooked. Mix rice with fish and onions, add chopped dill, pepper and salt. Place half of the dough in a baking dish, put the filling on it and cover with the other half of the dough, pinch the edges nicely. Poke the dough over the surface with a fork, bake the pie at 180C for 40 - 45 minutes.


Pie with salmon and rice (yeast dough)

You will need: 580g boiling water - 580 ml, yeast dough - 500 g, salmon - 400 g, onion - 1 pc., 1 cup rice (steamed) - 1 tbsp., olive oil - 1 tbsp. l., ground black pepper, salt.

How to cook: pour the rice, without rinsing, into a microwave-safe bowl, add salt, pour in boiling water, without stirring or covering, cook at full power for 17 minutes, then cover the rice with a lid and leave for 5 minutes, then remove the lid and let it cool down. Finely chop the onion and fry in olive oil until browned, mix with rice. Remove the skin from the salmon using a sharp knife, chop it finely and mix with rice and onion, pepper and salt. Separate one part from the dough, roll out the remaining two and place in a pie dish, making sides, add the filling. Roll out the reserved part of the dough and cover the pie, pinch the edges, make a hole in the center through which steam will escape. Place the pie in the oven, preheated to 180C, bake for 30 - 40 minutes.


Pie with salmon and potatoes (puff pastry)

You will need: salmon fillet - 600 g, puff pastry - 500 g, potatoes - 200 g, onion - 2 pcs., yolk - 1 pc., sugar - 1/2 tsp, ground black pepper, salt.

How to cook: cut the onion into half rings, potatoes into thin slices, fish into small pieces, then sprinkle it with sugar, onion, pepper and salt, mix, cover with cling film and set aside to marinate in the cold for half an hour. Roll out the dough into a thin layer and cut out two unequal circles. Moisten the pie pan with water, lay out a larger circle - it should be so that the dough covers the bottom and walls of the pan completely, hanging over their edges. Place potatoes on the dough, then fish and onions, cover with the overhanging edges of the dough. Coat the resulting dough ring, which you cover with the pie filling, with beaten yolk and cover with a smaller circle of dough, pressing it well to the edges of the dough. Bake the pie in an oven preheated to 210 - 220C for half an hour, piercing the top with a fork in several places.


Pie with salmon, tuna and vegetables (puff pastry)

You will need: salmon fillet - 800 g, puff pastry - 500 g, canned tuna - 300 g, canned olives - 200 g, mozzarella cheese - 150 g, 50 ml olive oil - 50 ml, tomatoes - 2 pcs., basil - 1 bunch, egg - 1 pc., pepper, salt.

How to cook: In a blender, grind the tuna with olives and olive oil to a paste. Roll out the dough and place it on a baking sheet, place the salmon fillet on it in one piece or, after cutting it, brush the fish with the prepared tuna paste. Then put tomatoes cut into thin slices on top, sprinkle with basil leaves and lay out pieces of mozzarella cheese, pepper and salt. Fold the edges of the dough into the center to form a pie. Coat the dough with beaten egg, bake the pie in an oven preheated to 180C for half an hour.

Recipe for closed pie with salmon

So, to prepare a delicious fish pie you need to take:

  1. 1 kg homemade pie dough;
  2. fresh salmon fillet 500-700 g;
  3. 2-3 large onions;
  4. salt and black pepper to taste.

When the dough for the pie has already risen, you need to beat it thoroughly with a wooden or silicone spatula. Now let's make the pie filling. Onions need to be peeled and cut into thinner rings. Over low heat with a drop of vegetable oil, soften the chopped onion. So that it becomes soft and transparent. Wash boneless salmon (fillet) and cut into thin strips. Divide the dough into 2 parts. Using a rolling pin and hands, roll out the bottom circle.


Place the slightly cooled warm onion and pieces of salmon, add a little salt and black pepper (it will give the fish a magical aroma). Roll out the second part of the dough into a circle and cover the top of the pie. From the leftover dough you can make leaf-shaped decorations for the pie, just like grandma did for us. Don't forget to poke a couple of holes in the cake to allow steam to escape! Leave the cake to proof for 20 minutes. Meanwhile, put the oven on preheat. Bake for about half an hour at 180 degrees, then another 10 minutes on the lowest heat. Turn off the oven and leave the pie in the hot oven for another 3-5 minutes. We take our beautiful pie out of the oven and let it rest for 15 minutes. We cut it into pieces and invite everyone to the table for a lush fish pie with salmon. Bon appetit!

The specifics of preparing salmon pie depend on the type of dough and filling. However, there are several points that are common. If they are not taken into account, the finished food may not live up to expectations.

  • To prepare salmon pie, you need fresh (unspoiled) fish. If it smells, you will only transfer the products.
  • Salmon for the filling can be stewed, boiled, or fried. In rare cases, it is placed raw. In any case, there should be no bones in the fish placed in the pie. Even if you bought fillet, it makes sense to make sure that there are no bones left in it.
  • The flour for the dough needs to be sifted. Thanks to this, it will be cleared of debris and saturated with oxygen, this will make the dough more tender and airy.
  • The pie should be baked at a low temperature, otherwise it will brown before it is baked inside. If the product is large and you are not sure that it will have time to bake, cover the browned pie with foil and bake until done. You can check readiness with a wooden toothpick. If it remains dry after dipping into the dough, the cake is ready.

It is better to serve salmon pie warm, but not scalding hot. If the baked goods have cooled down, you can reheat them. Fish pie is also eaten cold, but in its organoleptic qualities it is inferior to warm.

Pie with salmon, herbs and eggs

  • unsweetened yogurt or low-fat sour cream - 170 ml, including 150 ml for the dough, 20 ml for greasing the pie;
  • chicken egg – 5 pcs., including 2 pcs. in dough, 3 pcs. For filling;
  • salmon (fillet) – 0.2 kg;
  • green onions – 50 g;
  • fresh parsley – 50 g;
  • fresh dill – 50 g;
  • baking powder for dough – 7 g;
  • wheat flour – 0.25 kg;
  • refined vegetable oil – 100 ml;
  • salt, ground black pepper - to taste.

Cooking method:

  • Place the salmon in boiling water. You can add onions and carrots and spices to it for flavor. Boil the fish for 20–30 minutes. Remove from water and cool. Using your hands, separate into small pieces, at the same time removing bones if they accidentally remain in the fish fillet.
  • Wash green onions, parsley, dill. Shake them off the water and dry them with a kitchen towel. Finely chop with a knife and mix with salmon.
  • Hard boil three chicken eggs. After peeling, cut into small cubes and add to the fish and herbs.
  • Add salt and pepper to the filling, stir.
  • Break the remaining eggs into a separate container. Add a pinch of salt to them, beat with a whisk.
  • Add yogurt or sour cream, beat until smooth.
  • Sift the flour, mix it with baking powder, combine with the sour cream and egg mixture, mix thoroughly so that there are no flour lumps in the dough.
  • Pour vegetable oil into the dough and mix.
  • Place half of the dough in a baking dish and spread the filling on it.
  • Pour the remaining batter over the filling. Flatten it with a spatula.
  • Place the pan in an oven preheated to 190 degrees. Bake the pie for half an hour.
  • Lubricate it with sour cream, place in the turned off but still warm oven for another 10 minutes.

Unusual pie with salmon and cheese made from mayonnaise dough

  • chicken egg – 2 pcs.;
  • wheat flour – 0.2 kg;
  • mayonnaise – 125 ml;
  • milk – 0.25 l;
  • soda – 3 g;
  • sugar – 5 g;
  • fresh salmon (fillet) – 0.4–0.5 kg;
  • onions – 100 g;
  • hard cheese – 70 g;
  • salt - to taste;
  • breadcrumbs - for sprinkling the mold;
  • butter – as much as needed (about 20–40 g);
  • nutmeg - a pinch;
  • ground black pepper - a pinch.

Cooking method:

  • Cut the salmon into fillets, removing skin and bones. Cut into small pieces.
  • Peel the onion and cut into thin half rings. Fry in melted butter.
  • Grind the cheese on a grater.
  • Sift the flour, mix with soda.
  • Break the eggs into a bowl, add sugar to them, beat with a mixer. The egg mixture should turn white.
  • Add mayonnaise and milk to the eggs. Continue whisking until the mixture reaches a smooth consistency.
  • Stir the sifted flour into the liquid dough base.
  • Grease a baking dish with butter and place two-thirds of the dough into it.
  • Place salmon pieces on the dough. To ensure that it is distributed evenly, the pieces are first laid out around the perimeter, then placed closer to the center.
  • Sprinkle the fish with nutmeg and pepper. Salt it lightly. You should not use a lot of salt, as the dough contains salty mayonnaise.
  • Place fried onions on the fish and sprinkle with cheese.
  • Pour the remaining batter over the filling, spreading it evenly with a spatula.
  • Place the pan in an oven preheated to 190 degrees. Bake the pie for 40–50 minutes. After 25-30 minutes of cooking, cover it with foil to prevent it from browning too much.

A pie baked according to this recipe will be delicious even when cold. Preparing the dough and filling for it takes very little time. While the pie is baking, you can chop the salad and prepare the sauce.

Pie with salmon and spinach made from yeast dough

  • dry yeast – 7 g;
  • milk – 0.25 l;
  • wheat flour – 0.4 kg;
  • sugar – 5 g;
  • salt - to taste;
  • salmon fillet – 0.3 kg;
  • spinach – 0.2 kg;
  • sour cream – 60–80 ml;

Cooking method:

  • Heat the milk to 40 degrees, add sugar and yeast, stir. Wait 10–15 minutes. During this time, the yeast should “earn” and the milk will become foamy.
  • Add salt and sifted flour. Knead a stiff dough. Leave it for an hour in a warm place. Do not forget that yeast dough will not rise in the cold and that it is afraid of drafts.
  • While the dough is rising, prepare the filling. To do this, cut the salmon fillet into small pieces and fry in a frying pan in a small amount of oil for 15 minutes.
  • Wash the spinach and pour boiling water over it until it becomes soft.
  • Combine spinach with salmon, salt and pepper them, add sour cream and mix well.
  • Punch down the dough and divide into two unequal parts: one should be almost twice the size of the other.
  • Roll out most of it. The resulting layer of dough should be the same shape as the container in which you will bake the pie. The size of the layer should be sufficient to cover the bottom and sides of this container.
  • Place the rolled out dough into the mold. Place the filling on it and smooth it out with a spoon.
  • Roll out the remaining dough and cover the filling with it. Seal the edges of the bottom and top layers of dough. It’s better to do it curly, for example with a braid. You can make small figures from scraps of dough and place them on the surface of the dough - they will serve as decoration for the pie. To give it a rosy hue, the dough can be brushed with beaten egg.
  • Place the pan with the cake in the oven, preheated to 180 degrees. Bake for about 40 minutes.

The pie according to this recipe turns out to be satisfying and healthy. Spinach makes it less calorie and more juicy.

Pie with salmon and broccoli from shortcrust pastry

  • wheat flour – 0.25 kg;
  • butter – 130 g;
  • chicken egg – 3 pcs.;
  • water – 50 ml;
  • cream – 0.2 l;
  • cheese – 180 g;
  • salmon (fillet) – 0.25 kg;
  • broccoli – 0.3 kg;
  • salt, pepper - to taste;
  • vegetable oil - as much as needed.

Cooking method:

  • Sift the flour and place pieces of butter on it, taken straight from the refrigerator. Mash with a fork.
  • In a separate container, beat the egg with water and a pinch of salt, add to the butter-flour mixture.
  • Knead the dough, put it in the refrigerator for half an hour.
  • Wash the broccoli, let it dry, and chop it into small pieces. You can first boil the cabbage for 3 minutes in boiling water.
  • Cut the fish fillet into small pieces.
  • Coarsely grate the cheese.
  • Mix cheese, broccoli and salmon, adding salt and pepper to taste.
  • Grease the pan with oil, spread the dough over the bottom, and cover the sides with it. Pierce the dough in several places with a fork and place in an oven preheated to 200 degrees for 10–15 minutes.

  • Beat the remaining eggs with cream, pour the omelette filling.
  • Place the pie in the oven, reducing the temperature to 180 degrees. Cook for 35–40 minutes until the filling thickens.

A simple recipe for puff pastry salmon pie

  • yeast puff pastry – 0.5 kg;
  • onions – 0.2 kg;
  • salmon fillet – 0.4 kg;
  • salt, pepper - to taste;
  • vegetable oil - as much as needed.

Cooking method:

  • Thaw the puff pastry at room temperature, divide into equal parts, roll out or stretch to fit the mold.
  • Cut the onion and fish into small cubes.
  • Heat the oil in a large frying pan, add the onion and fry it for 5 minutes.
  • Add the salmon to the onion, fry the food, stirring, for 10 minutes. Add salt, pepper, stir.
  • Place one piece of puff pastry in a mold, place the filling on it, cover with a second layer of pastry, and seal the edges.
  • Place the pie in an oven preheated to 180 degrees and bake it for 25–35 minutes.

You can make a pie according to this recipe in a hurry, if, of course, you use ready-made puff pastry and do not make it yourself on the same day.

To prepare a pie with salmon and cheese we will need:
150 g flour;
150 g salmon or any other fish;
120 g milk;
100 g cheese;
50 g butter;
50 g vegetable oil;
3 eggs;
4 tbsp. l. chopped dill and green onions;
2 tsp. baking powder;
3 pinches of salt;

Cooking steps

To prepare this pie, you can take raw fish. But to make the pie less fatty, I decided to boil the salmon (I cooked salmon from fish scraps, boiled them in water for 30 minutes, and then separated the fish from the bones). I made cream soup from fish broth. To prepare the dough for the pie, in a separate bowl, combine flour, finely chopped herbs, grated cheese and chopped salmon, mix.

Then add milk, salt, butter at room temperature and vegetable oil to the resulting mass, mix well.

Add eggs and baking powder, mix well.

The dough will be medium thick, similar to charlotte dough.

Pour the dough into a greased baking dish. I baked it in a silicone cake pan; it does not need to be greased. Can also be prepared in small muffin tins.

Place in an oven preheated to 180 degrees and bake the pie with salmon and cheese for about an hour. If you bake muffins in small pans, reduce the baking time to 30 minutes.
