How to cook diet steamed cutlets. Steam cutlets. Steamed cabbage cutlets

To start eating right, just one desire is enough. For example, steam cutlets can be cooked in an improvised steamer - an ordinary metal colander, a pan of a suitable size and a lid will suffice. This device, of course, cannot pretend to be a kitchen device, but it will fulfill its purpose perfectly.

The taste of the food will not differ at all from that prepared in an electric steamer, and the beneficial substances in the food will also be preserved. So if you decide to switch to a healthy diet, you have everything you need. Well, as for recipes, try making steamed meat cutlets with vegetables. For juiciness and taste, add sour cream and spices to the minced meat; for brightness, add herbs and carrots. If steamed cutlets are intended for a baby, then it is better to avoid spices and instead add more herbs and vegetables to the minced meat.

Ingredients

  • veal or lean beef – 300 g;
  • yolk of one egg;
  • onion – 1 pc. (small);
  • boiled carrots – 1 pc. (small)
  • raw carrots – 1 pc. (large);
  • potatoes – 6-7 pcs;
  • ground pepper, basil, nutmeg - a pinch;
  • salt - to taste;
  • thick sour cream - 1 tbsp. l;
  • green onions - a few feathers.

Preparation

Big photos Small photos

    Grind the meat in a meat grinder or grind it in a food processor. Ready-made minced meat is also acceptable, but you never know its quality. Meat is easier to “control.”

    Add finely grated onion to the resulting minced meat (you can twist it together with the meat).

    Finely chop the boiled carrots and a few green onions. Place vegetables in minced meat.

    Separate the yolk from the egg white and add to the minced meat and vegetables.

    To make the cutlets juicy, add a spoonful of thick sour cream to the minced meat.

    Spices can be omitted or added to your liking. The recipe uses ground black pepper, ground paprika, basil and ground nutmeg (a pinch). You need to add spices after the minced meat is mixed.

    Salt is added to the minced meat last. The minced meat is kneaded again and put in the refrigerator for half an hour.

    Make small oblong or round cutlets from the chilled minced meat.

    To prevent the minced meat from sticking to your hands, wet your palms with cold water.

    A side dish for steamed cutlets can be prepared from any vegetables, but since potatoes and carrots are almost always available, this is the simplest and most convenient option.

    Cut the peeled potatoes into slices.

    Carrots can be cut into strips, cubes, circles - at your discretion.

    Place vegetables in a colander and add a little salt. Pour enough water into the pan so that it does not reach the bottom of the colander. Place a colander over a pan of water. Cover with a lid and turn the heat to medium. Make sure that steam does not escape from under the lid.

    After 5 minutes, place the cutlets on the vegetables. Cover tightly and cook for another 20 minutes. The water in the pan should constantly boil.

    Place steamed cutlets on a plate along with vegetables. For steamed cutlets, you can offer sour cream, olive oil as a sauce, or add a piece of butter to the plate.

What can you make steamed cutlets from?

Of course, from a variety of meats. The most dietary cutlets are made from turkey or chicken fillet. Children especially love them - for example, they will really like this recipe. Very good fish cakes, cooked in a delicate culinary way using a steamer or colander.

Secondly, you can steam vegetable cutlets, either from vegetables alone or with the addition of cereals (rice, buckwheat, oatmeal). Cereals are also added to meat cutlets. There are no surprises or secrets: we take any cutlet recipe that we like, don’t bread it, and instead of using a frying pan or oven, use steam.

And here is one of the most dietary recipes for steamed cutlets that I know (perfect for exacerbation of gastritis and “exit” from the acute stage of pancreatitis):

Pour boiling water over a handful of oatmeal (“without cooking”) and leave. Add to them 100 g of minced turkey (preferably fillet), some freshly chopped herbs such as parsley (no onions), a couple of spoons of boiled milk and a spoon of olive oil. Form cutlets and steam them.

Who benefits from steamed cutlets?

This meat dish is healthy for everyone and is considered healthy due to the low amount of fat, reduced calorie content and delicate cooking. But such nutrition is especially important if there are gastroenterological problems. In fact, steamed cutlets are a dish on the medicinal menu.

Steam cutlets will come to your table even if there is a small child in the house. This is understandable: the child’s digestive system is not yet fully formed, it is delicate and must be spared. Meanwhile, steamed meat rich in proteins and microelements can be given to a one-year-old baby.

Finally, steamed cutlets are a matter of individual taste. I remember how a friend, who almost completely switched to steamed food, shared her impression: “I can no longer imagine how anyone can love strong tastes - salty, peppery, fatty... Is it a matter of steam cooking, when nothing interferes with the taste of the product itself! »

In order for weight loss to be stable and confident, the diet should be as similar as possible to the usual one. To do this, you need to replenish your diet with tasty and varied dishes. These include cutlets. We are not talking about the classic version of the dish, cooked in sizzling oil from fatty minced meat, but about light, juicy, airy meatballs made from low-calorie products. Adapting familiar minced meat dishes into dietary ones is not at all difficult.

Cutlets can be included in the diet menu, since when properly prepared they have the following beneficial properties:

  1. Saturate cells with vitamins, minerals and other beneficial substances. For example, meat balls are rich in protein, and vegetable balls are rich in fiber.
  2. They do not overload the digestive organs, are easily digested, absorbed by the body, and activate metabolic processes.
  3. They quickly and permanently satisfy the feeling of hunger, which eliminates the risk of overeating.
  4. The calorie content of a dish when using lean meat or fish and choosing the right heat treatment method is minimal.
  5. With regular consumption of dietary cutlets, the level of bad cholesterol is reduced, the risk of atherosclerosis and cancer is reduced.

Low-calorie minced meat dishes will make weight loss more enjoyable and sustainable. With the right approach, you will eat delicious food and your figure will become slimmer.

Attention! Cutlets made from chicken, turkey, rabbit, veal, and beef (the lean part) are considered dietary. They can be used for gastritis, pancreatitis and other gastrointestinal diseases. Dishes made from fatty pork and lamb fillets, fried in a frying pan, are contraindicated for those losing weight. Fish, vegetable, and cereal balls can be eaten with proper nutrition.

How to cook cutlets for losing weight: steamed, in a frying pan, oven, slow cooker

As mentioned, to achieve a low-calorie meal, you need to use foods with a minimum amount of fat and calories. To do this, traditional fatty beef and pork can be replaced with chicken (white meat without skin) or fish (pike perch, pink salmon, cod, pollock, etc.).

The second important rule is that dietary cutlets are cooked in a slow cooker, double boiler, or pressure cooker. The dish can also be baked in the oven without oil on parchment paper. Frying minced meat in a frying pan in hot fat is prohibited, as its calorie content increases and it is saturated with carcinogens.

For diet cutlets you need to select fresh ingredients. It is better to buy chilled meat or fish, remove bones, fat, skin, then pass the meat through a meat grinder 2 times. Then you can beat the mass with a blender so that the cutlets are airy and juicy. In the same way, meatballs are prepared from vegetables and cereals.

In dietary cutlets, you need to limit the amount of salt and spices that irritate the mucous membranes of the gastrointestinal tract. Therefore, you should reduce the amount of mustard, garlic, saffron, and rosemary.

It is better to replace bread, milk or potatoes in a traditional recipe with oatmeal, carrots, cabbage, etc. Cutlets with pumpkin or zucchini have a delicate consistency. How to cook diet cutlets in a double boiler

The most delicious steamed cutlets are obtained by mixing different types of meat, for example, beef and pork. If you are preparing baby food, it is recommended to combine dietary veal and chicken fillet (breast). It is very useful to combine meat with grains.

For 0.5 kg of prepared minced meat you will need:

  • onions (2 heads)
  • egg (1 pc.)
  • oatmeal (3 tablespoons)
  • table salt to taste
  • freshly ground black pepper (for adults) to taste
  • frozen onion feathers (1 bunch)
  • vegetable oil for lubrication

Grind the onion in a meat grinder and add it to the minced meat. Beat in a raw egg, add salt and pepper to your taste. Instead of traditional bread crumb, add small oat flakes - they are healthier, and this addition will give the cutlets an unusual rich taste. To make meat products juicier, add very finely chopped onions to the minced meat. It is recommended to pre-rinse them, chop them and put them in the freezer (use without defrosting!). Mix everything thoroughly.

Scientists have calculated that 100 g of fried breaded beef cutlets provides approximately 364 kcal. If you steam the same food, the calorie content of the product will be only about 180 kcal!

Form the cutlets and place them in a steamer, the bottom of which should be lightly greased with vegetable oil. If you don’t have a special device, make an improvised one: fill a pan of a suitable diameter by a third with water, place a colander on top and tightly cover with a lid. Steam the cutlets for 30 minutes.

Cooking steamed chicken cutlets

Delicious and satisfying cutlets can be made from chicken fillet and potatoes. If desired, before placing in the steamer, minced meat products can be lightly rolled in breadcrumbs - the cutlets will not stick to your hands and will not retain their shape better after heat treatment.
